- Mix first 4 ingredients.
- Beat egg, milk and oil in medium bowl with whisk until blended. Stir in flour mixture.
- Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/4 cup batter for each pancake; cook until bubbles form on tops, then turn to brown other sides.

MY MOTHER'S PANCAKES
This recipe comes from a hand-written addition to my mother's Home and Garden cookbook (you know the one with the red and white checkers that used to be given as wedding presents back in the 50's). Her book is older than I am. Anyway this is simply the best pancake recipe I've ever tried. I have tried a few, but always come back to this one.

Steps:
- Whisk together the brown sugar, white sugar, baking powder, milk, egg, olive oil, and vanilla extract. Stir in the flour 1/2 cup at a time until the batter reaches the desired thickness. The batter should look like cake batter (not too thin, but not too thick).
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface, about 3 minutes. Flip with a spatula, and cook until browned on the other side.

GRANDAD'S PANCAKES
This secret family pancake recipe was passed down from my grandfather. He fed a family of 7 (including 4 growing boys!) on these pancakes, and refused to give anyone the recipe until he finally relinquished it to my mother (his daughter-in-law) before he passed away. It is a long-standing family favorite!

Steps:
- Combine flour, sugar, baking powder, and salt in a bowl; make a 'well' in the center of the flour mixture. Pour milk, eggs, and 1 tablespoon oil into the well. Mix until well moistened.
- Place a griddle over medium-high heat; sprinkle a few drops of water onto the griddle. If the droplets bounce, the griddle is ready; add 2 teaspoons oil.
- Spoon batter onto the griddle; cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Repeat with remaining batter.

MY FAMILY PANCAKES
This has been the pancake recipe for my family since I was able to eat them. I don't know where my mother got this recipe but it's the best I've ever had. They rise up nice and high. I sometimes add vanilla and spices like cinnamon and nutmeg. Very tasty!!

This is from a very well-used recipe booklet called "Family Fare: Food Management and Recipes", published by the Department of Agriculture in April 1968. The booklet is literally falling apart. I thought I would try to preserve it here. The recipe has been increased from the original to better provide for our very large family.

- Mix dry ingredient thoroughly.

Steps:
- In a large bowl, whisk together the first 5 ingredients. In another bowl, whisk remaining ingredients; stir into dry ingredients just until moistened., Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with toppings as desired.

- In large bowl, stir together flour, sugar, baking powder and salt.
- In another bowl, whisk eggs, oil, milk and vanilla.
- Add liquid to dry mixture and whisk.
- Don't overmix; batter should be lumpy.
- Heat a heavy griddle or fry pan which is greased with a little butter or oil .
- The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.
- Pour a small amount of batter (approx 1/4 cup) into pan.
- When bubbles appear on surface and begin to break, turn over and cook the other side.
- Enjoy!

- In a medium bowl, whisk together the eggs and buttermilk. Stir in the melted butter.
- In a small bowl, mix the flour, sugar, baking soda, and salt together.
- Add the dry ingredients to the wet ingredients, stirring until just combined - don't worry if there are a few lumps. Stir in the bananas and pecans.
- Lightly grease a large sauté pan or griddle with the nonstick spray or butter. Heat the pan until hot and then spoon out 3 tablespoons of batter per pancake. Cook the pancakes until the tops look dull and a few of the bubbles pop, about 3 minutes. Turn the pancakes over and cook for another minute.
- Transfer the cooked pancakes to an ovenproof dish and place in a warm oven until the entire batch is ready to be served.
MY FAMILY'S FAVORITE PANCAKES
This developed from my quest for yummy pancakes that even I loved. I'm not a huge fan of pancakes, but I LOVE these fluffy (not too fluffy!) and sweet (not too sweet!) babies. I hope you try them and enjoy them, too!
