1/4 cup cherry tomatoes, sliced in half
4 basil leaves, thinly sliced
1 teaspoon minced garlic
1 tablespoon olive oil
Salt and pepper
2 or 3 baguette slices
Grapeseed oil
Fresh ricotta, lightly whipped to soften
1 tablespoon aged balsamic vinegar

Steps:

  • Add the tomatoes, basil, garlic, olive oil and some salt and pepper to a bowl. Toss and let marinate for 5 minutes.
  • Toast the baguette slices in a hot pan with grapeseed oil. Remove to a plate and season with salt and pepper.
  • Add a dollop of whipped ricotta to each of the baguettes, then top with the marinated tomatoes and drizzle with balsamic.

5 tablespoons olive oil
1 baguette, cut on the diagonal into 1/2-inch slices
1 medium-sized black eggplant, cut lengthwise into 1/2-inch slices
1 Vidalia onion, cut into 1/2-inch disks
Salt
2 Roma tomatoes, pulp removed, cut into 1/2-inch cubes
1 clove garlic, minced Freshly ground black pepper
2 pepperoncini peppers, diced, plus 2 tablespoons pickling juice
1/2 cup finely grated manchego cheese

Steps:

  • Preheat grill to medium-high. Using 2 tablespoons of the olive oil, brush both sides of the baguette slices and grill until golden brown and lightly charred around the edges, about 1 to 2 minutes on each side. Remove from grill and set aside. Using another 2 tablespoons olive oil, brush eggplant and onion and grill until lightly charred, 3 to 4 minutes on each side. Remove eggplant and onion from heat, season with salt, and set aside, on a cutting board, until cool enough to handle. Slice both into 1/2-inch cubes. Combine eggplant, onion, tomato, garlic, remaining tablespoon olive oil, black pepper, pepperoncini and pickling juice in a bowl. Toss to combine and check for seasoning, adding additional salt, if necessary. Assemble toasts on a serving platter and place a heaping spoonful of vegetable mixture on top of each. Sprinkle with cheese and serve.

1 French baguette
1 tablespoon olive oil
2 roma (plum) tomatoes, thinly sliced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 teaspoon garlic powder
1 pinch ground white pepper
1 (8 ounce) package sliced mozzarella cheese
1 (6 ounce) package sliced provolone cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice the baguette into 1/2 inch thick diagonal slices. Arrange the slices in a single layer on a baking sheet. Brush both sides of each slice with the olive oil. Place tomato slices and a sprinkling of basil and oregano on the bread slices. Sprinkle the tomatoes, basil and oregano with the garlic powder and white pepper. Cover the tomato slices with slices of the mozzarella and provolone. Place more basil, oregano and tomato slices on top of the cheese.
  • Bake in the preheated oven for 7 to 10 minutes, or until the cheese is bubbly.

1 (8 ounce) sourdough baguettes, sliced 1/4-inch thick
3 tablespoons olive oil
1/3 cup onion, chopped
1 cup granny smith apple, peeled and chopped
1 teaspoon maple syrup
1/4 cup dried cherries
1 1/2 teaspoons horseradish
2/3 cup blue cheese, crumbled
1/3 cup hazelnuts, chopped

Steps:

  • Brush bread with 2 T oil and broil until golden, turning once, about 5 minutes.
  • In a frying pan over medium heat, saute onion with remaining oil until golden. Add apple and syrup, cook 5 minutes. Let cool slightly. Stir in cherries, horseradish, and cheese. Spoon over toast and top with nuts.

8 slices French bread or 8 slices Italian bread (1/2 inch thick)
2 cloves garlic, halved
1 teaspoon olive oil
2 tablespoons minced onions
1 large tomatoes, diced
1 pinch dried oregano
1 pinch pepper
2 tablespoons freshly grated parmesan cheese

Steps:

  • Under broiler, toast bread on both sides until brown.
  • Rub one side of hot toast with cut side of garlic.
  • While bread is toasting, heat oil in non stick fry pan over medium heat.
  • Add onion and cook, stirring until tender.
  • Add tomato, oregano and pepper.
  • Stir to mix.
  • Spoon tomato mixture over garlic side of toast and sprinkle with Parmesan cheese, then broil for 1 minute.
  • Serve immediately.
