Here's the ultimate comfort food: a hearty potato soup made with half-and-half, cream cheese and sliced leeks. Sprinkle with fresh chives and enjoy.

Number Of Ingredients 8

1/4 cup butter
6 leeks (1-1/2 lb.), white and light green parts, cut into 1/4-inch thick slices
2 lb. baking potatoes (about 4), coarsely chopped
5 cups water
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup half-and-half
1/4 tsp. pepper
2 Tbsp. chopped fresh chives

Steps:

  • Melt butter in large stockpot on medium-high heat. Add leeks; cook 5 min. or until tender, stirring frequently. Add potatoes and water; stir. Bring to boil; cover. Simmer on medium-low heat 20 min. or until potatoes are tender, stirring occasionally. Remove from heat.
  • Puree with a hand-held blender, right in the stockpot. (Or add, in batches, to a countertop blender; blend until smooth.) Return potato puree to stockpot. Cook on medium heat 5 min. or until heated through, stirring occasionally.
  • Add cream cheese and half-and-half; stir. Cook 3 to 5 min. or just until cream cheese is melted and mixture is blended. Stir in pepper. Sprinkle with chives just before serving.

6 Large Potatoes peeled cut in large dice
2 Large Onions diced
1 Lb bacon diced
2 Stalks Celery diced
2 Eggs
2 tsp Salt
2 Cups Milk
Pepper
Flour

Steps:

  • 1. Boil potatoes and celery with water twice as high in the pot. Separately, dice and cook bacon. 2. Saute onions in bacon grease and strain. Add bacon and onions to pot and simmer. 3. Mix eggs and salt. Slowly add flour to egg mix while stirring. You want to add until you get thickness of cookie dough. These will make dumplings that will also thicken the soup. My family varies on size, here are a few techniques; 1) roll dough into a 1/2" rope and cut half inch pucks, 2) roll into balls, 3) pull or cut into irregular pieces. This could be fun job for the kids. At any rate, toss them in to bowling pot gradually so they don't clump together. 4. Add milk and and simmer to thicken, about 1/2 hour.

2 ¼ teaspoons active dry yeast
¼ cup warm water (110 degrees F/45 degrees C)
1 teaspoon white sugar
3 cups all-purpose flour
2 cups milk
3 eggs, beaten
¼ cup margarine, melted
1 cup white sugar
1 ½ teaspoons salt
4 cups all-purpose flour
2 quarts vegetable oil for frying

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm. In a small bowl, proof the yeast by adding the warm water to the yeast. Let stand 10 minutes.
  • In a large bowl mix together the teaspoon of sugar and 3 cups of the flour. Stir in milk until smooth. Add proofed yeast and mix well. Cover and let rise until doubled in size.
  • Stir in beaten eggs, melted butter or margarine, one cup of sugar, salt, and enough of the remaining flour to make a stiff dough. Cover and let rise for a second time until doubled.
  • Punch down dough and divide into 2 portions. On a lightly floured surface, roll out dough to 1/2 inch thickness. Cut dough with a biscuit cutter. Make 2 slits with a sharp knife in the middle of each doughnut. Cover and let rise a third time until doubled in size.
  • Deep fat fry in oil or lard for 3 to 4 minutes on each side until lightly browned. Rotate to ensure even cooking. Drain on brown paper bags. Toss in confectioners sugar while still warm.

3 lb. red potatoes (about 9), peeled, chopped
4 cups water
1 can (12 oz.) evaporated milk
2 cups 2% milk
4 cups chopped broccoli
3 Tbsp. chopped onions
3/4 lb. (12 oz.) VELVEETA, cut into 1/2-inch cubes
6 oz. OSCAR MAYER CARVING BOARD Slow Cooked Ham, chopped

Steps:

  • Cook potatoes, water and evaporated milk in Dutch oven 10 min. or until potatoes are tender.
  • Add 2% milk, broccoli and onions; cook on medium heat 5 min. or until broccoli is tender, stirring frequently.
  • Stir in VELVEETA and ham; cook on low heat 5 min. or until VELVEETA is completely melted and soup is heated through, stirring constantly.

One dish meal that is really good. I made this for a meal while visiting my daughter & her family in Germany. Everyone loved it, even my 2 & 4 year old Granddaughters!

Number Of Ingredients 8

1 1/2 lbs hamburger
1/4 cup chopped onion
1/4 teaspoon pepper
6 medium potatoes
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
1 (15 ounce) can creamed corn

Steps:

  • Brown hamburger, chopped onion and pepper together in a skillet.
  • Wash and slice the potatoes with the skins left on.
  • Stir together all the soups & corn in a large casserole pan.
  • Add browned hamburger and potatoes to the soup mixture and stir well.
  • Bake at 375 degree oven for approximately 2 to 2 1/2 hours.
  • Stir a couple times during baking.
  • I usually have it covered the 1st hour, then leave it uncovered the remaining time.
  • This is one of those recipes that I never had a recipe to follow, I just knew the ingredients from my mom making it when I was a child. The hamburger amount could vary from 1 to 2 lbs & the potatoes could be anywhere from 4-8 depending how much you want to make. Also could add an extra can of cream corn if making a larger amount of hamburger & potatoes.
  • I have also made it in my crock pot; starting out the 1st hour in the oven, then finishing it off in the crockpot on low for 3-4 hours because I brought it to work for a potluck.

Just an old family recipe that I have been told is reminiscent of KFC coleslaw. You be the judge! To speed things up I sometimes just buy an already shredded bag of cabbage with carrots in it and then just chop it a little finer.

1 head cabbage, finely shredded
2 carrots, finely chopped
2 tablespoons finely chopped onion
½ cup mayonnaise
⅓ cup white sugar
¼ cup milk
¼ cup buttermilk
2 tablespoons lemon juice
2 tablespoons distilled white vinegar
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Mix cabbage, carrots, and onion in a large salad bowl. Whisk mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt, and black pepper in a separate bowl until smooth and the sugar has dissolved.
  • Pour dressing over cabbage mixture and mix thoroughly. Cover bowl and refrigerate slaw at least 2 hours (the longer the better). Mix again before serving.

  • Chop the onion, celery, and garlic. Then peel the potatoes and cut them into 3/4 inch chunks. Place the potato chunks in a bowl of cold water so they don't brown.
  • Place a large 7-8 quart pot over medium heat. Add the butter. Once melted, add the onions, celery and minced garlic. Sauté for 3-5 minutes to soften, stirring each minute.
  • Drain off the water and add the potatoes to the pot. Add 8 cups fresh water, chicken base, and rosemary. Cover and simmer for 30 minutes, until the potatoes are fork-tender.
  • Use a potato masher to gently mash approximately 1/3 of the potatoes. You want the soup base to be thick, but to still see plenty of chunks.
