This Southern peanut butter fudge with marshmallows was made by my great-grandmother, and there is nothing better.

2 cups white sugar
1 cup evaporated milk
3 tablespoons butter
12 ounces crunchy peanut butter
1 cup miniature marshmallows
1 teaspoon vanilla extract

Steps:

  • Butter an 8-inch square pan.
  • Combine sugar, evaporated milk, and butter in an electric skillet. Set control to 260 degrees F (120 degrees C).
  • Bring to a boil and boil 5 minutes, stirring constantly. Turn off heat and add peanut butter, marshmallows, and vanilla extract. Stir until marshmallows and peanut butter are melted and blended. Pour into the prepared pan.
  • Allow to cool and cut into squares.

1 (12 ounce) container whipped cream cheese frosting

Steps:

  • Line an 8-inch square baking pan with waxed paper.
  • Spoon peanut butter and cream cheese frosting into a microwave-safe bowl; heat in microwave on high for 30 seconds. Stir mixture and heat again in microwave for 30 seconds; stir again until completely blended.
  • Pour mixture into the prepared baking pan. Refrigerate until chilled, about 1 hour.

2 cups packed brown sugar
2 cups white sugar
4 tablespoons butter
1 cup milk
1 ½ cups peanut butter
2 teaspoons vanilla extract
2 cups miniature marshmallows

Steps:

  • Butter one 9x9 inch pan and set aside.
  • In a 3 quart saucepan, combine white sugar, brown sugar, milk, and butter. Cook to soft ball stage, 234 degrees F (112 degrees C). Remove from heat.
  • Stir in peanut butter, vanilla and marshmallows; continue stirring until marshmallows are melted. Pour into prepared pan and cool. Cut into squares and serve.

1 cup peanut butter

  • In a medium saucepan, combine the sugar, evaporated milk and butter. Cook over medium heat stirring frequently until it comes to a boil. Boil for 10 minutes, remove from heat and stir in peanut butter and marshmallow creme. Pour into the prepared pan and chill until set. Cut into squares and serve.

This is my nana's recipe. My mom (who is notorious for her inability to cook anything!) used to attempt this fudge, but we always ended up having to eat it with a spoon. It still tasted great, but over the course of my last few attempts, I realized that the trick is getting the temperature up to 240 degrees before adding the peanut butter and marshmallow creme! I think this is hands-down better than even Michigan fudge! Enjoy...

1/2 cup margarine
1 (5 ounce) can evaporated milk
1 cup peanut butter
1 (7 ounce) jar marshmallow creme

Steps:

  • Bring sugar, margarine and evaporated milk to a rolling boil (240°F).
  • Remove from heat and stir in peanut butter and marshmallow creme.
  • Pour into a 9x13 pan and refrigerate until cooled.
  • Slice, enjoy and don't eat the whole pan in one sitting!

2 cups sugar
1/2 cup whole milk
1-1/3 cups peanut butter
1 jar (7 ounces) marshmallow creme

Steps:

  • Line an 8-in. square pan with foil; grease with butter., In a heavy saucepan, combine sugar and milk; bring to a boil over medium heat, stirring constantly. Boil 3 minutes, stirring constantly. Remove from heat., Stir in peanut butter and marshmallow creme until blended. Immediately spread into prepared pan; cool slightly., Refrigerate until firm. Using foil, lift fudge out of pan. Remove foil; cut into squares. Store between layers of waxed paper in an airtight container.
