NANCY'S TURKEY STUFFING

Nancy's Turkey Stuffing image

I got this from my sister-in-law and it is simple but nicely seasoned. Makes 3 quarts (enough for a 12lb turkey).

Provided by alvinakatz

Categories     Egg Free

Time 20m

Yield 3 quarts

Number Of Ingredients 7

1 cup butter
1 cup onion, minced
12 cups dried bread, cubed
1 1/2 cups celery, leaves and stalks chopped
1 tablespoon salt
1 teaspoon pepper
1 tablespoon poultry seasoning (or a mix of sage, thyme and marjoram)

Steps:

  • Melt the butter in a large, heavy skillet. Add the onion and cook until yellow. Stir in as many breadcrumbs as fit and heat.
  • Transfer to a large, deep bowl and add celery, seasoning and the rest of the bread. Mix well. If too dry, add enough broth or water to moisten (don't make it soggy!).

STELLA'S TRADITIONAL TURKEY STUFFING

Stella's Traditional Turkey Stuffing image

Traditional stuffing for an 8-person family Thanksgiving feast. Mom got up early to prepare and it was well worth it. It seemed that the stuffing always went first, which caused her to make a double batch. One in the bird, one in a glass bowl. However eating the stuffing from the bird cavity was always preferred!

Time 1h40m

Yield 8

Number Of Ingredients 16

turkey innards (gizzard, liver, heart, tail, and neck)
2 stalks celery with leaves, diced
1 medium carrot, diced
1 bay leaf
salt and ground black pepper to taste
¼ pound ground beef
1 loaf day-old white bread, cubed
2 cups chopped celery with leaves
1 medium apple, cored and chopped with peel
¼ cup chopped walnuts
¼ teaspoon poultry seasoning
¼ teaspoon dried oregano
¼ teaspoon dried sage
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
¼ cup vegetable oil

Steps:

  • Combine turkey innards, diced celery, diced carrot, and bay leaf in a pot. Season with salt and pepper and cover with water. Bring to a boil and cook for 1 hour, removing liver after 30 minutes. Remove and discard neck, tail, and bay leaf. Remove remaining innards and put with the liver to cool. Keep broth in the pot.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Combine bread cubes, beef, chopped celery, apple, walnuts, poultry seasoning, oregano, sage, thyme, and rosemary in a large bowl. Season with salt and pepper.
  • Chop cooled innards into small pieces. Add to the bread mixture and mix until everything is evenly distributed, adding in broth mixture (including cooked celery and carrots) and oil to moisten the dressing to desired texture. Stuffing is ready to bake in the oven or stuff in the bird.

NANA'S STUFFING

Categories     Recipes

Number Of Ingredients 7

4 units white bread
1 units onion
1 stalks celery
1 cans oysters
1 units broth
1 units sage
1 units salt and pepper

Steps:

  • Tear loaves of bread into chunks in a large roasting pan, chop onions thin, cut celery into thin slices, drain oysters and just tear apart by hand.
  • Mix together then add turkey juice or chicken broth and sage, salt, and pepper to taste. Use 3 to 4 cups of juice; if stuffing seems dry you can add as much juice as needed while cooking. Better to have overly moist stuffing than too dry, most important when it comes to leftovers.
  • Bake covered for 2 hours at 350.

NANA'S BEST TURKEY DRESSING

Nana's Best Turkey Dressing image

This recipe came from my mother. She is no longer with us. However, recipes I have will stay with me forever. Don't mind sharing some of them.

Provided by Sheri Wasky @slw60

Categories     Turkey

Number Of Ingredients 7

2-3 - stalks of celery, diced small
1 - medium onion, diced
1 1/2 tablespoon(s) rubbed sage
1 tablespoon(s) poultry seasoning
- 4-6 bags of pepperidge farm herb stuffing mix or 2 large bags.
2 can(s) chicken broth, if necessary to use
- salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees. Remove giblets from turkey. Cook in large covered pot with water. Add diced celery, diced onion, rubbed sage, poultry seasoning, salt and pepper. Cook on low-medium heat until tender. Remove giblets from pot and set aside to cool.
  • Save all giblet broth to add to turkey broth. After the turkey has finished baking, carefully drain turkey broth into a large bowl. Add the giblet broth to turkey broth. Add stuffing mix to broth. Using a wooden spoon, mix together until moist until a ball can be formed in your hand and stay together (not stiff with bread).
  • Taste and add more salt if necessary. Add cans of chicken broth, if necessary. Spread into 9 x 13 pans or spoon into muffin tins. Bake until brown and crispy on top.
