1-3 habanero peppers (1 for mild, 2 for medium hot and 3 for extra hot)
5 scallions, roughly chopped
1 medium onion, roughly chopped
7-8 sprigs of thyme
8 garlic cloves, chopped
2 inch ginger, roughly chopped
2 tsp allspice pimento berries or powder
2 Tbsp brown sugar
1 tsp nutmeg
1 tsp cinnamon
1/4 cup soy sauce
2 Tbsp vegetable oil
1/4 cup vinegar
1/4 cup orange juice
1 tsp salt
1/2 tsp black pepper

Steps:

  • Put bigger chunks like chopped onion, scallion, ginger, garlic, thyme and habanero peppers in the blender and blend well.
  • Add remaining ingredients and blend until you have a rough paste like consistency, scraping down from sides in between if necessary.
  • Refrigerate in an airtight container until further use.

This is a family recipe that has been developed only over the last 5 years. In this short time it's made me famous in our close circle, but until now I've never shared it with anyone.

⅓ cup soy sauce
½ cup olive oil
⅓ cup fresh lemon juice
¼ cup Worcestershire sauce
1 ½ tablespoons garlic powder
3 tablespoons dried basil
1 ½ tablespoons dried parsley flakes
1 teaspoon ground white pepper
¼ teaspoon hot pepper sauce
1 teaspoon dried minced garlic

Steps:

  • Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
  • Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

2 tablespoons lemon juice

1 teaspoon ground ginger
2 cloves crushed garlic

Steps:

  • In a non-porous glass dish or bowl, combine the salad dressing, soy sauce, lemon juice, sesame seeds, ginger and garlic. Mix all together. Add favorite meat and marinate, covered and refrigerated, for at least 2 hours.

My Favorite Fajita Marinade image

We prefer chicken to steak fajitas in our house, but I'm sure it would taste great with beef as well. I ALWAYS marinate boneless, skinless breasts OVERNIGHT, grill, and slice thinly. I also use half the marinade for sliced onions and peppers, which I marinate in a seperate ziplok bag, then saute in a hot skillet. If serving buffet style, I lower the flame in the skillet, add a little of the veggie marinade, and the sliced, grilled chicken to the skillet. That way, nothing gets cold or dried out.

1 1/2 teaspoons lime rind
1 (14 1/4 ounce) can low sodium chicken broth
3 tablespoons lime juice
2 tablespoons Worcestershire sauce
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon dried oregano
3/4 teaspoon pepper
2 garlic cloves, pressed or minced

Steps:

  • Combine all ingredients in a large freezer bag, add meat of choice and marinate in fridge overnight.

My Favorite Marinade image

This simple marinade tenderizes and adds so much flavor to any cut of beef, pork, poultry or venison. We use this before grilling steaks on the outdoor grill and we also use it for steaks we broil in the oven. You may also use it to baste while cooking but always discard leftovers and start out with a fresh batch each time. The one hour to marinate is substituted for cooking time.

1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup red wine vinegar
2 tablespoons sugar
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon ginger, especially good with poultry (optional)

Steps:

  • Combine all ingredients in small bowl.
  • Whisk together until sugar is dissolved.
  • Place meat in container for marinating.
  • Using a fork, pierce meat at 1/2 inch intervals.
  • Pour marinade over meat.
  • Let meat soak in marinade at least 30 minutes per side.
  • For less tender cuts of meat, allow to marinate longer.
  • I normally marinate most beef cuts 2 hours, pork or venison cuts 1 1/2 hours and poultry 1- 1 1/2 hours.
  • Discard marinade after use.
