NOVAK FAMILY CUCUMBER SALAD



Novak Family Cucumber Salad image

A recipe that my mother made frequently in the summer. It's a nice light salad when it's hot outside.

1 onion, finely chopped
3 cucumbers, thinly sliced (peeled or not)
1/2 teaspoon salt
1 dash black pepper
dill, to taste
parsley
1/3 cup sugar
1/4 cup oil
1/2 cup white vinegar or 1/2 cup cider vinegar

Steps:

  • Mix together onion, cucumber, salt, pepper, dill, and parsley.
  • In a separate bowl, combine sugar, oil, and vinegar. Pour over cucumber mixture. Toss.
  • Marinate several hours in the refrigerator before serving.

1 English cucumber, sliced into1/8-inch-thick rounds
1/2 medium red onion, thinly sliced

Steps:

  • In a large bowl, whisk to combine the sour cream, vinegar and dill. Add the cucumber and red onion, season with salt and pepper and toss to combine.
  • Serve immediately or cover with plastic wrap and refrigerate for up to 1 week.

Traditional cucumber salad served along fish in Norway. Goes well with dishes like pan fried mackerel, fish cakes, and poached salmon. Combine the vinegar, oil, herbs, sugar, salt, and pepper in a bowl. Mix well. Thinly slice cucumbers and add to the vinegar mixture. Let stand for an hour before serving.

Dad's Creamy Cucumber Salad image

This was my dad's recipe for creamy cucumber salad. It's one of our family's all-time summer favorites.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, onion, and salt together in a bowl. Cover with plastic wrap and let sit for 15 to 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink. Let drain, stirring occasionally, until most of the liquid and salt has drained, 15 to 30 minutes. Transfer drained cucumber mixture to a large bowl.
  • Whisk mayonnaise, vinegar, sugar, dill, garlic powder, and pepper for dressing together in a bowl until smooth. Pour over cucumber mixture and stir until coated.
  • Cover with plastic wrap and refrigerate for 1 to 2 hours before serving.
