4 large tomatoes (seeds removed, diced)
2 large poblano peppers (seeds and membrane removed, diced)
1 small yellow squash or zucchini (diced)
1/4 small onion (finely chopped)
1 clove garlic (minced)
1/4 cup cilantro (finely chopped)
Zest of 1 lime
1 Tablespoon lime juice
Hot sauce (garlic powder, salt, and pepper (to taste))

Steps:

  • Remove the seeds from the tomatoes and poblano peppers and dice. Dice all the vegetables and mix together with the garlic, cilantro, lime zest and juice, and seasonings. Enjoy!
