STUFFED POBLANO CHILES ("CHILES RELLENOS")



Stuffed Poblano Chiles (

5 red plum tomatoes, cored and coarsely chopped
1 garlic clove, minced
1/3 cup chopped white onion
1 tablespoon olive oil
Salt and freshly ground black pepper
1 1/2 cups Monterrey Jack cheese
1 tablespoon dried oregano
6 poblano chiles, charred, seeded, and deveined *see Cook's Note
3 egg whites, at room temperature
1 egg yolk, at room temperature
All-purpose flour, for dredging
Vegetable oil, for frying

Steps:

  • Sauce: Put the tomatoes, garlic and onion in a blender. Blend until smooth. In a medium saute pan, heat the oil over medium heat. Add the sauce and simmer for 5 minutes. Season with salt and pepper, to taste.
  • Chile rellenos: Mix the cheese and oregano in a small bowl. Cut a slit through 1 side of the charred chiles and fill each chile with 1/4 cup of the cheese mixture. Close with toothpicks to hold the filling in place. In a medium bowl, using an electric hand mixer, beat the egg whites on high speed until soft peaks form. Add the egg yolk and continue to beat for about 1 minute.
  • In a large heavy-bottomed saucepan, pour in enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you don't have a thermometer a cube of bread will brown in about 3 minutes.) Dredge the filled chiles in flour until fully covered. Shake off any excess flour, then dip the chiles into the egg mixture, until well coated. Fry until golden brown and drain on paper towels.
  • Arrange the chiles on a serving platter, spoon the sauce on top and serve.

Nayarit is a state on the Pacific Coast of Mexico where seafood is abundant and the flavors are ample. These stuffed chilies are a popular local appetizer. The sweet mango and the spiciness of the poblano chiles pair really well in this recipe. This dish is served cold. If you like some heat these are wonderful, if you like them hotter add jalapenos.... I love the heat!!!

6 (1/4 lb) poblano chiles, roasted and peeled
vinegar
1 tablespoon butter
1 tablespoon olive oil
1/4 small onion, finely chopped
1/2 lb cooked crabmeat or 1 (6 ounce) can crabmeat, flaked
2 tablespoons chopped chives or 2 tablespoons green onions
1/2 lb mango, peeled and finely chopped
salt
pepper
2 mangoes, peeled and cut into large chunks
1 1/2 teaspoons cider vinegar
1 1/2 teaspoons chicken stock
1/2 cup canned mango nectar (NOT juice)
1 small garlic clove, roasted and chopped
salt
fresh ground black pepper
3 tablespoons olive oil
3/4 teaspoon olive oil
1/8 teaspoon sugar (optional)
6 sprigs thyme

Steps:

  • STUFFED CHILES:.
  • Make slit in 1 side of each roasted chili.
  • Carefully devein & de-seed without tearing chiles. Soak chiles in a bowl of water with few drops vinegar and set aside.
  • Heat butter and 1 1/2 teaspoons olive oil in saucepan. Add onion and cook until tender. Add crab meat and a tablespoon of the chives and cook 1 minute.
  • Heat remaining 1 1/2 teaspoons olive oil in skillet. Add mango and saute until softened, about 2 - 3 minutes. Add crab mixture and stir to combine. Season with salt and pepper. Let Cool.
  • Drain chiles and stuff each one with about 1/4 cup of the filling.
  • VINAIGRETTE:.
  • Puree mangos in a food processor or blender. Place in saucepan and cook over low heat, stirring, until thickened, 5 - 7 minutes. Remove from heat and let cool.
  • Blend puree, vinegar, stock, mango nectar, garlic and salt and pepper to taste in food processor or blender until smooth. Gradually add olive oil, blending until emulsified. Check seasoning and add sugar if needed. Chill.
  • Place large spoonful of vinaigrette on 6 chilled salad plates. Top with Stuffed Chile. Bathe chiles with additional vinaigrette. Sprinkle remaining 1 tablespoon chopped chives over all and garnish with thyme sprig. Dust with freshly ground pepper.

12 tomatillos, husked and rinsed
1 small onion, quartered and peeled
6 medium cloves garlic, peeled
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 teaspoon chipotle hot sauce
3 tablespoons chopped fresh cilantro
3 tablespoons fresh lime juice
1/2 teaspoon sea salt
6 large poblanos
4 ounces smooth, mild goat cheese
3/4 cup shredded Monterey Jack cheese
12 ounces cooked crabmeat, picked through for shells and cartilage

Steps:

  • Preheat broiler.
  • For the sauce: Place tomatillos, onions, and garlic in a large heavy skillet. Heat over medium-high heat, turning often, until charred all over but still firm, about 5 minutes. Transfer mixture to a food processor and add cumin, cayenne, hot sauce, cilantro, lime juice and salt. Process to a coarse puree. Return mixture to skillet and keep warm while preparing the stuffed chilies.
  • For the chilies: Place poblanos on a baking sheet and broil, turning a few times until all sides are charred. Place in a paper bag and seal. Let steam about 10 minutes to loosen the skin.
  • Meanwhile, in a medium bowl, combine the goat cheese, Monterey Jack and crabmeat. Set aside.
  • Peel poblanos, then cut a slit lengthwise down 1 side only, and carefully remove seeds. Stuff each with cheese mixture and place them cut side up on a baking sheet, gently pressing to seal. Broil until cheese is melted and poblanos are heated through, about 6 to 8 minutes. Transfer to serving plates and spoon sauce around the stuffed chilies.

4 scallions, chopped
1 teaspoon chopped garlic
1 hot green chili, finely chopped, seeds optional, or use dried red pepper flakes to taste
1 tablespoon curry powder
3/4 to 1 pound crabmeat, finely shredded (This does not have to be lump or fancy crab. Show crab, flaked crabmeat or even canned crab may be used.)
2 tablespoons finely chopped fresh coriander leaves, optional
2 tablespoons finely chopped parsley
Salt and freshly ground pepper
6 to 8 tablespoons crab liquid or bottled clam juice
2 cups fresh bread crumbs
Lime wedges for garnish

Steps:

  • Preheat the oven to 400 degrees.
  • Melt 8 tablespoons butter in a wide, shallow saucepan or skillet. When melted, add the scallions, garlic and chili. Add the curry powder and blend. Add the crabmeat. Add the coriander leaves, if desired, and parsley. Add salt and pepper to taste. Add enough crab liquid to moisten properly. If you want a richer and better dish, add 2 to 4 more tablespoons butter. Add bread crumbs and blend well.
  • Remove from the heat and use the mixture to fill 4 to 8 clam shells.
  • Bake for 10 to 15 minutes, until nicely brown. Serve with lime wedges, slices or halves.

8 manicotti shells
1 ½ cups ricotta cheese
1 (6 ounce) can lump crabmeat
2 tablespoons minced fresh parsley
1 tablespoon grated onion
1 (16 ounce) jar Alfredo pasta sauce
½ cup chicken broth
1 teaspoon white sugar
½ teaspoon dried basil
½ teaspoon dried marjoram
⅛ teaspoon garlic powder
⅛ teaspoon dried thyme

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add manicotti shells and cook for 8 to 10 minutes, until tender but not mushy. Drain.
  • In a medium bowl, stir together the ricotta cheese, crab, parsley and onion. Spoon into the manicotti shells. Place in a buttered 11x7 inch baking dish.
  • In a saucepan, stir together the Alfredo sauce and chicken broth. Season with sugar, basil, marjoram, garlic powder and thyme. Heat until warm over medium heat. Pour over the shells in the baking dish.
  • Bake uncovered for 30 minutes in the preheated oven. Let stand for about 5 minutes before serving.

1 (4 pound) whole chicken, cut into pieces
1 onion, halved
2 carrots, peeled
1 stalk celery
1 clove garlic, peeled
12 fresh poblano chile peppers - cleaned, roasted and peeled
1 white onion, chopped
3 cloves garlic, chopped
4 ounces raisins
4 ounces brown sugar
4 ounces walnuts
¼ teaspoon ground black pepper
4 bay leaves
1 tablespoon distilled white vinegar
½ cup chopped fresh cilantro
3 tablespoons tomato paste
4 (8 ounce) packages cream cheese
8 ounces soft goat cheese
1 cup sour cream
8 ounces walnuts
½ teaspoon ground nutmeg
¾ teaspoon white sugar
½ bunch cilantro, finely chopped

Steps:

  • Place chicken in a large pot with the halved onion, two carrots, one stalk celery, and 1 clove garlic, and cover with water. Boil until done. Slice meat into bite-sized pieces.
  • In a large skillet over medium heat, saute onion and garlic until soft, then add chicken, raisins, brown sugar, 4 ounces walnuts, pepper and bay leaves. Mix together and saute for 3 to 5 minutes, then stir in vinegar, cilantro and tomato paste; reduce heat to low and let all simmer for 15 minutes. Remove from heat and let cool.
  • Preheat oven to 250 degrees F (120 degrees C). Cut a slit in each chile pepper along one side, lengthwise, so that they can be reconstructed after they are stuffed. Stuff each chile pepper with cooled chicken mixture and place in preheated oven to keep warm.
  • To Make Sauce: In a large saucepan over medium heat, combine the cream cheese, goat cheese, sour cream, 8 ounces walnuts, nutmeg and granulated sugar. Heat, stirring, for 5 to 7 minutes. When blended together, pour sauce over warm chile peppers and garnish with fresh chopped cilantro.
