1/2 cup butter, cubed
1/3 cup honey
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups square oat cereal
1-1/2 cups old-fashioned oats
1 cup chopped walnuts
1/2 cup dried cranberries
1/2 cup chocolate-covered raisins

Steps:

  • In a large saucepan, combine the first five ingredients. Cook until butter is melted and sugar is dissolved; stir until smooth. , In a large bowl, combine the cereal, oats and nuts. Drizzle with butter mixture; toss to coat. , Transfer to a greased 15x10x1-in. baking pan. Bake, uncovered, at 275° for 45 minutes, stirring every 15 minutes. Cool for 15 minutes, stirring occasionally. Stir in cranberries and chocolate-covered raisins. Store in an airtight container.

Wonderful homemade chewy snack bars ready with maple-flavored syrup, peanut butter, quick-cooking oats and dried cranberries - perfect for a dessert.

1/2 cup butter or margarine
2/3 cup firmly packed brown sugar
2/3 cup maple-flavored syrup
2/3 cup crunchy peanut butter
1 teaspoon vanilla
3 cups quick-cooking oats
1 cup wheat germ
1 cup graham cracker crumbs
1 cup cherry- or orange-flavored sweetened dried cranberries

Steps:

  • Grease bottom and sides of 13x9-inch pan with shortening. Melt butter in 2-quart saucepan over medium heat. Stir in brown sugar and maple syrup; heat to boiling. Boil 1 minute, stirring frequently; remove from heat. Stir in peanut butter and vanilla until mixture is smooth.
  • Stir remaining ingredients into peanut butter mixture, mixing well. Press evenly in pan. Cover and refrigerate about 2 hours or until firm. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

This recipe came from the February/March 2003 issue of Taste of Home's Light and Tasty. I really have enjoyed this recipe and the ease of preparation. Also, very economical to have on hand. Those small packets of pre-flavored oatmeal do get pricey. 3 points per serving.

6 cups quick-cooking oats
1 1/3 cups nonfat dry milk powder
1 cup dried apples or 1 cup other dried fruit
1/4 cup sugar
1/4 cup brown sugar, packed
1 teaspoon salt
1 tablespoon ground cinnamon
1/4 teaspoon ground cloves
8 cups water, 1/2 cup per serving

Steps:

  • In a large bowl, combine the first eight ingredients.
  • Store in an airtight container in a cool dry place for up to 6 months.
  • Yield 8 cups total.
  • To prepare oatmeal: Shake mix well and measure out oatmeal into bowl, add water, and microwave for 3 minutes.
  • Or on a stove top, in a saucepan, bring water to a boil; slowly stir in 1/2 cup mix.
  • Cook and stir over medium heat for 1 minute.
  • Remove from the heat.
  • Cover and let stand for 1 minute or until oatmeal reaches desired consistency.

1 cup whole almond
1/2 cup sliced almonds
1/2 cup dried cranberries

Steps:

  • Combine butter, honey, sugar, cinnamon, and salt over low heat until butter melts and sugar is dissolved.
  • In large bowl combine cereal, oats, and nuts.
  • Drizzle with butter mixture and mix well.
  • Place in a 15x10x1 pan and bake uncovered at 274 for 45 minutes, stirring every 15 minutes. Allow to cool and stir in cranberries.
