1 package (16 ounces frozen cut green beans (use fresh if you have them))
5 pieces of bacon (cooked, diced (optional))
1 medium onion (chopped)
1 clove garlic (minced)
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cajun seasoning
1 can (14-1/2 ounces diced tomatoes with green chilies, undrained)

Steps:

  • Cook beans according to package directions. Meanwhile, in a skillet, over medium heat, cook bacon until it is crisp. Remove bacon. Stir in chopped onion and cook for about 5 minutes or until clear. Stir in minced garlic for about 1 minute.
  • Stir in the Worcestershire sauce, salt and pepper until blended. Stir in diced tomatoes and chilies. Bring to a boil; cook and stir for 2 minutes. Drain green beans and add to skillet. Stir in bacon until evenly distributed.

1 1/2 lbs green beans, stem ends removed
8 garlic cloves
4 1/2 teaspoons extra virgin olive oil
3 tablespoons honey
2 teaspoons creole seasoning (such as Tony Chachere's)
1/4 cup cognac

Steps:

  • Bring a large pot of salted water to a boil. Add beans and garlic. Blanch for 3 minutes and drain.
  • Heat a large saute pan over medium heat. Add olive oil, honey, and Creole seasoning. Let honey melt in with the olive oil and spices.
  • Pat the drained beans and garlic cloves dry with a paper towel. Add them to pan and toss gently to coat with the honey and spice mixture. Saute for 3 to 4 minutes.
  • Turn off burner and pour cognac into the pan and flambe the beans until the alcohol is cooked off.

I enjoyed these when I was in New Orleans Garnishing a Bloody Mary and had to come home and duplicate them. They can also be enjoyed as a side. Having a nice kick to them. Nice for gift giving.

1 1/2 cups water
1 teaspoon pickling salt
1 tablespoon agave syrup or 1 tablespoon honey
2 cups vinegar, 5% acidity
1/2 teaspoon mustard seeds
1/2 teaspoon dill seed
1/2 teaspoon coriander seed
bay leaf
2 teaspoons whole black peppercorns
1 chile, sliced in 8 long strips
6 garlic cloves, peeled
1 1/2 lbs string beans, trimmed
1 teaspoon salt

Steps:

  • In a small saucepan, over high heat, bring the first 9 ingredients to a boil, then turn off the heat, stirring until dissolved. Add the chilies and garlic. Remove from heat.
  • Wash and trim the green beans. Bring a large pot of water with the 1 teaspoon salt to a boil over medium heat. Add the beans. Cook until the beans begin to turn bright green and are just tender, about 3 to 4 minutes. Remove from heat and drain. Rinse immediately with cold water and put them in an ice bath for 10 minutes. Drain well.
  • Pack beans in sterilized jars then cover with the vinegar mixture.
  • Place lids and caps on cleaned rimmed jars.
  • Process in a hot water bath for 5 minutes, remove and cool in a draft free spot for 24 hours.
  • You can also put them in sterilized jars and refrigerate instead of doing the canning process. Let flavors meld for 1 week. Just keep under refrigeration and eat within 1 month.
  • I canned 2 jars and the 3rd was what I had left over for munching which was refrigerated.

Found at a cooking-by-country (or region) website, just reading this recipe took me back decades to a time growing up when we would pick beans from the garden & cook them until soft w/a combo of onion w/ham or bacon. I never cared when the main-course was as long as I could have a HUGE plate of those green beans. If it was my choice to make, I would definitely dbl this recipe! Enjoy!

1 tablespoon vegetable oil
6 slices streaky bacon (cut into bite-sized pieces)
3 garlic cloves, crushed
1 lb fresh green beans (left whole)
1 large onion, chopped
1 tablespoon dried parsley
1 teaspoon creole seasoning
salt

Steps:

  • Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & sauté until onion is soft & golden brown.
  • Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.
  • HINT: Try pairing these beans w/my also newly entered Creole Meatloaf recipe & your favorite thick mashed potatoes. Yum!

Our family version of the classic Monday dish in New Orleans. Historically, Monday was laundry day and, before modern washers, women needed a meal that could simmer on a low fire al day with minimal attention. The need is gone, but the tradition survives. To this day no self respecting neighborhood New Orleans restaurant would leave this off their Monday specials! Our family version kept the recipe simple which allows the flavor of the beans to come through. If you like you can also add garlic and bell pepper to the recipe. You can substitute andouille sausage, ham, or pickled meat for the smoked sausage if you prefer. In our house we serve it over a medium grain steamed rice, but this works with most rices.

1 lb red kidney beans
1 medium onion
1 stalk celery
1/2 teaspoon parsley
1/2 teaspoon thyme
salt
pepper
4 cups water
1 lb smoked sausage, cut into 1-2 inch pieces
1 teaspoon baking powder

Steps:

  • Place beans, onion, parsley, thyme, water and celery into a large pot and bring to a rolling boil stirring occasionally.
  • Reduce heat so that there is still a slight roll and continue occasional stirring until beans begin to soften and break up, adding water as needed.
  • At this point add the sausage and, using a spoon (a relatively flat wooden spoon works best) gently mash the beans against the side of the pot and scrape the sides to release the mashed beans (this will help thicken the sauce).
  • When the sauce has achieved a creamy consistency it is ready to serve. (depending on the freshness of the beans usually 1.5 to 3 hours) Serve over your favorite rice.
  • Add the baking powder, blended in an ounce or two of water, just after cooking. This will cause the beans to foam up added. I find that adding this reduces the gas and bloating that beans can cause.
