1 lb sliced mushrooms
1 onion (chopped)
3 tablespoons butter
1 tablespoon garlic
1 tablespoon cooking sherry
1 tablespoon soy sauce
salt and pepper

Steps:

  • Add sliced white mushrooms, chopped onions, butter and minced garlic to a large cast iron skillet.
  • Heat mushrooms over medium heat, stirring ingredients frequently until onions and mushrooms are soft and tender, which takes about 6-8 minutes.
  • Add 1 tablespoon of cooking sherry and 1 tablespoon soy sauce and mix well.
  • Continue to heat mushrooms and onions for 2 minutes, until mushrooms are caramelized and excess liquid is burned off.
  • Season mushrooms and onions with sea salt and cracked pepper.
  • Serve hot either as a side, on a burger, chicken, pork, or even as a savory topping to an omelet.

This is Rach's mom's favorite tapas dish.

Number Of Ingredients 13

2 tablespoons EVOO - Extra Virgin Olive Oil
2 tablespoons butter
1 pound cremini or white mushrooms
stemmed and wiped clean
6 cloves garlic
finely chopped or minced
Salt and pepper
2 tablespoons thyme leaves
finely chopped
1 cup Spanish sherry
1/2 cup parsley
finely chopped
Juice of 1/2 lemon

Steps:

  • Heat a skillet over medium-high heat with EVOO, 2 turns of the pan
  • Melt butter into oil, add mushrooms and toss and turn 12 minutes or until well-browned and fragrant
  • Add garlic, salt, pepper and thyme to the pan, toss 1-2 minutes, then add sherry and toss a minute more
  • Turn off heat, stir in parsley and lemon juice, and transfer to a warm serving dish

2 garlic cloves (finely chopped)
1 pound button or other mushrooms (trimmed and quartered)
1 tablespoon fresh lemon juice
2 tablespoons Fino, Amontillado, or Manzanilla sherry
3/4 cup store-bought or homemade beef stock
1 small dried hot red chile pepper (crumbled, or 1 teaspoon hot red pepper flakes, or to taste)
Salt and freshly ground black pepper
3 tablespoons chopped flat-leaf parsley leaves
Crusty bread ((optional))

Steps:

  • In a large skillet over medium-high heat, melt the butter. Add the garlic and mushrooms and cook until the mushrooms have given up their liquid and are beginning to brown, 5 to 10 minutes.
  • Add the lemon juice, sherry, stock, and chile and bring to a boil. Reduce the heat to medium-low and let the mixture simmer, uncovered, for about 10 minutes, or until the liquid is quite syrupy and nearly evaporated.
  • Season with salt and pepper, garnish with parsley, and serve with crusty bread, if desired, for sopping up the juices.

1 1/2 pounds fresh mushrooms
1/2 lemon
3 cloves garlic, minced
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Submerge the mushrooms in cold water, swish around to wash thoroughly, and drain. Trim the ends, slice and place in a large bowl. Squeeze the juice of the lemon half over the mushrooms and toss.
  • Put the garlic in a large pan and pour in the olive oil. Heat over medium-high heat until the garlic begins to sizzle but not brown, about 30 seconds. Add the mushrooms, stir, and cover. Cook, stirring occasionally, for 4 minutes.
  • Remove the lid, add the salt and pepper, and cook, stirring, until all moisture is evaporated and the mushrooms begin to brown, about 5 minutes. Stir in the parsley and serve.

4 skinless, boneless chicken breast halves
salt and ground black pepper to taste
garlic powder, or to taste
2 tablespoons butter
1 small onion, chopped
1 (8 ounce) package sliced fresh mushrooms
1 tablespoon olive oil
¼ cup cream sherry
¼ cup chicken broth, or as needed
4 slices provolone cheese

Steps:

  • Season chicken with salt, pepper, and garlic powder.
  • Heat butter in a skillet over medium heat; cook chicken in the melted butter until no longer pink in the center and juices run clear, 3 to 4 minutes per side. Remove chicken from skillet.
  • Cook and stir onion and mushrooms in the same skillet; add olive oil. Cook until onion and mushrooms are slightly tender, 5 to 10 minutes. Pour sherry and chicken broth into the skillet, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon, about 2 minutes.
  • Return chicken to the skillet, cover, and simmer chicken and onion mixture until liquid is slightly reduced, about 15 minutes. Spoon onion and mushrooms atop each chicken breast and top each with a slice of provolone cheese. Remove skillet from heat; cover skillet until cheese melts, about 5 minutes.

1 pound button mushrooms, sliced
1 clove garlic, thinly sliced

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Number Of Ingredients 8

3-4 Tbsp. extra-virgin olive oil
1 lb. small mushrooms, whole
kosher salt and pepper to taste
3-4 large cloves garlic, minced
1/4 cup sherry wine
Pinch red pepper flakes
Juice and zest of 1/2 lemon
2 Tbsp. chopped Italian parsley

Steps:

  • Heat the oil in a large skillet over medium-high heat. Be sure the mushrooms are completely dry. Add the mushrooms and saute undisturbed (do not stir) until the liquid released by the mushrooms evaporates and they turn golden brown, about 5- 8 minutes. Stir and continue to saute until most sides are browned, about 4-5 more minutes.
  • Reduce the heat to medium and add the minced garlic to the pan. Cook about 30-45 seconds.
  • Add the sherry, stir and saute about a minute.
  • Add the lemon zest and juice, red pepper flakes, salt, pepper and stir about 30-45 seconds. Remove the pan from the heat and top with fresh parsley. Taste and season if needed. Serve warm.

1 lb fresh button mushroom, same-size, divided
2 tablespoons extra virgin olive oil
1 teaspoon fresh thyme, minced, divided
kosher salt
3 garlic cloves, minced
1/4 cup medium- dry sherry
1 tablespoon fresh flat leaf parsley, minced
1 tablespoon butter

Steps:

  • If mushrooms are greater than one inch in diameter, cut into quarters.
  • Heat 12 inch skillet over medium heat.
  • Add 1 T olive oil. When the oil is hot enough to sizzle a piece of mushroom, add half the mushrooms and half the thyme. Raise the heat to medium-high and saute, stirring only occasionally, until the mushrooms are golden brown. If you stir them too often or crowd them in the pan, you'll prevent the mushrooms from carmelizing.
  • Season with salt and pepper.
  • Transfer the mushrooms to a bowl, and repeat with the remaining mushrooms. Add the garlic, and saute 1 minute, stirring. Return the reserved mushroom, with any accumulated juices, to the pan.
  • Add the sherry and parsley, and boil until the liquid is reduced to a glaze, another minute or so.
  • Add the butter, and gently swirl the pan as the butter melts and emulsifies with the sauce. Taste and adjust the seasonings with salt and pepper.
  • Enjoy!

What a delicious side dish to have with your grilled steak! I love cooking mushrooms when I am grilling. I can just put them on and pretty much forget about them. They don't really overcook, unless you burn them! Take your time with them if you want to. You can also cook them at a higher heat, but you really have to make sure you don't burn the garlic. Enjoy!

CHICKEN WITH A SHERRY MUSHROOM SAUCE

One of my favorite recipes, this chicken with a sherry mushroom sauce is tender and loaded with rich flavors. Plus it comes together in under an hour, with just 20 minutes of active preparation time.

Number Of Ingredients 8

4 Chicken Breasts
Salt and Pepper
2 tablespoons Butter
2 cloves of Garlic (crushed or chopped)
8 ounces Sliced Mushrooms (I like baby bella)
1 cup Dry Sherry
1/3 cup Heavy Cream
1/2 teaspoon Thyme

Steps:

  • Heat your oven to 350 degrees.
  • Melt 1 tablespoon of butter in a large skillet over medium-high heat. Generously salt and pepper both sides of the chicken breasts. Once the butter has melted, add the chicken to the skillet. Then add 1/4 cup of sherry. Cook the chicken for 3 minutes per side, until browned. Then remove the chicken from the skillet and place it on a plate while you work on the sauce.
  • Melt another tablespoon of butter in the same skillet you just used to cook the chicken. Add the garlic and stir, scraping up any brown bits. After a minute add the mushrooms. Generously salt and pepper and toss until the mushrooms are evenly coated with butter. Cook for 2 minutes. Then add the remaining sherry. Let the mushrooms simmer for another 4 minutes. Then stir in the cream and thyme. Let the sauce reduce for 5 minutes then add the chicken back to the skillet. Place the skillet in the oven for 30 minutes so that the chicken can finish cooking. (Make sure you are using an oven-safe skillet!)
  • After 30 minutes in the oven the chicken should be done - serve it with pasta or rice pilaf. Spoon the sauce over the top.

2 pounds mixed wild mushrooms, such as cremini, shiitake, porcini, and portobello
1/2 cup good olive oil
1 cup chopped shallots (4 large)
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped garlic (6 cloves)
1 cup chopped flat leaf parsley

Steps:

  • Brush the caps of each mushroom with a clean sponge. Remove and discard the stems. Slice the small mushrooms thickly and cut the large ones in a large dice.
  • Heat the olive oil in a large (11 - inch) Dutch oven or saucepan. Add the shallots and cook over low heat for 5 minutes, or until the shallots are translucent. Add the butter, mushrooms, salt, and pepper and cook over medium heat for 8 minutes, until they are tender and begin to release their juices, stirring often. Stir in the garlic and cook for 2 more minutes. Toss in the parsley, sprinkle with salt, and serve warm.

1 Tbsp lemon juice
2 tsp soy sauce
1 tsp sugar
2 Tbsp olive oil
10 oz fresh mushrooms
1 Tbsp butter
2 clove garlic minced
1/4 c dry sherry

  • 1. Mix lemon juice, soy sauce, and sugar together and set aside.
  • 2. Add oil to pan and get it hot. Add the mushrooms and saute until browned about 5 minutes. Add the garlic and butter saute until butter is absorbed.
  • 3. Add the lemon mixture to mushrooms and saute until most is absorbed. Add the sherry deglaze the pan scrapping up anything from the bottom of pan. Cook until all is evaporated.

  • Add the the mushrooms in batches, 4 cups at a time, and cook until they have shrunk quite a bit, and are golden brown, stirring from time to time. Remove the mushrooms and add them to a bowl. This should take about 10 minutes per batch. Using some of the oil each time, repeat the process until all of the mushrooms have been sautéed. Add all of the mushrooms back to the pan.
  • Reduce the heat to low and deglaze the pan with the sherry. Return the heat to high and use a wooden spatula with a flat edge to loosen any mushrooms bits from the bottom of the pan. Mix and sauté until the sherry has evaporated just about completely.
