NEW MEXICAN RED PORK CHILI CARNE ADOVADA
Carne adovada or New Mexican pork red pork chili is absolutely loaded with pork and chili flavour.

Steps:
- Pre-heat your oven to 350F.
- Slice the onion into 3/4 inch slices.
- Peel the garlic.
- Place the onion and garlic in a dry comal or cast iron frying pan and cook until the garlic and onion brown. Watch the garlic closely.
- Coarsely chop the onion and combine it with the chili powder, cumin, mexican oregano if using and 2 1/2 cups chicken stock in a blender. Puree completely. Set aside.
- In a high sided pot large enough hold all the pork melt two Tbsp of lard or vegetable oil and brown the meat in batches. Brown it thoroughly. Take the time. It's worth it.
- Remove meat from the pan and add a third Tbsp of lard or oil. Transfer the chili mixture to the pan and fry, stirring constantly for 5-7 minutes. The mix will bump so don't wear nice clothes when you make this.
- When the oil starts to separate (or after 7 minutes) return the pork to the pot and add enough chicken stock to cover the pork - about another 1 1/2 cups. Stir thoroughly.
- Add a tsp of salt and bring to a simmer on the stove.
- Cover and place the preheated oven.
- Start testing for tenderness after the first hour. It will likely take around 90 minutes but results vary. You are done when the pork is tender.
- Adjust salt.
- Serve with pinto beans, tortillas and garnishes of your choice.

INSTANT POT PULLED PORK CHILE VERDE
This Instant Pot pulled pork chile verde is made by pressure cooking pieces of pork shoulder in a delicious homemade chile salsa verde made with roasted green chiles, tomatillos, onions, garlic and cilantro. Serve alone, as tacos or top french fries to make carnitas fries.

- Peel the tomatillos and clean with water to remove the stickiness. Pat dry.
- Place the tomatillos, chile peppers and onion on the baking sheet and coat with olive oil.
- Place under the broiler for 5 minutes. Flip vegetables over and broil for an additional 3-5 minutes until charred, but not burnt.
- Remove from the oven and cover chile peppers with aluminum foil. Let it sit for 10 minutes.
- In the meantime, trim any excess fat on the exterior of the pork roast.
- Cut pork into smaller pieces about 4-5 inches long and then place it in the Instant Pot.
- Uncover and remove skin from the chile peppers. Remove the seeds if you don't want your dish too spicy.
- Add the broiled vegetables into a large blender with cilantro, garlic and salt. Blend until smooth.
- Reserve about 1-cup of chile verde and pour remainder over pork. Coat all the pork pieces with sauce.
- Cover pressure cooker and secure the lid then set for 75 minutes high pressure. Make sure the vent is in sealing position.
- Let it natural pressure release for 20-30 minutes then release any remaining pressure. Open and remove the lid. Pork should be fall apart fork tender.
- Remove the pork from the pressure cooker and place it on a baking sheet. Using two forks, begin shredding the pork into bite size pieces while removing any large chunks of fat.
- For crispy pulled pork, add a single layer of shredded pork onto a baking sheet. Drizzle with some of the liquid remaining in the Instant Pot.
- Place the baking sheet under the broiler about 4-6 inches away and cook for 5 minutes.
- Using long handled tongs mix and flip the crispy pieces over and cook under the broiler for another 2-3 minutes until crispy and not burnt.
- Serve as tacos or top french fries. Serve with reserved salsa verde, shredded cheese, pico de gallo, guacamole, sour cream, radishes, and/or wedges of lime.

- 1. Pastry Directions: Preheat oven to 400 degrees. Using a fork, combine the butter and cream cheese. Sift flour over this mixture. Add baking powder, vinegar and water or milk and combine with fork. With generously floured hands, work the dough until you have a smooth resilient ball. 3 to 4 minutes, but keep working the flour into the other ingredients until the dough suddenly holds together. Flour both the table and your rolling pin. Roll out dough and cut out circles. Oil cookie sheets and place circles or sheets, add 1 heaping teaspoon of filling and carefully fold over and crimp with fork and moistening the edge with egg glaze. Bake in preheated oven for 10 to 15 minutes or until golden brown. Filling Directions: Boil pork. When thoroughly cooked, put in food processor until meat is shredded. Add Raisins, applesauce, sugar, nuts and spices. Mix well and proceed with direction in Empanada Pastry recipe.
NEW MEXICAN RUBBED PORK TENDERLOIN WITH SWEET POTATO TAMALE AND PECAN BUTTER
Steps:
- Preheat oven to 400 degrees F. Heat olive oil in a medium saute pan, over high heat. Season pork with salt on both sides. Dredge pork in the spice rub and tap off any excess. Sear the pork on both sides until golden brown. Cook in the oven to medium doneness, about 8 to 10 minutes.
- Let pork rest for 5 minutes before slicing into 12 slices. Plate 3 slices per plate. Drizzle with the Bourbon-Ancho Sauce. Place a Sweet Potato Tamale, topped with Pecan Butter next to the slices of pork.
- Combine all ingredients in a small bowl.
- Heat olive oil in a medium saucepan over medium-high heat. Add the onions and cook until soft. Add the bourbon and cook until completely reduced. Add the remaining ingredients and cook until reduced by half. Strain through a fine mesh strainer, return mixture to the pan, and cook to sauce consistency, add the remaining 2 tablespoons of bourbon and cook for 2 minutes. Season with salt.
- About 2 hours before you plan to form the tamales, clean the husks under running water. Soak them in warm water for 2 hours, or until softened.
- Puree the corn, onion, roasted garlic, and stock in a food processor. Transfer the mixture to a mixing bowl and cut in the butter and shortening. Using your fingers, mix in the cornmeal, honey, and salt and pepper until there are no visible lumps of fat. Fold in the sweet potato puree, cinnamon, cloves, allspice, and maple syrup. The mixture will be a lot looser than you think it should be, but when the tamales are steamed it will dry out.
- Remove the cornhusks from the water and set aside the best 20 husks. Drain and pat dry. Tear the remaining husks into 1-inch wide strips to be used for tying. Lay 2 husks flat on a work surface, with the tapered ends facing out and the broad bases overlapping by about 3 inches. Place about 1/3 cup of masa mixture in the center. Bring the long sides up over the masa, slightly overlapping, and pat down to close. (If the masa drips out a little at the seam, that is no problem.) Tie each end of the bundle with a strip of cornhusk, pushing the filling toward the middle as you tie. Trim the ends to about 1/2-inch beyond the tie.
- Arrange the tamales in a single layer on a steaming rack, cover tightly with foil, and steam over boiling water for 45 minutes. To Serve: slice a slit on top of each tamale and push both ends of the tamale toward the middle to expose the masa. Top each with 1 tablespoon of Pecan Butter.
- Combine all ingredients in a bowl. Scrape into a ramekin and refrigerate until solid, about 2 hours.

- Lightly oil inside of slow cooker with vegetable oil or cooking spray.
- Combine tomato paste, chili powder, oil, and garlic in a bowl and microwave, occasionally stirring until fragrant, about 1 minute. Transfer to prepared slow cooker.
- Whisk in broth, coffee, cornstarch, and sugar. Add bell peppers.
- Generously season ribs with salt and pepper and nestle into the slow cooker. Cover and cook until ribs are tender and the meat falls apart with little resistance, 5 to 6 hours on Low or 3 to 4 hours on High. Turn the ribs over halfway through cooking to ensure even braising.
- Using a large spoon, skim excess fat from the surface of chili and discard.
- Remove pork and transfer to a plate.
- Break ribs into 1-inch pieces, removing any excess fat.
- Adjust chili consistency with extra hot broth as needed.
- Add back meat, beans, and corn to the slow cooker. Cook on high for 30 minutes. Stir in cilantro, lime zest, and juice. Season with salt and pepper to taste. Serve with garnishes if desired.

NEW MEXICO PULLED PORK
This is a blend of several recipes that sort of took on a life of it's own. It's easy and delicious. It's great for all afternoon casual get-togethers as guests can wander in to make their own sandwiches as they choose. It does require overnight to marinate and 8-9 hours cooking.

- Cut the roast into 1 inch thick steaks, trim fat.
- Place Salt, Pepper corns, Cummin Seeds, and Oregano in a spice mill and grind.
- Mix all of the spices in a large bowl.
- Rub each steak well with the rub.
- Place the steaks in a large plastic bag with any rub that is left over.
- Refridgerate overnight.
- Rub in the left over rub.
- Place steaks in crock pot set on high for 1 hour.
- Reduce heat to low, cook for another 7-8 hours.
- Remove meat to a cooling rack,'til cool to handle.
- Shred meat with forks.
- Return to pot to warm.
- Dip out with a slotted spoon, let it drain a bit.
- Serve on Hoagie or Keiser rolls with your favorite condiments.
- I bag and freeze individual size servings.
- Nuke 2-3 minutes to thaw and warm and you have a delicious sandwich.
- ***NOTE*** There is no need to add any liquid.
- The roast's own juices will be enough.
HATCH GREEN CHILE PORK STEW

- Season pork cubes with salt and pepper and brown in a large dutch oven with the olive oil over medium-high heat until brown in batches.
- Remove the pork cubes and allow them to drain on paper towels.
- Add chopped onions in the dutch oven and cook until soft and translucent about 5-6 minutes.
- Add green chiles, garlic, cumin, oregano and cook for 1minute.
- Add vinegar and stir to deglaze the pan, pour in the enchilada sauce and chicken broth, heat.

- Trim and discard fat from pork roast. Place pork in a slow cooker and add chicken broth until pork is 75% covered with liquid. Add quartered limes, onion, garlic, paprika, and cayenne pepper.
