MICROWAVE RICE PUDDING
I LOVE rice pudding and this is one of my favorite! This is super easy and creamy. Guaranteed not to scorch or curdle! I always add some cinnamon and/or nutmeg or it's great without! Yummy warm or cold. I use leftover rice. This is one of my kids favorite desserts, will not disappoint

Steps:
- Make sure the rice is cooked ahead of time.
- Whisk first 6 ingredients. And raisins if you want, we prefer without ;).
- Put in microwave and cook 1 - 1 1/2 minutes.
- Remove and whisk.
- Put back in microwave for another 1 - 1 1/2 minutes.
- Remove and whisk.
- Continue above steps until desired thickness (don't get too thick, you want it a little less thick than desired since it will continue to thicken as it sits).
- Add butter and vanilla once it's at desired thickness. You can omit butter to save on calories!
- Add anything else you want (cinnamon, nutmeg, fresh berries if it's cold, etc).
- Enjoy!
CREAMY MICROWAVE RICE PUDDING
From the "Reader's Digest Microwave Cookbook". We only had a microwave when we got married, so this cookbook was used daily! I am now converted to making rice puddings in the microwave, or any other dish that sticks and burns easliy. All that aside, this is the tastiest rice pudding recipe.

Steps:
- Mix together milk, rice and vanilla in a 2 L (4cup) dish. Cook on HIGH(100%) for 5 minutes or until boiling. Stir.
- Reduce heat to MED-HI(70%) and cook for 20-30 minutes, or until rice is tender. Stir often.
- Beat together egg yolks, sugar, cream, cinnamon and allspice. Stir a small amount of the rice mixture into egg mixture. Then pour the egg mixture back into the rice, stirring rapidly so that it doesn't get lumpy. Stir in raisins.
- Cook at Medium (50%) for 3-4 minutes or until it starts to thicken. Stir every minute.
- Allow pudding to stand covered for about 5 minutes. Serve warm or chilled.
- NOTE: if using the lemon peel and bay leaf: add them at the beginning instead of the vanilla so they can flavour the milk. Remember to remove them from the pudding before adding the egg mixture, because they aren't meant to be eatten. Omit the cinnamon and allspice.

ROCKIN' RICE PUDDING

Steps:
- Combine cooked rice, milk, sugar and butter in a medium saucepan. Add raisins and vanilla. Cook for 25 minutes until most of the liquid is absorbed. Mix in lemon zest and 1/2 teaspoon of cinnamon. Spoon pudding into a serving dish and dust with remaining cinnamon. May serve chilled or at room temperature.
APRICOT & ORANGE RICE PUDDING

- Put the rice, milk and nutmeg into a large microwaveable bowl. Cover with cling film, pierce it, then cook on High for 5 mins. Stir and leave to stand for 1 min, then return to the microwave for a further 5-6 mins or until the rice is cooked and all the milk absorbed. Remove from the microwave and stand for a further 2 mins.
- Put the honey, apricots and orange juice into another microwaveable bowl and cook on High for 1 min until the apricots have plumped up. Stir the syrupy apricots, fromage frais and a pinch of orange zest into the rice. Serve straight away in bowls, topped with a sprinkling of almonds, a little more orange zest and a drizzle of honey to taste.

This pudding turns out in a lovely custard texture. A great balm for those seeking a return to some of the old-fashioned foods of their youth! We like it best because it is oven-baked and not made on the stove top.

- Preheat oven to 300 degrees F (150 degrees C). Grease a 2 quart baking dish.
- Beat together the eggs and milk. Stir in white sugar, uncooked rice, butter, vanilla extract, raisins, and nutmeg. Pour into prepared pan.

EASY CHOCOLATE RICE PUDDING
This recipe is the closest I could come to the rice pudding my husband remembers his mother made when he was a boy. I experimented for a long time trying to match that unwritten recipe from the past. Now this is one of my husband's favorite desserts!
