4 pickled herring fillets, sliced into 1/4" pieces
1/4 medium onion, finely chopped
1/4 small fennel bulb, finely chopped
1 cup sour cream
2 tablespoons whole grain Dijon mustard
2 tablespoons finely chopped fresh chives
1 tablespoon finely grated peeled horseradish or 2 teaspoons prepared horseradish
1 tablespoon fresh lemon juice
Kosher salt, freshly ground pepper
8 slices dark seeded bread or rye bread, cut into squares or triangles
Fresh parsley leaves (for serving)

Steps:

  • Mix pickled herring, onion, fennel, sour cream, mustard, chives, horseradish, and lemon juice in a small bowl; season with salt, pepper, and more lemon if desired. Transfer to a large jar; cover and chill at least 12 hours and up to 2 weeks. Serve herring mixture on bread topped with parsley.

1 (16 ounce) jar herring fillets, in wine sauce
3 egg yolks
1 tablespoon prepared Swedish mustard or 1 tablespoon German mustard
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon sugar
1 cup vegetable oil
1/4 cup dried dill weed, crumbled

Steps:

  • Drain herring; place in a medium bowl.
  • In a small bowl, combine egg yolks, mustard, vinegar, salt, white pepper, and sugar.
  • Use a whisk to gradually beat in oil until mixture is thick and creamy.
  • Stir in dill.
  • Pour over herring.
  • Cover and refrigerate 3 to 4 hours.
  • Note: Preparation time does not include refrigeration time.

1 cup rice, dry
1 teaspoon mustard seeds (you could try 1/4 tsp ground mustard)
1 teaspoon coriander seed (you could try 1/4 tsp ground coriander)
2 teaspoons dried dill weed, divided
2 tablespoons ranch dressing
2 tablespoons lemon juice
2 tablespoons horseradish mustard (stoneground) or 2 tablespoons Dijon mustard
1 (3 3/4 ounce) can herring fillets or 1 (3 3/4 ounce) can sardines, in mustard sauce

Steps:

  • I used a rice cooker to prepare the rice, but you could also steam it on the stove (carefully!). Mix 2 cups water, the coriander seeds, the mustard seeds, and 1 tsp dill weed with the rice; (if stovetop bring to a boil and) cook 20 min till rice is done. If you're preparing the rice on the stovetop you may want to wait and add the dill after the rice is cooked.
  • Mix ranch dressing, lemon juice, Dijon mustard and the other 1 tsp dill weed in a small dish to make a dressing.
  • When rice is done, put in serving dishes. Top with herring steaks (and the sauce from the can); top that with the ranch dressing mixture. Serve.

4 x 75g/3oz herring fillets or 4 x 225g/8oz herrings, gutted
4 tbsp extra-virgin olive oil
2 tbsp wholegrain mustard
large bunch basil , roughly torn
1 tsp clear honey
1 lemon , grated zest and juice

Steps:

  • Heat grill to its highest setting. Rinse the fish under running cold water to dislodge any loose scales. Brush with a little of the oil and season lightly. Grill for 6-8 mins, or until cooked; the eye should be white, the skin well browned and the flesh firm and opaque.
  • Meanwhile, make the dressing: whisk the mustard, basil, honey, lemon zest and juice and remaining oil together in a small bowl, and season. Once the fish is cooked, spoon the dressing over and serve.
