Italian Noodle Casserole - this was a HUGE hit in our house. Everyone cleaned their plates and asked for seconds! Even the picky eaters!! Hamburger, garlic, oregano, onion, Worcestershire sauce, tomato sauce, egg noodles, cream cheese, cottage cheese, sour cream, mozzarella and cheddar cheese. Can freeze for later. It is definitely going into the dinner rotation!

1 lb ground beef
1 garlic clove, (crushed)
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano
2 Tbsp dried onion flakes
2 tsp Worcestershire sauce
1 tsp sugar
2 (8-oz) cans tomato sauce
1 (8-oz) package medium egg noodles
1 (8-oz) package cream cheese, softened
1 cup sour cream
1 cup cottage cheese
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
  • Cook the ground beef in a skillet until no longer pink. Drain. Add garlic, salt, pepper, oregano, onion flakes, Worcestershire sauce, sugar and tomato sauce. Simmer for 10 to 15 minutes.
  • Cook egg noodles according to package directions. Drain and set aside.
  • Combine cream cheese, sour cream and cottage cheese until smooth.
  • Combine cooked noodles and cream cheese mixture. Spread in bottom of prepared pan. Top noodle mixture with meat sauce. Top casserole with mozzarella and cheddar cheese.
  • Bake uncovered for 30 minutes, until bubbly.

1 tablespoon olive oil
2 cups shredded Colby cheese, divided
2 cans (15 ounces each) tomato sauce
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) Italian stewed tomatoes
1 can (10-3/4 ounces) condensed tomato soup, undiluted
2 teaspoons Italian seasoning
2 teaspoons dried parsley flakes
1/8 teaspoon each onion salt, garlic salt and pepper
2 tablespoons grated Parmesan cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Meanwhile, cook noodles according to package directions; drain. In a large bowl, combine the beef, noodles, oil, 1-1/2 cups Colby cheese, tomato sauce, beans, tomatoes, soup and seasonings., Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 30 minutes. Sprinkle with Parmesan cheese and remaining Colby cheese. Bake, uncovered, for 5-10 minutes longer or until cheese is melted.

1 cup mostaccioli, uncooked
1/2 lb. lean ground beef
1 small green pepper, chopped
1 small onion, chopped
1 can (14.5 oz.) diced tomatoes, undrained
1/2 cup water
1 can (6 oz.) tomato paste
1/4 tsp. black pepper
1 lb. (16 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Heat oven to 350ºF.
  • Cook pasta as directed on package, omitting salt. Meanwhile, brown meat with green peppers and onions in large skillet. Add tomatoes, water, tomato paste and black pepper; mix well.
  • Layer half each of the pasta. meat sauce and VELVEETA in 13x9-inch baking dish; repeat layers.
  • Bake 30 min. or until heated through.

Nonstick cooking spray
3 cups pasta
1 cup shredded mozzarella
3 chopped scallions
Chopped bacon
2 large eggs
1/2 cup milk
1/4 cup Parmesan cheese
1 (14.5-ounce) can chopped tomatoes, drained
1 tbsp. extra virgin olive oil
1 tbsp. chopped fresh basil
Kosher salt, to taste
Black pepper, to taste

Steps:

  • Heat oven to 350 degrees F. Spray a 9-inch pie dish with cooking spray.
  • Mix the reserved pastas together with half the mozzarella, scallions, and the reserved bacon. Pat the pasta mixture into the pie dish. Whisk the eggs with the milk, half the Parmesan cheese, and salt and pepper to taste. Pour egg mixture over the pasta and sprinkle with the remaining mozzarella and Parmesan cheese. Place dish on a baking sheet and bake until set and the top is browned and bubbling, about 30-35 minutes. Allow to rest for 15 minutes before serving.
  • While the pie is baking, make the sauce: Combine the tomatoes, olive oil, basil, and salt and pepper to taste. Spoon the sauce over slices of the Noodle Pie.
  • TIP: Tossing the eggs in the heated pan will help to cook the eggs, and will also keep them from scrambling, resulting in a creamy delicious sauce.

1 onion, chopped
1 (28 ounce) can whole peeled tomatoes, chopped
1 (6 ounce) can tomato paste
1 teaspoon salt

8 ounces wide egg noodles
1 (12 ounce) package process sharp cheddar cheese singles

Steps:

  • In large skillet, brown ground beef and onion. Stir in tomatoes, tomato paste, salt, parsley, garlic salt and pepper, and simmer over low heat for 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

This recipe is so easy and so yummy. We have it often at my house on those busy weeknights when I'm just too tired to get crazy in the kitchen. I usually serve this dish with cottage cheese and garlic bread as sides. It's my 16 year-old, pasta-loving son's favorite! We hope you'll love it too! OPTIONAL: You can add 1 pound of browned and drained hamburger or Italian sausage or throw in some pepperoni slices if your family likes it meaty!

1 (26 ounce) jar of your favorite spaghetti sauce
1 (26 ounce) sauce jar filled with water (and a splash of red wine if you like)
1 (15 ounce) can tomato sauce
16 ounces ziti pasta or 16 ounces rigatoni pasta, uncooked
2 teaspoons italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon ground oregano
8 ounces shredded mozzarella cheese (Italian-blend is tasty)

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Melt butter in a skillet over medium heat. Add celery and onion and saute until soft, about 5 minutes. Add garlic and saute until fragrant, about 1 minute, being careful it doesn't burn.
