Vanessa Lachey shares her favorite Thanksgiving family recipe with Parade: Italian Herbed Green Bean Skillet with Crunchy Crumb Topping.

3 (14.5-oz) cans Libby's French Style Green Beans, drained
2 Tbsp butter
1 large onion, halved and sliced
4 garlic cloves, minced
1½ tsp Italian herb seasoning blend
½ cup chicken or vegetable broth
⅓ cup chopped dry sun-dried tomatoes (preferably
2 Tbsp butter
½ cup Parmesan cheese, grated
1 cup crushed cheese and garlic or herbed croutons

Steps:

  • Melt butter in very large skillet over medium-high heat. Add onion and cook for five minutes or until lightly browned, stirring occasionally. Reduce heat to medium and stir in garlic; cook for two more minutes, stirring frequently. Stir in herbs. Add Libby's French Style Green Beans, broth and sun-dried tomatoes to skillet. Cook and stir over medium-high heat for five to six minutes or until excess liquid has cooked off. Season with pepper and set aside. To prepare topping, melt butter in medium skillet over medium heat. Add crushed croutons; cook and stir for two minutes. Transfer green beans to large shallow casserole dish and sprinkle with cheese and croutons.

After finding this recipe in the Crisco Best Recipes -- Year-Round Holiday Magic cookbooklet of Nov 2003, I tweaked it slightly!

1/4 cup dried breadcrumbs, divided
2 teaspoons dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 teaspoon dried oregano
2 teaspoons parsley
1 teaspoon garlic powder
1 cup parmesan cheese, freshly grated
1/2 cup vegetable oil
2 lbs fresh green beans (or 2 14-oz cans of drained green beans)

Steps:

  • Preheat oven to 350 degrees F.
  • If using fresh beans, rinse them & cut them into 3"-to'4" pieces, before steaming them for about 15 minutes, or until they are only slightly crisp. Set beans aside.
  • In a large bowl whisk together breadcrumbs (I use crumbs from winter wheat or cracked wheat bread), basil, salt, pepper, thyme, oregano, parsley, garlic powder & Parmesan cheese.
  • Add vegetable oil to crumb mixture & stir well, before setting aside 2 tablespoons of the crumb mixture for topping the casserole.
  • In an ovenproof dish, combine green beans & crumb mixture, then sprinkle with reserved crumb mixture.
  • Bake about 30 minutes or until top is golden & crispy.

1 lb green beans, trimmed
1 tablespoon balsamic vinegar
2 teaspoons olive oil
1/2 teaspoon dried rosemary leaves, finely crushed
1/2 teaspoon dried thyme leaves
1/4 teaspoon sea salt, freshly ground
1/8 teaspoon ground black pepper

Steps:

  • Add beans to medium saucepan with water to cover and bring to a boil.
  • Reduce heat to low; simmer 4 to 6 minutes or until crisp-tender. Drain. Return beans to pan.
  • Add vinegar, oil, and spices to pan, tossing with beans.
  • Cook and stir over medium heat 1 to 2 minutes or until heated through.

1 lb fresh green beans
1 (14 ounce) jar artichokes (including the juice)
1 cup fresh breadcrumb
1/2 cup olive oil
1/2 cup parmesan cheese
2 teaspoons Italian herb seasoning or 2 teaspoons pasta sprinkle seasoning
salt & pepper

Steps:

  • Preheat oven to 350°.
  • Steam green beans until tender and place in a bowl.
  • Add artichokes, breaking up if needed. Mix in bread crumbs, olive oil, Parmesan cheese, Italian Herb Mix and salt and pepper to taste.
  • Bake in a casserole dish 25-30 minutes, until bubbly and lightly browned.
