Stale Bread Crumbs
Chopped onion
Sugar
Butter
Baking powder
Flour
Savoury or Summer Savoury
Water or Broth

Steps:

  • - Mix all ingredients together with enough warm water to form a ball that holds everything together. Put in a pudding bag or pudding tin with lid and boil for 30 minutes with the jigg's dinner or on its own. If you are going to boil/steam your pudding on its own fill the boiler up 1/4 of the way with water, then put a foil bowl or rack in the bottom of boiler to place your pudding bag or pudding tin on. If you are using the liquor/ broth from the jiggs dinner for gravy it must be taken out before the bread pudding goes in, as it will give a sweet taste to the gravy. Put it in the boiler the same time as your potatoes as they cook about the same. If you use the pudding bag remove from the boiler and from the bag so it don't become to soggy. Cut in slices and serve with meal. This Newfoundland Bread Pudding is like stuffing but the shape of a pudding, smells and tastes amazing and can be served with Jiggs Dinner, with or without gravy.

4 cups heavy cream
6 large eggs
2 cup packed dark brown sugar
1 1/2 cups raisins
2 sticks (16 tablespoons) unsalted butter, melted
1 tablespoon ground cinnamon
2 teaspoons ground ginger
2 cups plus 2 tablespoons granulated sugar
2 loaves French bread, cut into 1-inch cubes (about 13 cups)
Nonstick cooking spray
2 cups confectioners' sugar
1/3 cup bourbon
3 tablespoons unsalted butter
1 tablespoon whole milk
1/2 teaspoon ground cinnamon

Steps:

  • For the bread pudding: In a large bowl, whisk together the cream and eggs. Add the brown sugar, raisins, butter, cinnamon, ginger and 1 cup granulated sugar. Mix well. Gently stir the bread cubes into the egg mixture. Refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F and coat a 9-by-13-inch baking dish with cooking spray.
  • Pour the bread mixture into the prepared baking dish. If desired, sprinkle the top with the remaining 2 tablespoons of sugar. Bake until a knife inserted into the middle comes out clean, 45 to 50 minutes.
  • Meanwhile, for the bourbon sauce: Combine the confectioners' sugar, bourbon, butter, milk and cinnamon in a medium saucepan, bring to a simmer over low heat, whisking constantly until thickened and no longer watery, 2 to 3 minutes. Serve with the bread pudding warm, at room temperature or chilled.

1 loaf eggy bread such as challah or brioche
Softened butter, for greasing the baking dish
2 cups half-and-half
4 large eggs
Zest and juice of 2 lemons
1 cup sugar
Bourbon Whipped Cream, recipe follows, for serving
1 cup heavy cream, very cold
2 tablespoons sugar
2 tablespoons bourbon

Steps:

  • Cut the bread into 1-inch cubes. Spread out on a baking sheet to dry out for at least 1 hour or overnight.
  • Grease a 9-inch-by-13-inch baking dish with butter.
  • Whisk together the half-and-half, eggs and lemon zest and juice. Add the sugar and stir until it dissolves. Put the bread cubes in the prepared baking dish. Pour the liquid over the bread. Let the bread soak up the liquid while you preheat the oven to 325 degrees F.
  • Bake until the crust is golden brown, 50 to 55 minutes. Let rest for at least 15 minutes.
  • Serve warm with Bourbon Whipped Cream.
  • Combine the heavy cream, sugar and bourbon in a large mixing bowl with an electric mixer and begin mixing immediately on high speed until stiff, about 4 minutes.

4 cups cubed day-old wheat bread
1/3 cup raisins
LEMON SAUCE:
1-1/2 cups sugar
1/3 cup cornstarch
1/4 teaspoon salt
2-1/4 cups cold water
3 egg yolks, beaten
1/3 cup lemon juice
2 tablespoons butter

Steps:

  • In a large bowl, combine the first eight ingredients. Stir in bread cubes and raisins. Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 45-55 minutes or until a knife inserted in the center comes out clean., For sauce, combine the sugar, cornstarch, salt and water in a large saucepan until smooth. Bring to a boil over medium heat, stirring constantly. Remove from the heat. , Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. , Remove from the heat; gently stir in lemon juice and butter. Serve with bread pudding. Refrigerate leftovers.

This is my mother's bread pudding recipe. Every year, I make it about 10 times between Thanksgiving and Christmas-everybody loves it! It is delicious warm, but also quite good cold with milk poured over it.

10 slices white bread, crusts removed
½ cup unsalted butter, softened
½ cup seedless raisins
2 teaspoons ground cinnamon
4 cups milk
⅔ cup white sugar
4 large eggs, well beaten
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 2-quart casserole or baking dish.
  • Spread bread slices with butter, then use a sharp knife to cut each slice into 4 squares.
  • Arrange 1/2 of the bread squares in the bottom of the prepared casserole. Sprinkle with raisins and 1/2 of the cinnamon. Cover with remaining bread and cinnamon.
  • Heat milk in a medium saucepan over medium heat just until a film forms over the top, 3 to 4 minutes. Remove from the heat and add sugar; stir until dissolved.

1 3/4 cups sugar
2 cups milk
2 cups water
6 eggs, beaten
1/2 teaspoon salt
1/2 tablespoon vanilla extract
1/3 cup shredded unsweetened coconut, make it a large 1/3 cup, but not
1/4 cup margarine, melted
3 -4 cups French bread, cubed
2 eggs
1/8 cup lemon juice or 1/8 cup Amaretto
1 cup confectioners' sugar
1/2 cup margarine, melted

Steps:

  • Combine the sugar, milk and water in a bowl and mix well. Add the eggs, salt, vanilla, coconut and 1/4 cup melted margarine and mix well. Stir in the bread cubes. Let stand until the liquid is absorbed. Spoon into a 9 x 12 inch baking dish.
  • Bake at 350 degrees for 35 to 40 minutes, or until the pudding rises like a souffle and springs back when touched.
  • For the sauce: Combine the eggs and flavoring (whiskey or lemon juice or amaretto, not all!) in a food processor. Process until well blended. Add the confectioners' sugar and 1/2 cup melted margarine and process until smooth.

NOT to be confused with Bread and Butter Pudding which is a dessert, Bread Pudding is an old English dish which turns out more like a bar cake. This recipe is a more modern version of the one my grandmother used to make. Although Bread Pudding can be served warm with custard as a dessert, we rarely ate it this way. For us, it was more of a snack food. It tastes just as good at room temperature as it does hot. Grandma often tucked a slice or two into our school lunchboxes. When my brother joined the Navy he craved Bread Pudding and Mum had to pay a fortune to post one to him - clear across the country! This recipe was passed on to Mum by my older brother's friend, the late Nell McDonald. Nell was a great cook and I'm delighted to acknowledge her as the source of this recipe.

8 slices day-old white bread, crusts removed
315 ml milk (1/2 pint)
500 g mixed dried fruit
60 g candied peel
1 cooking apple, peeled and grated
90 g brown sugar
90 g self-raising flour
2 tablespoons marmalade (rounded tablespoons)
2 eggs
1/2 lemon, juice of
1 teaspoon cinnamon (level teaspoon)
120 g butter or 120 g margarine, melted
1/4 cup white sugar

Steps:

  • Preheat oven to 150C (300F).
  • Tear bread into pieces and place in a large mixing bowl.
  • Pour over milk, give it a good stir, then allow the bread to soak while you assemble the rest of the ingredients.
  • To another large mixing bowl add mixed fruit, candied peel, grated apple, brown sugar, self-raising flour, marmalade, eggs, lemon juice and cinnamon.
  • Stir to combine.
  • When the bread is nice and soft and has soaked up the milk, add the contents of the fruit mixture to the bread mixture.
  • Using a wooden spoon, beat until thoroughly mixed and bread pieces are no longer visible in the mixture.
  • Stir HALF the melted butter into the mixture.
  • Spoon mixture into a well greased, rectangular baking dish measuring approximately 18cm x 28cm (7" x 11") with 5cm (2") high sides.
  • Smooth top, then, using the back of a fork, scrape the tines along the length of the pudding to 'rough up' the surface.
  • Pour the other half of the melted butter evenly over the top of the pudding.
  • Place pudding on the centre shelf of the preheated 150C (300F) oven.
  • Bake for 1 1/2 hours at 150C (300F), then increase temperature to 180F (350F) or slightly less for a fan forced oven, and bake for another 15-30 minutes, checking after 15 minutes to ensure it's not burning around the edges.
  • Remove when the pudding is nicely browned and a skewer, inserted into the middle, comes out clean.
  • While the pudding is still hot, sprinkle evenly with sugar.
  • Cool and cut into bars.
  • Keeps well.
