Shape into two patties., On a greased grill rack, grill the patties, covered, over medium heat or broil 4-6 in. from heat for 4 minutes on each side or until a thermometer reads 160°., Meanwhile, in a small skillet coated with cooking spray, cook and stir mushrooms and onion over medium heat until onion is golden brown. Grill rolls for 1-2 minutes or until lightly toasted., Spread rolls with cream cheese; top with burgers and mushroom mixture. Sprinkle with bacon.

OUR FAVORITE TURKEY BURGER
These tasty burgers incorporate shredded Gruyère cheese and Dijon mustard in the patty, rather than on top, which prevents the bun from getting soggy. Breadcrumbs add even more texture.

- Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with Gruyere, scallions, breadcrumbs, mustard, and garlic; season generously with salt and pepper. Gently form mixture into four 1-inch-thick patties.
- Lightly oil grill. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until cooked through, 5 to 10 minutes per side.

MY FAVORITE BURGER
Steps:
- Place the ground beef into a medium mixing bowl. Add 1 teaspoon salt and ½ teaspoon of ground black pepper. Add a few dashes of Tabasco sauce. With your hands, mix the meat and seasoning well. Set aside.Next, for the onions, heat a medium skillet over low heat. Add in 2 tablespoons butter. Dump in the sliced (not too thick, not too thin) red onions. Now add 2 generous tablespoons brown sugar. Give it a toss to combine the ingredients, and then allow the onions to caramelize over low heat for about twenty minutes, tossing occasionally.While the onions are caramelizing, make the spicy mayo: Place ¼ cup mayonnaise into a small bowl and simply add a few dashes of Tabasco. Stir together and test for taste.Next, slice the Kaiser rolls in half and spread each half with about ½ tablespoon of butter. Place them face down on a grill pan or skillet over medium heat. Lightly grill the rolls so they'll be tough enough to hold the spicy mayo. Let the rolls cool on a plate until you need them.Form the meat into two patties and place on a grill pan or skillet over medium to medium-low heat. Allow each to cook about 3 minutes, then using a spatula, rotate 45 degrees, leaving it on the same side. Flip the burger and cook it for a couple of minutes, rotating it 45 degrees again to get the nice grill marks. Now add a large helping of caramelized onions over top of that glorious patty, followed by an equally generous helping of crumbled blue cheese. As it finishes cooking, spread the spicy mayo on the Kaiser rolls and transfer the burger onto the bottom half of the bun. Top with a handful of greens and top with the bun.
MY HUSBAND'S FAVORITE BAKED BURGERS
Simple, flavorful hamburger recipe that my husband loves. Ketchup is the binder so no egg is required. They hold together very well. I bake them in the oven and they come out perfect every time! I serve these with a slice of cheese melted on top. Top as desired.

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine ground beef, bread crumbs, ketchup, Worcestershire sauce, garlic powder, onion powder, mustard powder, salt, and black pepper in a bowl until well mixed. Form into 4 patties and place on a baking sheet.
- Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Serve immediately.

- PREHEAT THE GRILL: Heat the grill 450 to 500 degrees F.
- BURGERS: In a large mixing bowl, add the beef straight from the fridge, the minced garlic, green onions, and Worcestershire sauce. Fold the meat just a few times (no longer than for 30-40 seconds) until ingredients are incorporated. Be careful to not overwork or overhandle the meat.
- SHAPE: Line a large sheet pan with two layers of parchment paper. Shape the burger patties on the tray instead of with your hands (this helps keep them from being over handled while also providing leverage to get the patties firm). Divide all the meat into six equal parts and then separate each part into two parts (with 1 part larger than the other). Gently form each large portion into a patty that is about 4 to 4 and 1/2 inches across and with 1-inch sides. Make a shallow depression in the middle. Add 2 tablespoons grated cheese into each depression. Cover the cheese with the smaller patty, connecting the beef together and forming into a patty with 1 inch thick sides. Again, depress the center of the patty (see pictures in the post). The depression keeps the patty from shrinking too much and puffing up too much. Cover with plastic wrap and place in the fridge until the grill is completely heated.
- BUNS: Melt the butter and then brush (with a pastry brush) over both sides of all the buns. Set aside.
- GRILL BURGERS: Prepare the fully preheated grill by cleaning with a grill brush. Generously oil the grill (I drench a rolled-up paper towel in vegetable oil and, holding it with tongs, rubbing it over the grill grates). Remove burgers from the fridge and generously salt and pepper both sides of the patties. Hold your hand 6-7 inches above the meat and sprinkle the seasoning liberally or to taste. In total, I use about 1 and 1/2 teaspoons each of salt and pepper to all the patties.Place patties INDENT SIDE DOWN on the grill. Cook to desired doneness:Rare burgers: 125 degrees F (about 4 minutes total) Medium-rare burgers: 135 degrees F (about 5 minutes total) Medium burgers: 145 degrees F (about 6-7 minutes total) Well-done burgers: 160 degrees F (about 8 minutes total) (We like medium rare best) Flip the burgers once during cooking, at the halfway mark. Never press down on the patties (this will make fat and flavor escape). Use a wide metal spatula for best results in flipping and removing patties.
- GRILL BUNS: When you have about 1 minute left of the cooking time for the patties, add the buttered buns to the grill (over indirect heat, alongside the edges of the grill). Watch carefully; they are toasted in about 30 seconds to a 1 minute.
- SERVE: Remove burgers and buns from grill and transfer to a clean platter. Let the burgers rest for 1-2 minute before serving. Assemble by adding burger sauce (See Note 1) and your favorite veggies such as lettuce, tomatoes, pickles, red onion, etc.
- GRILL: Brush corn and green pepper with olive oil and season (to taste) with salt and pepper. Grill corn (400-450 degrees F) until browned on all sides, 8-12 minutes, (flipping every 2-3 minutes) and transfer to cutting board to cool. Grill green pepper until browned on all sides, 2-3 minutes per side and transfer to cutting board.
- While veggies are grilling prepare the rest of the salad: chop the cherry tomatoes, thinly slice green onions, dice jalapeno and cilantro, and juice a lime. Add to a large mixing bowl with baked beans and olive oil. Toss. Once veggies have been grilled and cooled, slice kernels off the cob and dice the pepper. Toss all the ingredients to combine and season with salt and pepper to taste. Enjoy alongside the burgers!

- Preheat the oven to 350 degrees F. Grease a baking sheet or parchment-lined baking sheet and set aside.
- Make breadcrumbs by blending 1-inch pieces of bread in a blender or food processor, scoop breadcrumbs into a large mixing bowl. Stir in walnut, sage, oregano, and basil.
- In a food processor or blender, place tofu, liquid aminos, nutritional yeast flakes, tapioca starch, onion powder, garlic, and sea salt and process.
- Pour blended mixture into the bowl with seasoned breadcrumbs and mix well.
- Using a large canning jar lid, including both the cap and rim, form the mixture into patties and place them on a lightly oiled cookie sheet.
- Bake for 30 minutes, turning halfway. You may also cook in a lightly oiled skillet on both sides. Top with your favorite toppings!

- If making sweet potato fries: preheat your oven to 400 F. Toss the potato wedges in a bowl with olive oil, salt and pepper. Pour onto a baking sheet, spread them out so they have room and place the sheet on the bottom rack of the oven. Bake for 15-20 minutes, flipping halfway.
- Make the sauce: combine all the sauce ingredients in a bowl. Taste and adjust flavors as needed! Set aside.
- Grill or cook your burgers in a pan: Salt each side of the burger before cooking. We cooked ours with a splash of avocado oil (it has a higher smoke point) on a grill pan but you can use a little olive oil too. Make sure the pan, if you're using one, is VERY hot. Cook burgers according to your preferred level of done-ness. Add cheese slices on top in the last few minutes of cooking.
- Assemble the burgers! On the bottom half of the bun, spread a generous amount of sauce. Then add the cheese-covered burgers, followed by pickles if using, tomato, lettuce and finally, the top part of the bun. (I slathered more sauce on the other bun before topping the burger with it! Enjoy immediately with a milkshake and a side of sweet potato fries if desired.

- Heat your grill or grill pan to medium-high heat. Add the burgers to the grill and cook for about 4-5 minutes or until juices start running from the top of the burger. Flip and cook for another 2-4 minutes and add your cheddar cheese. Allow the cheese to melt and remove from the grill.

- Roast the sweet potatoes: Slice the sweet potatoes down the center lengthwise. Place the sweet potatoes, cut side down, on the prepared baking sheet. Roast until they yield to a gentle squeeze, 30 to 40 minutes or longer. Set aside for now. (If you’ll be baking the burgers, reserve the parchment-lined pan and leave the oven on.)
