ANNE SEVERSON'S GINGERSNAPS

Anne Severson's Gingersnaps image

Gingersnaps have long been the workhorse of our family Christmas cookie plate. Oh, sure, there were dalliances with other cookies, trends that came and went. We endured the rum-ball phase, and experiments with questionable fudge recipes. But these gingersnaps, not the sexiest cookie and perhaps not the most delicious, had long been the most reliable cookie, the most universally loved.

Provided by Anne Severson

Categories     easy, dessert

Time 45m

Yield About two dozen cookies.

Number Of Ingredients 10

3/4 cup butter
1 cup sugar, plus more for rolling
1 egg
2 teaspoons baking soda
1 scant teaspoon kosher salt
2 teaspoons ground ginger
1 teaspoon cinnamon
2 teaspoons ground cloves
4 tablespoons molasses
2 cups flour

Steps:

  • In a stand mixer or food processor, cream together the butter and 1 cup sugar, then add the egg, soda, salt, spices and molasses and mix well.
  • Add flour and mix well. Use a bit more flour if the dough seems too sticky - it should be stiff. Shape into a ball and refrigerate for at least 1 .5 hours or overnight.
  • Heat oven to 350 degrees. Roll dough into small balls (smaller than a golf ball but bigger than a marble). Rolls balls in a bowl of sugar; set each on an ungreased cookie sheet about 2 inches apart. Bake 11 to 13 minutes, or until puffy. Cool on a wire rack.

NETTIE'S MOLASSES GINGERSNAPS

Nettie's Molasses Gingersnaps image

A colleague gave me this recipe and DH loves them. Besides tasting great, you use only one mixing bowl! :)

Provided by WiGal

Categories     Dessert

Time 1h

Yield 30 serving(s)

Number Of Ingredients 12

3/4 cup margarine
1 cup brown sugar
1/4 cup molasses
1 egg
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon ginger
1/2 cup granulated sugar
1/2 cup water

Steps:

  • Preheat oven to 375 degrees.
  • Put margarine, brown sugar, molasses, egg, flour, baking soda, salt, cinnamon, clove, and ginger into mixing bowl and mix.
  • Roll into walnut size balls.
  • Put about 1/2 cup of regular sugar in cereal size bowl, and 1/2 cup water in ramekin size dish.
  • Roll dough ball in sugar.
  • Place wide apart on slightly greased cookie sheet; dip a glass into water and flatten the cookie.
  • Bake at 375 degrees for 8 minutes, or until done to your family's preferences.
  • NOTE: If it is a dark cookie sheet it will take less time than on a brand new shiny sheet; and if they sit on the hot sheet after removing from oven they will harden even more. Some like these cookies hard but I do not.

SNAPPY GINGERSNAPS

Snappy Gingersnaps image

Another wonderful recipe from Emily Luchetti. I GUARANTEE these are the best gingersnaps you will ever taste. These cookies are a staple around here at Christmas. My Pastor begs me for a batch every year. I like to make the dough and freeze in logs, the slice and bake them when I need them.

Provided by P48422

Categories     Dessert

Time 28m

Yield 3 1/2 dozen

Number Of Ingredients 9

1/2 lb unsalted butter, room temp
1 1/2 cups granulated sugar
1 large egg
1/4 cup molasses
4 teaspoons ground ginger
1 1/2 tablespoons grated fresh ginger
2 teaspoons baking soda

Steps:

  • Preheat oven to 350 degrees.
  • On your mixer using the paddle attachment, beat the butter and sugar until light and creamy.
  • Add the egg and the molasses and beat until incorporated.
  • Scrape down the bowl, then add the remaining ingredients and mix on low speed until everything is combined.
  • Do not overmix.
  • Using about 1 tablespoon of dough per cookie, roll into balls and place them 2 inches apart on parchment lined pans.
  • Bake until flat and evenly browned, about 13 minutes.
  • Cool on the pan, the remove to a rack to finish cooling.
  • These cookies are best the day they are baked, but will keep for several days.
  • Note: You can make the dough ahead, roll into logs, freeze, then slice and bake when you need them.
  • That's how I make them.
  • Note #2: You can also dip these in chocolate, just half-way up the cookie, to dress them up.

  • In a large bowl, mix the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt. Set aside. In the bowl of a stand or handheld mixer, cream the softened butter for about 1 minute on medium speed. Add the brown sugar and beat until light and fluffy. Scrape down the sides as needed. Add the molasses, egg, and vanilla. Beat well, scraping down the sides as needed again.
  • Slowly add the dry ingredients to the wet on low speed. Do not overmix. Cover mixed dough with foil and chill for 2 hours or up to 3-4 days. I chilled mine overnight.
  • Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper or a silicone mat. Shape dough into 1-inch balls and roll in granulated sugar. Place balls 2 inches apart. Bake for about 10-12 minutes or until the edges are just turning brown – cookies will be puffy and still appear soft in the middle. Remove from the oven and, if using any variety of flavor chip, immediately press 5-7 chips into the center of each cookie.
  • Allow to cool on the baking sheet for two minutes and transfer to a wire rack to cool completely. Store in an airtight container at room temperature for up to 1 week.
