This classic Italian-American chicken recipe includes tender, perfectly pan seared chicken cutlets, and flavor enhancing browned mushrooms, and it's all covered with a richly seasoned marsala wine, garlic and herb sauce.

1 1/4 cups dry marsala wine*
1 1/4 cups unsalted chicken broth
2 (10 - 11 oz) boneless skinless chicken breasts, (butterflied and halved, pounded to an even thickness)
Salt and freshly ground black pepper
1/3 cup all-purpose flour
2 Tbsp unsalted butter
2 Tbsp olive oil
8 oz. cremini mushrooms, (sliced)
3 garlic cloves, (minced (1 Tbsp))
1 tsp minced fresh thyme ((or scant 1/2 tsp dried))
1 tsp minced fresh oregano ((or scant 1/2 tsp dried))
1 1/2 tsp cornstarch (whisked with 1 Tbsp chicken broth (in a small bowl until well combined))
1/3 cup heavy cream
1 Tbsp minced fresh parsley

Steps:

  • Add marsala wine and chicken broth to a medium saucepan. Heat over medium-high heat, bring to a boil, then reduce heat to medium and let gently boil until reduced to 1 cup**, about 15 minutes.
  • Meanwhile season both sides of chicken with salt and pepper. Dredge each side in flour.
  • Melt 1 Tbsp butter with 1 Tbsp olive oil in a 12-inch skillet over medium-high heat. Add chicken pieces and let sear until cooked through (165 in center), turning once halfway through, about 10 - 12 minutes.
  • Transfer chicken to a plate. Tent with foil.
  • Reduce burner temperature to medium heat. Melt remaining 1 Tbsp butter with 1 Tbsp olive oil, add mushrooms.
  • Sauté mushrooms, just tossing occasionally (and increasing burner temp slightly as needed to encourage browning), until mushrooms have shrunk and are golden brown, about 8 minutes. Add garlic during last 1 minute of sautéing.
  • Remove pan from heat then pour in marsala reduction***, thyme and oregano.
  • Return to heat, bring to a simmer, while scraping up browned bits from the bottom, then stir in cornstarch chicken broth mixture. Stir until thickened****.
  • Off heat stir in heavy cream, season sauce with salt and pepper to taste. Return chicken breasts to pan, spoon sauce over top.
  • Sprinkle with parsley and serve immediately.

¼ cup all-purpose flour
½ teaspoon garlic salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
4 boneless, skinless chicken breast halves
1 tablespoon olive oil
1 tablespoon butter
1 cup sliced fresh mushrooms
½ cup Marsala wine

Steps:

  • In a medium bowl, stir together the flour, garlic salt, pepper, and oregano. Dredge chicken in the mixture to lightly coat.
  • Heat olive oil and butter in a large skillet over medium heat. Fry the chicken in the skillet for 2 minutes, or until lightly browned on one side. Turn chicken over, and add mushrooms. Cook about 2 minutes, until other side of chicken is lightly browned. Stir mushrooms so that they cook evenly.
  • Pour Marsala wine over the chicken. Cover skillet, and reduce heat to low; simmer for 10 minutes, or until chicken is no longer pink and juices run clear.

Ingredients:
4 boneless skinless chicken breasts Pounded to 1/4 inch thick (see my note above)
Rosemary Sea Salt about 2 tsp or to taste
Fresh ground pepper - 1 tsp or to taste
1 tsp oregano
1 1/2 cup flour
4 tablespoons extra virgin olive oil
2 tablespoons butter
6 ounces baby bella mushrooms sliced
1 Tablespoons of minced garlic
1/2 cup finely minced onion
1/2 cup Marsala wine
1 cup chicken broth
2 tablespoons butter softened with 1 T of flour
2 tablespoons of fresh snipped parsley

Steps:

  • Process: Pound the chicken out to about 1/4 inch thickness. Season with salt, pepper and oregano. Put the flour on a plate. Dredge the chicken in the flour, shaking off any excess. Heat the olive oil and butter in a large pan over medium high heat. Once the oil is hot, add the chicken. Cook for 2-3 minutes on each side, just until the chicken is golden brown. Remove the chicken from the pan and put on a plate. Cover to keep warm. Saute onion and mushrooms and garlic, stirring occasionally, until liquid mushrooms give off is evaporated. Add Marsala and cook mixture, stirring, until Marsala is almost evaporated (about 2 minutes). Be sure to scrape the bits off the bottom of the pan so you get all the flavor in your sauce. Add broth and chicken with any juices that have accumulated on plate and simmer, turning chicken once, until cooked through, about 10 minutes. Transfer chicken with tongs to a platter. Remove skillet from heat and stir in remaining 2 tablespoons butter that has been incorporated with the flour stirring until butter is just incorporated This process finishes the sauce with a glossy and smooth texture. 4 skinless, boneless chicken breast halves
¼ cup chopped green onion
1 cup sliced fresh mushrooms
⅓ cup Marsala wine

Steps:

  • Heat oil in a large skilled over medium heat. Add chicken and saute for 15 to 20 minutes, or until cooked through and juices run clear.

Chicken marsala is on Italian menus everywhere and you'll be surprised just how easy this recipe is to make at home! Chicken breasts are pounded thin and pan fried until golden-brown then slathered in mushrooms and an incredible marsala wine sauce. It's as delicious as it sounds, and now you can make restaurant-quality chicken marsala from the comfort of your own kitchen!

¼ cup all-purpose flour
½ tsp each, salt & pepper ((plus more, to taste))
1 ½ lbs chicken breast ((pounded ¼-inch thick (*see note), or use chicken tenderloins or chicken cutlets))
1 Tbsp olive oil ((extra virgin))
3 Tbsp unsalted butter ((divided into a 2 tablespoon portion and 1 tablespoon portion))
8 oz cremini mushrooms ((AKA 'baby bellas', or use white mushrooms, sliced))
1 medium shallot ((finely chopped- *see note))
2 cloves garlic ((minced))
⅔ cup chicken broth
⅔ cup marsala wine ((use a dry marsala))
⅔ cup heavy cream
2 tsp fresh thyme ((chopped))
2 Tbsp fresh Italian parsley ((optional, chopped for garnish))

Steps:

  • In a large gallon-sized freezer bag, combine the flour, salt, and pepper then shake to mix. Add your chicken breasts to the bag and shake until fully coated.
  • Heat the olive oil and first 2 tablespoons of butter in a large skillet over medium-high heat. Once hot, shake off any excess flour coating on the chicken breasts and place them in the pan.
  • Cook the chicken until golden and just barely cooked through, about 5 or 6 minutes, only flipping it once at the halfway point (3 minutes or so). Transfer it to a plate or cutting board and set it aside.
  • Add the remaining 1 tablespoon of butter to the hot pan. Once it has melted, add the mushrooms. Stir frequently as the mushrooms cook for 3-4 minutes, or until they begin to brown.
  • Once the mushrooms begin to brown, add the shallots and garlic. Cook for just 1-2 minutes, stirring frequently, then add in the broth, marsala wine, heavy cream, fresh thyme, and salt & pepper to taste.
  • Use a wooden spoon to scrape the fond (brown bits) from the bottom of the pan so it mixes into the sauce. Bring to a boil, then reduce the heat to medium and allow it to boil gently, uncovered, until the liquid has reduced by half and begins to thicken just slightly (about 10-15 minutes).
  • Add the cooked chicken back to your skillet, along with any juices that have seeped out as it was sitting. Reduce the heat to low, and simmer for 2-3 minutes or until the chicken has warmed through and the sauce has thickened a tad more.
  • Serve immediately and garnish with freshly chopped Italian parsley, if desired.

Certain dishes have a special place in my heart and this is one of them. The first real restaurant job I had in San Francisco was at a small place called Ryan's Cafe. It was run by a husband and wife team, Michael and Lenore Ryan. They were true 'foodies' before that term had even been coined. This chicken Marsala dish was the most popular dish on the menu and the first one that I was taught.

2 skin-on, boneless chicken breast halves
1 teaspoon salt and ground black pepper to taste
3 tablespoons butter, divided
2 tablespoons olive oil
5 white mushrooms, sliced
1 shallot, minced
1 tablespoon all-purpose flour
1 cup Marsala wine
2 cups chicken stock
2 tablespoons chopped fresh parsley
1 teaspoon cold butter

Steps:

  • Season chicken breasts all over with salt and pepper.
  • Melt 1 1/2 tablespoons butter and olive oil in a skillet over medium heat. Cook chicken breasts, skin-side down, in hot butter and oil until browned, about 5 minutes. Flip and cook until breasts are almost cooked through, about 5 minutes more. Transfer chicken breasts to a plate.
  • Melt 1 1/2 tablespoons butter in the same skillet over medium-high heat. Saute mushrooms with a pinch of salt and a pinch of pepper in hot butter until mushrooms are golden, 5 to 7 minutes. Add minced shallot; cook and stir until softened, 2 to 3 minutes. Sprinkle flour over the top and cook and stir until the bitterness of the flour cooks off, 3 to 4 minutes.
  • Pour wine into skillet and bring to a boil; cook and stir until wine reduces and sauce thickens, 3 to 4 minutes. Add chicken stock; bring to a simmer and cook until slightly reduced, 3 to 5 minutes more.
  • Return chicken breasts to the skillet, reduce heat to low, and cook chicken, turning once, until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from heat.
  • Move chicken to one side of the skillet and tilt the skillet so that the sauce pools at the bottom. Stir parsley and 1 teaspoon cold butter into the sauce, stirring constantly, until sauce is shiny and butter is completely melted. Transfer chicken breasts to plates and spoon mushrooms and sauce over the top.
