Kids and adults alike will love these super colourful pancakes, perfect for a celebratory breakfast or brunch. Stack them up and top with whipped cream, maple syrup and mixed berries.

200g self raising flour
1 tsp baking powder
1 tbsp golden caster sugar
½ tsp vanilla extract
200ml milk
3 eggs
25g butter , melted, plus extra for frying
red, yellow, green and blue gel food colouring
punnet raspberries
punnet blueberries
whipped cream or ice cream
maple syrup

Steps:

  • Put all the pancake ingredients, except the dye, in a bowl and mix well with a whisk until smooth. Divide the batter into 5 bowls or disposable cups. Use the food colouring to dye 4 of them a different colour, leaving one plain.
  • Melt a small knob of butter in a large non-stick frying pan over a medium-low heat. Once foaming put spoonfuls of the pancake batter into the pan and shape into 4-5cm circles with the back of your spoon, you should have enough to make 4 pancakes from each coloured batter. Cook for 2-3 mins then flip over and cook the other side for another minute or until cooked through and ever so slightly golden.
  • Stack the pancakes so that everyone gets one of each colour. Serve with fresh fruit, cream or ice cream and a drizzle of maple syrup if you like.

2 cups master mix*
1 cup milk
2 large eggs
1 teaspoon vanilla
Food dye
Whipped cream (for serving)

Steps:

  • In a large bowl, whisk together master mix, milk eggs and vanilla until combined. Divide batter among 6 small mixing bowls.
  • Stir in food dye to each bowl, starting with a couple drops until a vibrant color is achieved. Repeat until you have red, orange, yellow, green, blue and purple.
  • Heat a nonstick frying pan or griddle over medium-low heat. The pan is ready when a sprinkle of water lightly sizzles on the pan.
  • Pour 2 tablespoons of batter per pancake. Cook for about 45-60 seconds or until the bubbles begin to pop. Flip and cook for an additional 45-60 seconds. Remove from pan and repeat until all the colors have been used.
  • Pancakes can be kept warm in a 200°F oven until ready to serve.
  • Stack the pancakes in the color order of a rainbow and serve with whipped cream clouds.

1/4 cup granulated white sugar
1 1/2 cups milk
1 teaspoon vanilla extract
3 eggs
Pure flavor extracts
Gel food coloring
3 tablespoons butter, melted, plus more for serving
1 cup maple syrup
1/4 cup rum
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • For the pancakes: Sift the flour and sugar together. Add the milk, vanilla and eggs and mix until smooth. Divide the batter into smaller bowls. For each bowl, you will need about 1 teaspoon of flavor extract and 4 to 5 drops of gel food coloring. I recommend using food coloring gel which is brighter (regular food coloring will also work; you will just need to use a bit more). You can match it to the desired flavor; for instance, yellow for banana, red for raspberry, etc. Once you have flavored and colored your batter, it is time to cook the pancakes! Heat a nonstick frying pan or griddle, melt some butter and pour the batter to create pancake rounds. For silver dollar pancakes, use about 1 tablespoon per pancake (adjust for desired size). Repeat with ingredients.
  • For the syrup: In a medium pot over medium heat, combine the maple syrup, rum, cinnamon and vanilla. Heat until it comes to a boil, and then remove from the heat and set aside to cool. Serve the pancakes warm with the syrup and extra butter if desired.

Steps:

Steps:

  • Mix first 3 ingredients in large bowl until blended.
