GINA'S SPINACH DIP

Steps:
- Melt butter in a medium saucepan over medium heat. Once it foams, add the shallot and garlic, and saute until softened, about 3 minutes.
- Add the flour and cook while stirring until it becomes a light blonde color.
- Slowly stir in the heavy cream, and the drained spinach, and simmer until it starts to thicken, about 5 minutes.
- Stir in the artichoke hearts, tomatoes, and cheese and cook until the cheese is melted. Remove to a serving bowl and serve with tortilla chips.

- In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
- Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.

This is the ultimate spinach dip! It is made from fresh spinach leaves and spring onions. I'm always asked to bring this along to major family events and, of course, during the holidays. It may be served at once, but tastes best when chilled for an hour. Serve with slices of sourdough baguettes.

NIF'S 1 WW PT. LIGHT, LOW FAT SPINACH AND FETA OMELETTE (OMELET)
Only 1 WW point!!! I love to whip this up in the morning when I'm rushing around to get ready for work. I just set it up and can forget about it for a few minutes. There are several varieties of this that I make, it just depends on what I have on hand. It is NOT a savory or rich omelette, but a healthy dish that is a real favourite of mine. Enjoy!

- Heat a 6" or 8" good quality nonstick pan that has been sprayed with nonstick spray over low-medium heat. Pour in egg whites.
- Sprinkle with fresh spinach and feta. Cover with pan lid. Let set for 5 minutes or so, while checking for doneness. This would be when you no longer see uncooked egg whites settling on top of the omelette.
- Fold omelette in half onto plate and top with salt and pepper to taste.

- Squeeze the water out of the spinach, and place the spinach into a mixing bowl. Stir in the onion, garlic, vegetables, sour cream, mayonnaise, and cumin. Season with salt and pepper. Let the dip stand at room temp for 1/2 hour for the flavors to mix, and stir again before serving. This dip keeps well in the fridge, covered, for up to 1 week.

- Heat the oil in a small skillet over medium heat and sauté garlic for 1 minute. Add artichokes and cook for 3 minutes, stirring frequently.
- Meanwhile in a food processor, add spinach, Parmesan, cream cheese, mayonnaise, cheddar, and hot sauce if using. Add garlic and artichoke mixture.
- Process all until thoroughly combined but still chunky. Scrape mixture into a serving bowl and serve.
- Options: Microwave dip on high for 2 minutes, until bubbling or heat in baking dish in oven for about 30 minutes at 350°F.

- Preheat oven to 350º.
- Combine 1 1/2 cups mozzarella, sour cream, 2 tbs Parmesan and next ingredients (through spinach) in a large bowl, and stir until well blended. Spoon mixture into a 1/2 qt baking dish. Sprinkle with 1/2 c mozzarella and 2 tbs Parmesan. Bake for 30 minutes or until bubbly and golden brown. Serve with tortilla chips or veggies. Use as a spread with turkey or chicken sandwiches.

A healthier version of the old classic. I didn't include bread in this recipe because not everyone wants bread. Of course you can hollow out a round loaf, put the dip in there and use the remainder of the bread to dip - that's my preference too! If not, you can dip veggies in it or even spoon the dip on to romaine lettuce leaves, which are stiff enough to support a little spinach dip. Enjoy!
