Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large mixing bowl combine the oats and banana and mash banana and mix until well incorporated.
  • Add additional ingredients should you desire.
  • Bake for 12 minutes.
  • Enjoy!

In an effort to find clean, healthy treats, I fell upon a few recipes about a year ago that inspired me. So I started playing around with ingredients and tweaking it each time. I finally produced something that my kids and husband love. In fact, I make a batch at least two times a week. I call them breakfast cookies because they are healthy enough to eat in the morning! No sugar added, naturally sweetened with honey and chocolate chips to lure the kids. No preservatives or additives, just wholesome goodness!

cooking spray
2 cups rolled oats
1 cup whole wheat pastry flour
¼ cup flax seed meal
2 ½ teaspoons ground cinnamon
½ teaspoon sea salt
1 teaspoon baking soda
1 cup honey
2 egg whites
4 teaspoons almond butter
½ teaspoon vanilla extract
4 ounces semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray 2 baking sheets with cooking spray.
  • Whisk oats, pastry flour, flax meal, cinnamon, salt, and baking soda together in a large bowl. Stir honey, egg whites, almond butter, and vanilla extract into oats mixture until dough is well-blended; mix in chocolate chips. Scoop dough into 36 balls and place on prepared baking sheets.
  • Bake in the preheated oven until lightly golden and set, 8 to 10 minutes. Cool on the baking sheet for 10 minutes, lightly loosen each cookie from the baking sheet, and continue cooling on the baking sheets for another 10 minutes.

1/3 cup whole wheat flour
1/3 cup wheat bran (actually not quite 1/3 cup, shake a little out)
1/8 teaspoon baking soda
1/4 teaspoon baking powder
1 tablespoon brown sugar (I actually use splenda, but it's just a preference)
1 pinch dried cranberries or 1 pinch chocolate chips
water

Steps:

  • Preheat oven to 350 (F).
  • Mix dry ingredients together.
  • Add enough water to make a thick (think traditional chocolate chip cookie) batter.
  • Spoon onto pan and cook for 10 minutes.
  • WARNING: these will rise when they are cooking but will only brown on the bottom due to the fiber content; so trust me when I say cook for about 10 minutes. don't burn them !
  • Serve with coffee, tea, or milk.

  • Combine all of the ingredients into a large bowl of a stand mixer (or use a hand mixer). Mix until all of the ingredients are combined. The dough is thick and heavy.
  • Using a 1/4 cup measuring cup, portion 1/4 cup mounds of cookie dough onto prepared cookie sheet. Use the back of a spoon to slightly flatten out into a cookie shape. (The cookies will not spread in the oven.)
  • Bake for 16-18 minutes or until the edges are slightly brown. Cool cookies on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely.
