I found this while thumbing through a magazine and it sounded good to go alone with the pork chops I had planned on that evening. I was right, it was good! And very simple to put together.

4 medium potatoes, sliced
1 cup cream of mushroom soup
1/2 cup green pepper, diced (optional)
1 cup milk
1/2 cup onion, diced
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Place the thinly sliced potatoes in a greased baking dish.
  • Combine the remaining ingreadients and pour over the potatoes.
  • Bake covered for 35 minutes. Makes about 6 servings.
  • Make sure you slice the potatoes thinly, or you may have a harder time getting the pototes cooked in the 35 minute time frame.
  • I had to cook mine longer the first time, as I had sliced them a bit wide.

1 tablespoon olive oil
4 red bliss potatoes, sliced into coins, about 1/4-inch thick
2 carrots, sliced into 1/4-inch thick coins
1 large yellow onion, chopped
1/2 butternut squash, peeled and sliced into half-moons, about 1/4-inch thick
3 sprigs fresh thyme
5 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour
1 1/2 cups chicken broth
1/2 cup milk
1 cup shredded sharp white Cheddar cheese
1 1/2 cups panko breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F. Heat the olive oil in a large cast iron-skillet over medium high heat. Add the potatoes, carrots, onion and butternut squash and let cook until golden brown, about 5 minutes. Add the thyme springs, butter and some salt and pepper and let the butter melt.
  • Sprinkle the flour over the vegetables, stir to combine and cook for 3 minutes. Slowly stir in the chicken broth and milk and cook until thickened. Stir in the Cheddar.
  • Top the vegetables with the breadcrumbs bake until golden brown and bubbly, 15 to 20 minutes. Let rest for 10 minutes before serving.

8 tablespoons unsalted butter, plus more for greasing
5 pounds russet potatoes, peeled and halved
1 cup milk
1/2 cup sour cream
4 ounces cream cheese, at room temperature
Kosher salt and freshly ground black pepper
1 cup heavy cream
2 cups grated sharp white Cheddar
1/4 cup finely grated fresh horseradish

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9-by-13-inch casserole dish with butter.
  • Place the potatoes in a large pot and cover completely with water. Bring to a simmer and cook until the potatoes are tender and easily pierced with the tip of a sharp knife, about 20 minutes. Drain and mash the potatoes in a large bowl. Add the butter, milk, sour cream, cream cheese and some salt and pepper, then fold to combine. Transfer the potatoes to the prepared casserole dish.
  • In a medium bowl, whisk the heavy cream until medium peaks form. Fold in the cheese and horseradish, and season with salt and pepper. Spread the whipped cream over the potatoes evenly to cover. Bake until the potatoes are heated through and the top is light brown, about 1 hour 30 minutes.
  • Rest the potatoes for 10 minutes, and then serve.

I got this recipe from my ex-wife's mother. People absolutely beg her to make this for family dinners and potlucks. It's so simple, she'll often just give them the recipe. The only thing bad about this recipe is there are never any leftovers. You can use as much or as little cheese as you like, but we like to cover the entire thing with a healthy layer of cheese.

2 cups water
¼ cup butter
2 teaspoons instant minced onion
2 teaspoons dried parsley
1 teaspoon salt
⅛ teaspoon ground thyme
1 cup milk
3 cups instant mashed potato flakes
¾ cup sour cream
shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir water, butter, minced onion, parsley, salt, and thyme together in a saucepan; bring to a boil. Remove from heat and stir in milk. Mix in potato flakes, add sour cream, and beat until fluffy. Pour potato mixture into a casserole dish and sprinkle Cheddar cheese over the top.
  • Bake until cheese is melted and bubbling, 15 to 20 minutes.

Oh so yummy, this sweet potato casserole is more like a dessert than side dish. The sweet potatoes are moist, soft, and just melt in your mouth. On top is a crumble made of coconut, chopped pecans, and brown sugar. It's sweet and crunchy. The flavor of the coconut and pecans pair nicely with the sweet potatoes. We liked the addition of coconut to this topping. It adds a bit of wow factor to this easy dish.

3 cup(s) cold mashed sweet potatoes (yams out of can o.k. too)
1/2 cup(s) sugar
1/4 cup(s) milk
1 teaspoon(s) vanilla
1/3 stick(s) margarine, melted
2 - eggs
TOPPING
1/2 cup(s) coconut
1/2 cup(s) chopped pecans
1/3 stick(s) margarine, melted
1/3 cup(s) brown sugar, packed
1 tablespoon(s) all-purpose flour

Steps:

  • Mix sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs together with an electric mixer. Grease a 9x9" pan (glass o.k. too).
  • Mix topping ingredients (coconut, pecans, melted margarine, brown sugar, and flour) altogether.
  • Pour sweet potatoes into the greased baking dish.
  • Evenly sprinkle topping mixture over sweet potato mixture.
  • Bake at 300 degrees for 45 minutes uncovered.
