New York Strip Steak with Garlic Butter image

This New York strip steak is seared steak that's cooked to golden brown, then topped with a garlic and herb butter. An easy dinner recipe that tastes like it came from a steakhouse, but can be made in the comfort of your own home.

4 New York strip steaks (8-10 ounces each)
1 1/2 tablespoons neutral flavored oil (such as corn oil, safflower oil, canola oil, grapeseed oil or peanut oil)
salt and pepper to taste
4 tablespoons butter
4 garlic cloves (smashed)
5 sprigs fresh thyme

Steps:

  • Let the steaks sit at room temperature for 20 minutes.
  • Preheat the oven to 450 degrees F. Season the steaks on both sides with salt and pepper to taste.
  • Heat a heavy pan such as a cast iron skillet over high heat.
  • Add the oil to the pan. Place the strip steaks in the pan in a single layer.
  • Cook for 3-4 minutes per side or until deep golden brown.
  • Add the butter to the pan. After the butter has melted, add the garlic cloves and thyme sprigs to the pan. Stir to combine.
  • Spoon the butter mixture over the steaks. Insert a probe thermometer into the thickest part of one of the steaks.
  • Place the meat in the oven and bake for 5-7 minutes or until the thermometer registers 140 degrees F for a medium steak.
  • Remove the pan from the oven. Let the steak rest for 5 minutes. Spoon the pan drippings over the steak, then slice and serve immediately.

1 cup dry red wine
1 sprig fresh rosemary, plus 2 teaspoons chopped
2 sticks unsalted butter, at room temperature
1 teaspoon kosher salt
3 tablespoons olive oil, plus more for drizzling
1 tablespoon finely chopped fresh rosemary
1 tablespoon kosher salt
2 cloves garlic, minced
Four 6-ounce boneless NY strip steaks
2 lemons, halved

Steps:

  • For the red wine-rosemary butter: Place the wine and the rosemary sprig in a small saucepan over medium heat. Bring to a boil, then lower the heat and simmer until the wine has reduced to a syrup and measures approximately 2 tablespoons, about 20 minutes. Let cool to room temperature before removing and discarding the rosemary sprig. Place the butter, the chopped rosemary and the salt in a food processor and pulse to combine. Add the wine syrup and process until fully integrated, about 1 minute. Set aside.
  • For the strip steak: Preheat a grill or grill pan to high heat. In a small bowl, combine the olive oil, rosemary, salt and garlic, and rub the mixture all over the steaks. Place the steaks on the grill and sear for 4 minutes without moving to form a golden brown crust. Flip the steaks and sear on the reverse side until crusty on the outside and medium-rare at the center, another 3 minutes. Remove the steaks to a plate and let rest for 10 minutes.
  • Meanwhile, drizzle about 1 teaspoon olive oil over the lemon halves and place them, cut side down, on the grill. Grill until charred and fragrant, 3 minutes.
  • To serve: Transfer each steak to a plate and top with a dollop of red wine butter and a squeeze of the charred lemon.

2 to 3 boneless New York Strip Steaks, 3/4 to 1 inch thick (about 2 ½ pounds total)
2 tablespoons olive oil
3 tablespoons butter
Salt and black pepper, to taste
1 sprig of fresh rosemary
1 bunch fresh thyme
2 to 3 cloves garlic, peeled and smashed

Steps:

  • Season the steaks with salt and pepper on both sides. Allow the steaks to come to room temperature.
  • Preheat the cast-iron skillet over medium-high heat.
  • Once the skillet is hot, add the olive oil to the hot pan, then the steaks.Still, over medium-high heat cook for about 2 ½-3 minutes on each side. Position the steak on the side to sear the sides of the steak. This allows you to get a nice sear but still have an inside that is partially rare.
  • After searing the steak, add the butter, garlic, rosemary, and thyme to the skillet.
  • As the butter melts, spoon the butter over the steak. Continue cooking for 2 to 3 minutes or until you reach the desired doneness.
  • Remove the steak from the skillet and set aside for 5 to 10 minutes before serving. You can cover it with foil while it rests.
  • Once rested, cut the steak into slices against the grain of the meat. Serve with your choice of sides. Enjoy!

  • Prepare the beef: Dry the steaks with a paper towel and let them sit in room temperature for 20 minutes before crackling a generous amount of both salt and pepper on all sides. Rub the seasonings into the meat.
