Chantal's New York Cheesecake Recipe - (4.3/5) image

15 graham crackers, crushed
2 tablespoons butter, melted
4 packages (8-ounce) cream cheese
1 1/2 cups white sugar
3/4 cup milk
4 eggs
1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour

Steps:

  • Preheat oven to 350°F (175°C). Grease a 9 inch springform pan. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

3/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon dill weed
2 tablespoons butter, melted
CHEESECAKE:
2 tablespoons butter
1 medium sweet red pepper, finely chopped
1 small onion, finely chopped
1 medium carrot, finely chopped
1/2 teaspoon dill weed
1/2 teaspoon Creole seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
3 packages (8 ounces each) cream cheese, softened
1/2 cup heavy whipping cream
1 tablespoon sherry or additional cream
4 large eggs, lightly beaten
1 pound peeled and deveined cooked shrimp, chopped
2 cans (6 ounces each) lump crabmeat, drained
1 cup shredded Gouda cheese
SAUCE:
1 cup mayonnaise
2 tablespoons Dijon mustard
1/2 teaspoon Creole seasoning
Assorted crackers

Steps:

  • Preheat oven to 350°. In a small bowl, mix bread crumbs, Parmesan cheese and dill; stir in butter. Press onto bottom of a greased 9-in. springform pan. Place pan on a baking sheet., For cheesecake, in a large skillet, heat butter over medium-high heat. Add red pepper, onion and carrot; cook and stir until tender. Stir in seasonings. Cool slightly., In a large bowl, beat cream cheese, cream and sherry until smooth. Add eggs; beat on low just until combined. Fold in vegetable mixture, shrimp, crab and Gouda cheese. Pour over crust., Bake 60-65 minutes or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., In a small bowl, mix mayonnaise, mustard and Creole seasoning. Remove rim from springform pan. Serve cheesecake with sauce and crackers.

1 1/3 cups graham cracker crumbs
1/3 cup butter
2 (250 g) packages cream cheese
1/2 cup sugar
2 eggs
2/3 cup unsweetened pineapple juice
1/4 cup flour
1/4 cup sugar
1 cup crushed pineapple, drained and juice reserved
1/2 cup whipping cream

Steps:

  • Crust.
  • Mix graham crumbs and melted butter - press into 9 x 9 pan and bake aat 350 F for 10 minutes.
  • Filling.
  • Beat cream cheese until smooth.
  • Beat in 1/2 cup sugar and eggs.
  • Stir in 2/3 cup pinaeapple juice.
  • Pour mixture over warm crust.
  • Bake for approximately 20 minutes or until set.
  • Cool completely.
  • Mix flour and 1/4 cup sugar in a 2 qt saucepan.
  • Stir in 1 cup reserved juice from drained pineapple.
  • Heat to boiling over medium heat, stirring constantly for 1 minute.
  • Cool.
  • Add crushed pineapple.
  • Beat whipping cream until stiff.
  • Fold cream into pineapple mixture.
  • Spread over bake layer.
  • Cover loosely and refrigerate for several hours.
  • Cut into squares when well chilled.
  • Fold into.
