A delicious and easy recipe from Weight Watchers. They suggest serving this yummy sauce over whole-wheat noodles, Julienned cucumbers, or other fresh veggies. I like using this sauce with a chicken satay. I have made a few minor adjustments but none that will effect the point values. By using natural peanut butter you avoid hydrogenated shortening andsweeteners because it is just made from ground peanuts and a little salt.

1/4 cup creamy natural-style peanut butter
3 tablespoons vegetable broth
1 tablespoon balsamic vinegar
1 tablespoon seasoned rice vinegar
1 tablespoon soy sauce
1 tablespoon minced peeled fresh ginger
2 teaspoons toasted sesame oil
2 teaspoons Worcestershire sauce
1 teaspoon hot red pepper sauce (I like to use Frank's)
1/2 teaspoon sugar

Steps:

  • Whisk all the ingredients together in a medium bowl until smooth and creamy.
  • This will keep well for up to 3 days, covered and refrigerated; whisk before using again.

Friend of mine let me look through one of her Weight Watchers cookbook and I found this recipe and tried it and its so good that I wanted to save the recipe and share it with everyone. DH and I love it! Had it with a grilled chicken breast and salad. :) I did change the vinegar to what I had on hand. Original calls for rice-wine vinegar. This is 1 point per serving.

  • In a small food processor blend together all ingredients until creamy.

8 ounces uncooked soba noodles or 8 ounces udon noodles
1 cup reduced-sodium chicken broth
2 tablespoons reduced-fat peanut butter
1 tablespoon soy sauce
1/2 teaspoon hot pepper sauce
1 medium sweet red pepper, cut into 1 inch pieces
2 medium bell peppers, cut into 1 inch pieces
2 teaspoons gingerroot, minced
2 medium garlic cloves

Steps:

  • Cook noodles according to package directions. Drain, transfer to a large bowl and cover with foil to keep warm.
  • In a medium bowl, whisk together chicken broth, peanut butter, soy sauce, and hot pepper sauce, set aside.
  • Heat a large nonstick skillet coated with olive oil cooking spray over medium high heat. Add peppers, ginger and garlic and saute for 2 minutes. Add chicken broth mixture and cook to heat through, about 2 minutes. Transfer mixture to noodles and toss to combine.
