INDIAN-ISH BAKED POTATOES

Indian-ish Baked Potatoes image

Of all the places my mom, who lives in Dallas, has traveled for work, her favorite will always be London - the cobblestone streets, the limitless sights, the walkability and, most important, the pubs. She spent a lot of time in pubs on early '90s London business trips, and the only vegetarian dish was very often a baked potato. This is where she discovered the ingenuity of filling a soft, steamy potato with all kinds of tasty toppings that absorb nicely into the starchy flesh. In this recipe, she subs out the big potato for smaller, thin-skinned ones (for a prettier presentation), and the bacon bits, chives and packaged cheese for spicier, brighter toppings: chiles, chaat masala, onions and ginger. This dish takes almost no time to put together once the potatoes are baked, but looks very impressive as an appetizer or a small side. Tip: Cut the ginger, onion and chiles while the potatoes bake, so everything is ready for assembly.

Categories     dinner, easy, snack, finger foods, vegetables, appetizer, side dish

Time 1h

Yield 4 servings

Number Of Ingredients 8

1 pound small new potatoes or baby red potatoes
Kosher salt
3/4 cup sour cream
4 teaspoons minced fresh ginger
1/2 small red onion, finely diced
2 small Indian green chiles or Serrano chiles, finely chopped
2 teaspoons chaat masala
2 tablespoons chopped fresh cilantro stems and leaves, for garnish

Steps:

  • Heat the oven to 425 degrees. Place the potatoes on a baking sheet and bake for 45 minutes, or until they are easily pierced with a fork. Let the potatoes cool until they can be handled.
  • Without cutting all the way through to the bottom, slice each potato lengthwise and crosswise into four sections. Use your hands to push down and pull apart the four sections like a blooming flower. Sprinkle a pinch of salt on top of each potato, followed by a dollop of sour cream.
  • Evenly divide the ginger, onion, green chiles, and chaat masala among the potatoes. Make it rain with chopped cilantro and serve.

Twice Baked Potatoes (Stuffed Jacket Potatoes) image

Recipe video above. Baked potatoes stuffed with a creamy, cheesy, mashed potato filling hit with salty pops of bacon. Think of it as the spud love-child of jacket potatoes and mashed potato! Provided by Nagi

Categories     Main     Potato     Side Dish

Number Of Ingredients 12

4 x 300g / 10oz potatoes ( - Sebago (Aus), Russet (US), Maris Piper / King Edwards (UK) (Note 1))
1 tbsp canola or vegetable oil
1/2 tsp salt
200g / 7oz bacon (streaky) (, chopped into small batons (Note 2))
120g / 8 tbsp unsalted butter
1/3 cup cream ((pure or thickened / heavy))
1 cup cheddar cheese (, shredded (Note 3))
3 green onions (, finely sliced)
1/4 tsp salt
1/4 tsp pepper
1 1/2 tbsp chives (, finely chopped (garnish))
Sour cream ((recommended!))

Steps:

  • Preheat oven to 220°C / 430°F (200°C fan). Place a rack on a tray (recommended but not critical).
  • Prick potatoes: Wash, scrub and dry potatoes well. Prick each potato 8 times with a fork.
  • Oil and salt: Put potatoes in a bowl, pour over oil and rub onto potatoes. Then sprinkle over salt and use your hands to coat. (Just do this as best you can. Some will stick, much will not!)
  • Bake: Place potatoes on rack and bake for 75 minutes or until you can pierce with a small knife with no resistance.
  • Cook bacon: Place bacon in a cold non-stick pan over medium heat. When the fat starts to melt, turn the heat up to high and cook bacon until golden. Drain on paper towels.
  • Heat butter and cream: Melt butter in a saucepan over medium heat. Then add cream and heat until hot, but don't let it boil. (You could also do this in a microwave)
  • Lower oven: Turn oven down to 200°C / 390°F (180°C fan).
  • Scoop out potato flesh: Allow potatoes to cool enough so you can handle them (or use a tea towel). Cut in half lengthwise and scoop out potato flesh, leaving 0.7cm (1/3") thick layer of potato still stuck to skin.
  • Mash potato: Place potato flesh in a bowl and mash while hot until smooth.
  • Add-ins: Add half the cheese (save the rest for topping), most of the bacon (save a bit for garnish), all the green onion, hot cream and butter, salt and pepper. Stir to combine.
  • Stuff and top with cheese: Fill potato skins with the mashed potato mixture. Top with remaining cheese.
  • Bake: Bake for 20 to 25 minutes until the cheese is melted, golden and bubbly.
  • Serve: Serve immediately, garnish with sour cream, reserved bacon and chives.

NORTH INDIAN BAKED STUFFED POTATOES

North Indian Baked Stuffed Potatoes image

Provided by Food Network

Yield 4 servings

Number Of Ingredients 12

4 medium or 2 large baking potatoes
1 cup chopped onions
3/4 cup diced carrots
2 tablespoons vegetable oil or ghee
3/4 cup chopped red or green bell pepper (1 medium)
1 teaspoon ground coriander seeds
1/2 teaspoon turmeric
1/8 teaspoon ground cardamom
Pinch of ground cloves
4 ounces cream cheese, at room temperature
Salt and freshly ground black pepper to taste
Spicy Yogurt Sauce (see below)

Steps:

  • Scrub the potatoes and bake them in a 400 degree oven for one hour or until done.
  • While the potatoes are baking, prepare the filling. Saute the onion and carrots in the oil or ghee until they are tender, for about 10 minutes. Add the bell pepper and spices and continue to saute for another minute or two, stirring. Add a little water to the pan to prevent sticking, cover it, and cook for another 5 minutes, or until the bell pepper is just tender. Stir in the cream cheese and add salt and pepper to taste. Set aside.
  • When the potatoes are baked and cool enough to handle, make a lengthwise cut in the top of each one and scoop out a least half of the contents. If you are using large potatoes, cut them in half lengthwise and scoop them out, leaving about 1/2 inch of potato clinging to the skin. Mash the scoopedout potato and then add it to the vegetablecream cheese mixture. Lower the oven heat to 350 degrees. Fill the potato shells with this mixture and place them in an oiled baking dish. Cover with foil and bake for 20 minutes.
  • Serve topped with Spicy Yogurt Sauce.

  • Begin by gathering and prepping all of your ingredients according to the ingredients list above to have ready and organized for use.
  • Preheat the oven to 400 degrees. Place the russet potatoes into a small bowl, and drizzle them with about a teaspoon or two of olive oil, and rub onto the potatoes. Using a fork, prick each of the potatoes a few times to allow the steam to escape while they bake. Place the potatoes directly onto the middle rack of the oven, and bake the potatoes for about 50-60 minutes, or until tender when pierced with a paring knife.
  • While the potatoes bake, prepare the filling: place a large grill pan (or you can even use a large skillet/pan if desired) over medium-high heat; once hot, add about 2 tablespoon of olive oil and the sliced chicken sausage and red onions. Using tongs, gently toss the sausage with the onions until they begin to brown, for about 2-3 minutes.
  • Next, add the sliced mushrooms, and allow those to lightly brown; then, add the garlic, and once the garlic has become aromatic (about 20 seconds), add in the red bell pepper, the zucchini and yellow squash strips, along with a pinch or two of salt and pepper, and toss all together in the pan allowing for the vegetables to grill and become lightly seared, about 2 minutes.
