MARINATED FLANK STEAK
A wonderful flank steak on the grill recipe I invented that friends just love! My girls think this is great, and it doesn't take long to grill. This also works great when sliced and used for fajitas.

Steps:
- In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
- Preheat grill for medium-high heat.
- Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.

BROILED FLANK STEAK (NO MARINADE) MEXICAN STYLE
Served with a chilled garlic/sour cream sauce. Easy to make when you don't have time to marinate and want a tasty flank steak.

- In a small bowl, combine the sauce ingredients and blend. Refrigerate until ready to serve.
- In another small bowl, combine the other ingredients for the steak (except the steak).
- Brush the steak ingredients on one side of the steak and broil 6 inches from the heat, for 10 minutes.
- Turn the steak over and brush the other side with the steak ingredients and broil 6-10 minutes longer, until done to your liking.
- Let meat stand for 5 minutes, after it is done, before thinly slicing the meat across the grain.
- Serve with the chilled sour cream sauce.

MARINATED FLANK STEAK: NO SUGAR OR SALT
Here is a good flank steak recipe with no sugar, honey, or soy sauce - great for those watching their salt and sugar intake. Fits perfectly into WeightWatchers Core program. - Whisk together the first 5 ingredients and pour in a 13 x 9 x 2 glass baking dish. Add flank steak and turn to coat; marinating steak at least 2 hours, or up to one day, refrigerated, turning occasionally.
- Preheat broiler. Remove steak from marinade and broil about 4 minutes per side for medium-rare. Carve thin slices across the grain at a diagonal.

GRILLED FLANK STEAK

- Mix oil, lemon juice, garlic, minced onion, flavor enhancer, salt, pepper, sugar, dry mustard, rosemary, and ginger together in a glass jar. Place flank steak in a zip-top bag and add marinade. Refrigerate for 4 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove flank steak from the marinade and shake off excess. Discard the remaining marinade.
- Cook on the preheated grill, turning once, until firm and slightly pink in the center, 5 to 8 minutes per side. Slice on a diagonal across the grain to serve.

NO GRILL FLANK STEAK
A tree limb fell through the Weber kettle and we decided not to replace it. We haven't missed it at all. A hot oven and a cast iron grill pan are much easier for just the two of us. We like flank steak. We cut it into meal-sized pieces and cook it quickly. You don't even need to marinate it.

- Optionally, marinate the steak for the amount of time appropriate for the marinade being used. Marinating is NOT necessary but a choice.
- About 25 minutes before you intend to cook the steak, place the cast iron grill pan in the oven and pre-heat the oven to 450 F
- At this time, also take the steak out of the refrigerator and allow to come to room temperature.
- If you marinated the steak, dry it thoroughly with paper towels. If the steak is wet when it hits the pan it will stew rather than grill.
- Rub the steak on both sides with the olive oil.
- Season to taste. Simply using salt and pepper makes a tasty steak that tastes of pure BEEF. Any dried herb or spice mix may be used.
- Place the steak on the pre-heated grill pan and bake for 5 minutes.
- Flip the steak and bake an additional 5 minutes. This results in a medium rare steak by the time it is done resting.
- Remove from the pan, losely cover with foil, and allow to rest for 10 minutes.
- Slice very thinly perpendicular to the grain. Flank steak will be tough cut any other way, including at an angle as recommended in so many recipes.
- If you have leftovers, slice and reheat briefly in a buttered skillet to make a truly sinful steak sandwich.
