Mücver image

Mücver are delicious traditional zucchini fritters from Turkish cuisine that can be prepared with feta, and are often served with a yogurt sauce.

4 mini zucchini ((or Lebanese summer squash), peeled and grated)
1 carrot (, peeled and grated)
3 eggs
4 tablespoons cornstarch
2 tablespoons all-purpose flour
2 sprigs dill (, chopped)
½ teaspoon red chilli flakes
2 teaspoons baking powder
3 oz. feta cheese (, crumbled (optional))
Vegetable oil ((for frying))
Cheesecloth

Steps:

  • Place the grated squash in cheesecloth and wring out well.
  • In a large bowl, beat the eggs and add all the other ingredients (except the vegetable oil).
  • In a frying pan, heat a large quantity of oil and, once it is hot, add small portions of the mixture to it using two tablespoons.
  • Fry on both sides over medium to high heat so that the fritters are evenly browned. To do this, grasp the pan by the handle, and make slight rotary movements of the wrist so that the hot oil covers all the edges of the donuts and the top, and thus the cooking is uniform.
  • Using a skimmer, remove the mücver from the oil and place in a dish lined with paper towel.
  • Serve hot or warm with a yogurt sauce.

Mucver (or crispy Zucchini / Courgette Fritters) are small vegetable pancakes that contain courgettes, egg, flour, spring onion, and fresh herbs.

2 medium courgettes (approximately 400 g) ((grated))
4 spring onion ((green part only, sliced))
6 sprigs fresh mint ((finely chopped))
1 TSP dried mint
2 tbsp parsley ((finely chopped))
2 tbsp dill ((finely chopped))
1 large egg ((or 2 small eggs))
4 tbsp flour ((60 grams))
½ TSP salt
½ TSP freshly ground black pepper
½ TSP baking powder
⅓ cup vegetable oil ((for frying))

Steps:

  • Grate the courgettes, place them in a colander, sprinkle with a little salt, and leave to drain for 30 minutes.
  • Place the grated courgettes in a tea towel or absorbent paper towel and squeeze out excess water then transfer to a large bowl.
  • Add the spring onions, fresh and dried mint, parsley, dill, egg(s), flour, salt, freshly ground black pepper, and baking powder to the courgettes and mix well to form a thick batter.
  • Heat a large frying pan on medium heat and add the vegetable oil.
  • When the oil is hot, drop a heaped spoonful of the mixture into the hot oil and gently press to flatten it out a little. Depending on the size of your pan, fry 4 or 5 fritters at a time.
  • Fry for a few minutes until they are golden brown then flip them using a spatula. Fry the other side for a few more minutes and place them on a plate layered with a paper towel to absorb excess oil.
