BEER BREAD MUFFINS
Beer Bread Muffins made with beer, garlic, butter, cheese, and flour.

Steps:
- Melt butter over low heat in a small saucepan.
- Add in minced garlic and cook just until you start smelling the garlic, about 1 minute.
- Remove pan from heat and set aside.
- In a large mixing bowl, stir together flour, baking powder, salt, and sugar.
- Add in beer and melted butter mixture.
- Stir until ingredients are just moistened. Batter will be lumpy.
- Spray a 12 cup muffin tin with non stick spray.
- Evenly divided batter among the 12 cups.
- Bake at 400 degrees for 15 - 20 minutes or until tops are golden and a skewer inserted in the center comes out clean.
- Remove muffins to a wire rack to cool before serving.

Steps:
- Spray muffin tin with nonstick spray and set aside.
- Preheat oven to 350 degrees.
- Heat beer in sauce pan until just warm, do not let boil, and remove from stove.
- Add sugar to beer and stir until sugar is disolved.
- Add flour into beer and sugar and stir until blended.
- Spoon into muffin tins filling each about half way.
- Bake for 30 minutes or until golden brown.

MOM'S BAKED EGG MUFFINS

Steps:
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate; crumble and set aside.
- Preheat an oven to 375 degrees F (190 degrees C). Grease muffin cups.
- Combine the melted butter and maple syrup in a small bowl. Flatten a piece of bread with a rolling pin. Brush the bread with the butter mixture. Line the muffin cup with the flattened bread. Repeat with the remaining bread slices. Bake in a preheated oven until the bread crisps, about 3 to 5 minutes.
- Sprinkle crumbled bacon into the bottom of the toast cups. Crack an egg into each cup. Season with salt and pepper to taste. Top each egg with 1 tablespoon of heavy cream and 1 tablespoon cheese. Bake until the whites are just set, about 10 to 14 minutes or until the eggs are cooked to your taste.

These muffins were always a special treat when I was a child. Now I have lots of muffin recipes, and I make one kind or another several times each week. But none are better than these...and for me, none come out of the oven with so many heartwarming memories attached!

- Season the beef with salt and pepper, then dredge in flour to coat. Heat the oil in a large pot over medium-high heat. When the oil is hot, add the meat, and cook until browned on all sides, turning as needed. Remove the meat from the pot, and set aside.
- Add the onion and garlic to the pot; cook and stir until clear and starting to brown. Return the meat the pot, and pour in the beer and water making sure to loosen any bits of food from the bottom of the pan. Season with rosemary, dill and parsley.
- Bring to a boil, then simmer over low heat for 1 1/2 hours.
