NO BAKE STRAWBERRY CHEESECAKE

Steps:
- Dissolve strawberry gelatin in boiling water in a bowl; cool in refrigerator until thick, but not set, about 20 minutes.
- Beat cream cheese, sugar, and vanilla extract together in a bowl until smooth.
- Beat evaporated milk in a separate bowl with an electric mixer until whipped and thick. Gradually pour strawberry gelatin mixture into evaporated milk, beating constantly. Fold cream cheese mixture into gelatin-milk mixture to form cheesecake filling.
- Set graham cracker crust on a baking sheet or plate to maintain stability. Pour cheesecake filling into crust. Refrigerate until cake is set, at least 3 1/2 hours.

Steps:
- Place water, 1/2 cup of sugar, cornstarch, and jello into a small saucepan, and whisk until cornstarch is dissolved.
- Heat over medium heat until glaze is thickened and clear.
- Set aside to cool slightly, and stir in sliced strawberries.
- Cut angel food cake into 1 inch pieces and toss with 2 cups of the Cool Whip. Press into 9×13 inch glass pan.
- Beat cream cheese, 1/2 cup remaining sugar, and vanilla until smooth. Stir in remaining Cool Whip and spread evenly over cake layer.
- Pour cooled strawberry mixture over cream cheese layer, spreading to cover cake evenly.
- Refrigerate 2 to 3 hours before serving.

- CAKE:.
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 (9 inch) round pans.
- In a large bowl, stir together cake mix and gelatin mix.
- Make a well in the center and pour in 1 cup mashed strawberries, oil, milk and eggs.
- Beat on low speed until blended.
- Scrape bowl, and beat 4 minutes on medium speed.
- Fold in the coconut and pecans.
- Divide the batter among the prepared pans.
- Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
- FROSTING:.
- To make the Strawberry Cream Cheese Frosting:
- Mash the 3/4 cup strawberries to make 1/2 cup, then drain well; set aside. In a medium bowl, beat cream cheese and butter until smooth.
- Blend in the confectioners' sugar and drained strawberries.
- Beat on medium speed until the frosting lightens and is well combined. Fold in the coconut and pecans.
- Frost cake between layers, on top and sides.
- Chill uncovered 30 minutes or until frosting sets, then cover and chill 4 to 6 hours before serving.

- Toss 1 tablespoon sugar with the diced strawberries and set it aside while you prepare the cake.
- Slice the loaf cake into thirds, lengthwise, by standing it up on one of the short ends to slice it into 3 equal layers. As equal as you can. It's not an exact science. I recommend using a bread knife to slice the cake easily.
- Starting with the bottom layer of the loaf cake, place it on a serving dish and top it with about 1/3 of the whipped topping, being sure to get down the sides too. Add 1/3 of the strawberries on top next.
- Continue layering in the same manner with the middle slice of cake, 1/3 of whipped topping, and 1/3 of strawberries, and top it off with the top layer of cake and the remaining whipped topping.
