Dad's Favorite Peanut Butter Cookies image

My Dad's sister gave me this recipe for killer peanut butter cookies.

½ cup shortening
½ cup crunchy peanut butter
½ cup white sugar
½ cup packed brown sugar
1 egg
1 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt

Steps:

  • Cream together the shortening, peanut butter and sugars. Beat in egg. Combine the flour, baking soda, baking powder and salt; gradually stir into the peanut butter mixture. Cover and refrigerate dough for at least one hour.
  • Preheat oven to 375 degrees F (190 degrees C). Make small balls of dough. Flatten with fork dipped in flour to form cross-wise pattern.
  • Bake for 10-12 minutes in the preheated oven, or until just set. Remove from baking sheets to cool on wire racks.

Steps:

  • Preheat oven at 375℉ (190℃). In a mixing bowl, combine flour, sugars, baking powder, and baking soda. In another mixing bowl, combine egg whites, margarine, peanut butter, and vanilla. Mix dry ingredients with wet ingredients just until moistened. If necessary, cover and chill until easy to handle. Then, roll dough into 1 inch balls and place 2 inch apart on unprepared baking sheet. Using the tines of a fork dipped in additional sugar, flatten balls to about ¼ inch thick by pressing fork in two directions to form crisscross marks. Bake for 12 minutes or until lightly brown.

2/3 cup butter, softened
2/3 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, salt and baking soda; gradually add to creamed mixture and mix well. Stir in chocolate chips and nuts. , Form dough into 1-1/2-inch balls and place on ungreased baking sheets. Bake until golden brown, 10-13 minutes. Remove from pans to wire racks to cool.

One of Grandma Dorothy's much sought after recipes. These oatmeal cookies are wonderfully chewy and are made with oil instead of butter or margarine so they appeal to the heath conscious. One is never enough!

1 ½ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
1 cup white sugar
1 cup brown sugar
1 ½ cups rolled oats
½ cup flaked coconut
¾ cup vegetable oil
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.
  • Bake for 10 to 12 minutes in the preheated oven, cookies should be a very light brown and chewy - not crisp. Cool for a couple of minutes on the baking sheets before removing to wire racks to cool completely.

1 1/4 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon fine salt
8 tablespoons (1 stick) unsalted butter, at room temperature
3/4 cup smooth peanut butter, at room temperature
1/2 cup firmly packed dark brown sugar
1/2 cup firmly packed light brown sugar
1 organic large egg, at room temperature
1 teaspoon vanilla extract
1 cup peanut butter chips
1/4 cup granulated sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Whisk together the dry ingredients in a medium bowl. In a large bowl, cream together the butter, peanut butter, and brown sugars. Stir in the egg and vanilla. Add the flour in thirds and stir until smooth. Fold in the peanut butter chips. Roll the mixture into golf ball-sized balls (about 1 1/2 tablespoons). At this point you can roll them in granulated sugar or you can press each cookie down with the tines of a fork. Either way, bake for 10 minutes, in a nonstick baking pan, rotating the pan halfway through baking time. Cool the cookies on a rack before serving.

1/2 cup sugar
1/2 cup packed brown sugar
1/4 cup margarine
1/4 cup shortening
1/2 cup creamy peanut butter
1 egg
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
14 -16 Hershey chocolate kisses (remove paper)

Steps:

  • Preheat oven to 375°F
  • In a large mixing bowl, combine sugars, margarine, shortening, peanut butter, and egg. Beat till creamy.
  • Stir in the remaining ingredients.
  • Once thoroughly mixed, roll into 1 1/2" balls. Roll balls in a bowl of sugar, coating on all sides. Place on a cookie sheet.
  • Bake 9-10 minutes until golden brown.
  • Remove from oven and press a Hershey's Kiss into the center of each cookie while still warm.
