NUTELLA MOCHA
Hazelnut, chocolate and coffee - what can I say... I used rice milk in this, but of course you can use any kind of milk. Also I used 85 % chocolate and for sweetener rice syrup but tried one batch with honey for DH as well. He loved the honey flavor, so I'll post it with honey. As the rice milk already is sweet, one tablespoon sweetener was plenty, but if you prefer sweeter, increase sweetener to taste.

Steps:
- Brew espresso.
- In a saucepan, combine all ingredients including brewed espresso. Slowly bring to a boil, stirring constatly, then reduce heat and simmer for 1 minute, still stirring.
- Pour the hot mix into blender and blend on high for 5 seconds.
- Serve, maybe garnished with whipped cream.
- Enjoy!

- Preheat the oven to 400 degrees F (200 degrees C). Line 14 muffin cups with paper liners and set aside.
- Combine sugar and butter in a large bowl; beat until creamy. Dissolve espresso powder in hot water. Add to the butter mixture along with the yogurt, eggs, and vanilla. Mix well.
- Whisk flour, cocoa powder, baking powder, and salt together. Fold into the wet ingredients just until combined. Do not overmix.
- Divide 1/2 of the batter evenly among the prepared muffin cups, filling only halfway. Drop a heaping teaspoon of chocolate-hazelnut spread in the center of each. Top with the remaining batter.
- Bake in the preheated oven until the center springs back lightly touched with your finger, 15 to 18 minutes. Cool for 10 minutes in the pan before transferring muffins to a cooling rack to cool completely.

MOCHA SHORTBREAD WITH NUTELLA
This recipe is from the brown eyed baker blog. The cookies have a big mocha flavor. The directions call for rolling the dough out and cutting the cookies wit a cookie cutter. To save time, I made an approx. 1"-2" wide log of the dough, refrigerated it for a couple of hours and then sliced the log into 1/4" rounds. The cookies were probably not as pretty as they would have been if I used a cookie cutter but for me it was worth the time saved. Be sure to leave space between the cookies on the cookie sheet. They do spread a little while cooking.

Steps:
- In a mixing bowl, cream butter, sugars, vanilla extract and instant espresso granules.
- In a medium bowl, sift together the flour, cocoa powder and salt.
- Gradually mix the flour mixture into the butter mixture until fully incorporated.
- Cover bowl and refrigerate for one hour.
- On a lightly floured surface, roll dough out to 1/4" thickness. Cut with floured 2-inch to 3-inch cookie cutters. Place cookies 2 inches apart on partchment lined baking sheets.
- Bake at 300 degrees F for 20 minutes or until set. Remove to wire racks to cool.
- Once cookies are completely cooked, sandwich them bottom sides together with your desired amount of Nutella.

- In a large saucepan, heat cream over medium heat until bubbles form around sides of pan (do not boil). Remove from the heat; whisk in the chocolates, nutella, liqueur, espresso powder and salt until smooth. Return to the heat; cook and stir until heated through. If desired, dip rim of mug into additional Nutella then hazelnuts. Pour drinking chocolate into mugs; top with whipped cream and drizzle with additional liqueur if desired.

- Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in melted chocolate and vanilla. In another bowl, whisk flour, espresso powder, baking soda, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition., Transfer batter to prepared pans. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., For frosting, in a large bowl, beat butter and Nutella until blended. Gradually beat in confectioners' sugar, vanilla and enough milk to reach desired consistency., Place 1 cake layer on a serving plate; spread with 1 cup frosting. Sprinkle with 1/4 cup hazelnuts. Top with remaining cake layer. Frost top and sides with remaining frosting. Sprinkle with remaining hazelnuts.
