BANANA BREAD PUDDING
I am amazed at how many different types of bread pudding there are. This one is wonderful. Prep time includes soaking the bread. This recipe is from Woods Hole B&B Inn, Falmouth, Massachusetts.

Steps:
- Put cubed bread in a large bowl with milk, let stand for 1 hour.
- Pre-heat oven to 325ºF.
- Spray 9" X 13" baking dish.
- In another bowl, beat together eggs, sugar and vanilla.
- Stir this mixture into the bread mixture.
- Fold in the mashed bananas, spices and raisins.
- Pour evenly into baking dish.
- Place uncovered in center of oven and bake 1 hour and 10 minutes.
- Remove from oven and cool to room temperature.
- Serve with a splash of rum and whipped cream, if desired.
BANANA BREAD PUDDING
Bread pudding meets banana bread in this EASY breakfast or brunch recipe that everyone will LOVE!! Firmer exterior with a custardy interior and an amazing vanilla sauce that is to-die-for!!

Steps:
- Preheat oven to 375F, spray a 2 to 3-quart casserole dish with cooking spray, and add the bread cubes; set aside.
- Pour the butter over the bread and toss to coat; set aside.
- To a medium bowl, add the eggs and lightly beat them.
- Add the milk, sugar, vanilla, cinnamon, salt, and stir to combine.
- Add the bananas and stir to combine (Note - use firm bananas so they hold their shape and don't fall apart while baking).
- Optionally stir in the raisins.
- Pour the wet mixture over the bread cubes and mix with your hands to toss and coat the bread evenly.
- Bake for about 45 to 50 minutes or until the top is lightly golden brown and there's no liquid pooling in the center. When the bread pudding is in the final 5 to 10 minutes of baking, make the sauce.
- To a medium sauce pan, add the butter and heat over medium heat to melt.
- Add the cornstarch to the butter and whisk to combine until disolved.
- Add the sugars, milk, corn syrup, salt, and whisk to combine. Cook and stir over medium-low heat until the mixture comes to a full boil. Boil for 1 to 1 1/2 minutes.
- Remove mixture from the heat and stir in the vanilla. Add the warm sauce over the warm bread pudding and serve immediately; you may have leftover sauce, which will keep airtight in the fridge for up to 2 weeks.

EFFORTLESS BANANA BREAD PUDDING
A tasty easy-to-make banana bread pudding perfect for dessert.

- Dice your loaf of bread into cubes and place in a large bowl.
- Add the bananas to a large bowl then mash, set aside. Then place the milk, eggs, sugar, vanilla, almond extract into a blender for a minute or so, or whisk all the ingredients with the mashed bananas mix very well. *If you blended the ingredients then combine with the mashed bananas and mix well.
- Add the liquid mixture to the diced bread, mix well using a spatula
- Spray non stick cooking spray onto a glass 9x13 baking dish. Pour mix into the glass baking dish. You can add chocolate chips if you would like all over. Place in the oven at 350F degrees for 45 minutes. Drizzle with melted chocolate and enjoy!

BANANA BREAD PUDDING

- Grease a 9x13" Casserole Dish and add the bread cubes.
- Measure ¼ Cup Evaporated milk and set aside for the caramel sauce.
- Add the remaining evaporated milk, 4 Tablespoons of melted butter, eggs, sugar, 2 teaspoons vanilla, cinnamon, nutmeg and salt to a mixing bowl or jug and mix well.
- Pour all over the bread cubes and stir to make sure it's evenly coating the bread.
- Slice 3 bananas and stir into the bread mixture. Set aside for 20 minutes to allow to soak into the bread.
- Preheat oven to 350°F.
- Place the casserole dish into the oven and bake for about 50 minutes. When you see the top start to become golden brown and the middle is not jiggly any more then the pudding is done.
- Remove from the oven and allow to cool a little.
- Add the brown sugar, remaining butter, vanilla and evaporated milk to a measuring jug and heat in the microwave in 20 second intervals, stirring inbetween until the sauce has bubbled and the sugar has dissolved.
- Serve the banana bread pudding with slices of banana on top and caramel sauce poured over.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass baking dish with nonstick spray.
- Break banana bread, including heels, into 1-inch pieces. Place in the prepared dish.
- Pour condensed and evaporated milks into a 4-cup measure. Add enough regular milk to make 4 cups. Pour this into a large bowl.
- Add eggs, 1/4 cup sugar, vanilla, and cinnamon and stir briskly until well blended.

BOOZY BANANA BREAD PUDDING
A nice alternative to traditional bread pudding. I'm not a huge fan of bread pudding but this was good. I think that coconut rum would be wonderful in this dish.

Steps:
- Cut the bread into cubes, place in a bowl and pour the milk on it, put aside for an hour.
- Preheat oven to 325 degrees F.
- Grease 9 x 13 inch baking dish.
- In a separate bowl mix the eggs, sugar and vanilla essence.
- Pour this mixture onto the bread mixture.
- Next add the mashed bananas and raisins.
- Now add the rum, cinnamom and ground nutmeg.
- Pour this mixture into the prepared baking dish and bake in the oven for 1 hour.
- Let cool before serving.

SWEET BANANA BREAD
My mom gave me this recipe and it's nice and sweet. I normally use three medium-large sized bananas. Nuts can be added, if desired.

- In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.
- Add flour mixture and mashed bananas alternately to creamed mixture, beating until smooth after each addition. Fold in nuts if desired. Pour batter into a lightly greased 8x4 inch loaf pan.
- Bake in a cold, (non-preheated) oven set to 350 degrees F (175 degrees C). Bake for 50 minutes, then cover with foil to prevent burning and bake for additional 10 to 20 minutes or until toothpick inserted into the crown comes out clean. Leave in pan for 10 minutes, then remove from pan and cool.
