olive oil cooking spray
4 skinless, boneless chicken strips
1 (10.5 ounce) can chicken gravy
1 (10.5 ounce) can cream of chicken soup
1 cup evaporated milk
1 cup sage and onion stuffing mix (such as Pepperidge Farm®)
½ cup minced onion
2 teaspoons minced garlic
¼ teaspoon celery seed
1 pinch ground black pepper to taste
1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
½ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese

Steps:

Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
Heat a large skillet over medium heat. Spray lightly with cooking spray. Add chicken strips; cook until no longer pink in the center and the juices run clear, about 4 minutes per side. Cut into cubes.
Transfer chicken to a large bowl. Add chicken gravy, cream of chicken soup, evaporated milk, stuffing mix, onion, garlic, celery seed, and black pepper; mix until combined.
Spread frozen potato nuggets in the bottom of the prepared pan. Pour chicken mixture evenly on top. Sprinkle mozzarella cheese and Cheddar cheese on top.
Bake casserole in the preheated oven until golden and bubbly, about 45 minutes.

1 bag (24 oz) frozen broccoli, carrots, cauliflower and cheese-flavored sauce
2 cups diced cooked chicken
4 medium green onions, chopped (1/4 cup)
4 cups frozen potato nuggets (from 2-lb bag)
1/2 cup finely shredded Cheddar cheese (2 oz)

Steps:

Heat oven to 375°F. In ungreased 11x7-inch (2-quart) glass baking dish, place broccoli, carrots, cauliflower and cheese sauce. Microwave uncovered on High 3 to 5 minutes, stirring once, until thawed. Stir well until cheese sauce is melted.
Stir chicken and 3 tablespoons of the onions into vegetable-cheese mixture. Top with frozen potato nuggets.
Bake uncovered 40 to 45 minutes or until bubbly around edges and potato nuggets are golden brown. Sprinkle with cheese and remaining 1 tablespoon onion. Bake 5 to 10 minutes longer or until cheese is melted.

This is a simple throw-together dish I came up with that is great for a Sunday after-church meal. Note: You can fry your own bacon for this recipe. I like the taste of bacon but cannot handle the lingering smell it leaves in the house when you fry it, so I just buy the jarred bacon for the few times a year I use it.

1 (32 ounce) bag tater tots
0.5 (3 ounce) jar bacon bits (I used Hormel brand)
5 boneless skinless chicken breasts
1 1/2 cups grated colby cheese
1 1/2 cups grated monterey jack pepper cheese
3/4 cup milk
salt and pepper

Steps:

Grease the bottom of the crock pot.
Layer 1/2 the tater tots on the bottom of the pot.
Sprinkle with 1/4 of the jar of bacon bits.
Combine the two cheeses, and sprinkle 1/3 of it over the bacon and tots.
Top cheese with the chicken breasts.
Sprinkle chicken with salt and pepper to taste.
Top chicken with another 1/3 of cheese.
Sprinkle with another 1/4 of the jar of bacon bits.
Add remainder of the tater tots.
Top with final 1/3 of the cheese.
Pour milk over the top.
Set crock pot to high and cook 3-4 hours.

2 pounds ground beef
1 large onion, chopped
1 pound sliced fresh mushrooms
3 garlic cloves, minced
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound frozen cut green beans
1 bag (32 ounces) frozen Tater Tots
1 cup shredded cheddar cheese

Steps:

In a large skillet cook beef over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles; drain and transfer to a 5-qt. slow cooker. Add onions and mushrooms to skillet; cook over medium-high heat until vegetables are tender, 8-10 minutes. Add garlic; cook 1 minute longer. Stir in condensed soup, salt and pepper. Place vegetable mixture in slow cooker; add green beans and stir to combine. Top with Tater Tots and cheese. , Cook, covered, on low 6 hours. Let stand, uncovered, 15 minutes before serving.
