MAPLE OLIVE OIL GRANOLA

Number Of Ingredients 6

5 cups rolled oats
1 cup pure maple syrup
1 cup olive oil
1 tablespoon kosher salt
1 cup chopped walnuts
1 cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with a piece of parchment paper and set aside.
  • In a large bowl, mix together the oats, syrup, olive oil, salt and walnuts. Toss well to coat evenly. Spread the mixture on the prepared baking sheet and bake for 30 minutes. Stirring half way through. Remove the tray from the oven and stir in the almonds. Bake for an additional 30 minutes, once again stirring half way through to brown evenly. Cool completely on the tray.
  • Store in an airtight container for up to 2 weeks.

1 cup hulled raw pumpkin seeds
1 cup hulled raw sunflower seeds
1 cup unsweetened coconut chips
1 1/4 cups raw pecans, left whole or coarsely chopped
3/4 cup pure maple syrup
1/2 cup extra-virgin olive oil
1/2 cup packed light brown sugar
1 pinch coarse salt, to taste
