NORDY BARS
A homemade version of the famous Nordy Bar recipe from Nordstrom.

Steps:
- In a medium saucepan, melt butter over medium-low heat.
- Add butterscotch chips, brown sugar, and stir until melted. Remove from heat. Allow to cool for 10 minutes.
- In a small bowl, combine flour, baking powder, and salt. Stir. Set aside.
- Add the beaten eggs to the cooled butter mixture and stir to combine.
- Add the flour to the butter mixture, and stir until combined. Add in the vanilla. Set aside until completely cool.
- Lightly grease a 9x13 baking pan, and lay parchment in, allowing some to hang over the sides.
- When the butter and flour mixture has cooled, stir in chocolate chips, marshmallows, and (optional) chopped nuts. Spread in the baking pan.
- Bake in a preheated 350-degree oven for 28 minutes. Remove from the oven and let it cool completely before cutting into squares.

Steps:
- Preheat oven to 350° F (175° C).
- Grease one 9x13" baking pan.
- In a medium sized saucepan, melt the butter or margarine over medium heat.
- Add the butterscotch chips and brown sugar; stir until melted.
- Remove pan from heat and stir in the eggs.
- Add the flour, baking powder and salt; mix thoroughly and stir in the vanilla. Set aside to cool.
- Once cool, stir in the chocolate chips, marshmallows and chopped nuts.
- Spread batter into the prepared pan.
- Bake at 350° F (175°C) for 25 to 28 minutes. Remove form oven and let cool thoroughly before cutting into squares.
NORDY BARS

Steps:
- Line a 9×13 pan with parchment paper or foil that has been sprayed with nonstick spray. Preheat oven to 350 degrees.
- In medium sauce pan melt butter, butterscotch chips and brown sugar over medium low heat. Stir until melted (this may look a little strange but just keep stirring until it comes together). Remove from heat and add the eggs and vanilla stir.
- Next add the flour, baking powder, and salt. Mix well and then set aside to cool slightly. Once the mixture is cool, stir in chocolate chips, marshmallows and nuts (if using).
- Spread into prepared pan and bake 22 to 25 minutes, until golden brown. Allow to cool completely before cutting into bars.
NANAIMO BARS I
These are a totally sinful concoction containing more calories than one would care to count. A decadent dessert! Will satisfy any sweet tooth!

Steps:
- Mix 1/2 cup butter or margarine, white sugar, cocoa, egg and vanilla in a heavy sauce pan or double boiler. Stir over low heat until mixture is of custard like consistency.
- Combine graham crackers, coconut and walnuts and add to the melted mixture. Mix well and pack into buttered 9 inch square cake pan.
- Cream 1/4 cup butter, confectioners' sugar, vanilla custard powder and milk. Beat until creamy and spread over melted base.
- Refrigerate till hardened.
- Melt semi-sweet chocolate with 1 tablespoon butter and drizzle over custard icing. Refrigerate. When totally hard cut into square bars.
