2 tablespoons butter
1 cup chopped fresh apple (with skin)
2 tablespoons brown sugar
1 cup quick-cooking oats
1 cup apple cider
1 cup milk
2 teaspoons ground cinnamon
¼ teaspoon salt

Steps:

  • Melt butter in a saucepan over medium heat. Add apple and brown sugar. Cook, stirring occasionally, for 5 minutes.
  • Stir in oats, apple cider, milk, cinnamon, and salt and cook, stirring frequently, until oatmeal is creamy and thickened, about 3 minutes.

2 cups all-purpose flour
1/2 cup oatmeal
6 tablespoons sugar
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons cold unsalted butter
1/2 cup dried cranberries
3/4 cup buttermilk

Steps:

  • Preheat the oven to 375 degrees F.
  • In a bowl, combine the flour, oatmeal, sugar, baking powder, baking soda, and salt. Using a pastry blender, cut the cold butter into the dry ingredients until the dough is crumbly. Fold in the cranberries. Add the buttermilk and stir lightly with a wooden spoon until the dough comes together to form a ball. (The dough will be sticky, but resist the temptation to overwork it.)
  • On a lightly floured surface, pat the dough into a large circle about 2 inches thick. Cut the dough into wedges. With a spatula, transfer the wedges to a baking sheet lined with parchment and bake for 22 minutes, or until the edges are lightly browned. Cool on a wire rack. Best served warm and on the day they are made.

Steps:

  • Preheat oven to 425 degrees; spray a baking sheet with nonstick cooking spray. In a large bowl, combine the flour, oats, sugar, baking powder, salt, baking soda and cinnamon. Add ½ cup applesauce and the margarine; cut in with a pastry blender or fork until the mixture resembles coarse crumbs. Stir in the cranberries and apple. In a small bowl, combine the milk and ¼ cup honey. Add to the flour mixture; stir together until the dough forms a ball. Turn the dough out onto a well-floured surface; knead 10 to 12 times. Pat the dough into an 8-inch circle. Place on the baking sheet. Use the tip of a knife to score the dough into 12 wedges. In another small bowl, combine the remaining ¼ cup applesauce and 2 tablespoons honey. Brush the mixture over the top of the dough. Bake for 12 to 15 minutes, or until lightly browned. Immediatley remove from the baking sheet; cool on a wire rack for 10 minutes. Serve warm or cool completely. Cut into 12 wedges.

1-1/3 cups quick-cooking oats
1 teaspoon ground cinnamon

2 teaspoons honey
1 teaspoon vanilla extract

Steps:

  • In a saucepan, combine apple, apple juice, oats, cinnamon and salt. Bring to a boil; boil for 1 minute, stirring occasionally. Remove from the heat; stir in raisins, honey and vanilla. Cover and let stand for 5 minutes.

1/2 cup peeled chopped apple
1/4 cup skim milk
1/4 cup honey, plus
2 teaspoons honey, divided

Steps:

  • Combine first seven ingredients (flour through cinnamon) in large bowl.
  • Add ½ cups applesauce and butter; cut in with pastry blender until mixture resembles coarse crumbs.
  • Stir in cranberries and apple.
  • In small bowl combine milk and ¼ cups honey; add to flour mixture and stir until dough forms ball.
  • Knead dough 10-12 times on floured surface; pat into 8-inch circle and place on sprayed baking sheet.
  • Use sharp knife to cut dough into 12 wedges, and separate wedges slightly.
  • Combine remaining applesauce and honey, and brush over top of dough.
  • Bake 12-15 minutes at 425 degrees, or until lightly browned; remove from baking sheet and cool on wire rack.

½ cup orange-cranberry muffin mix (such as Krusteaz®)
¼ cup packed brown sugar
1 tablespoon baking powder
¼ teaspoon ground nutmeg
¼ teaspoon salt
5 tablespoons butter, chilled and diced
1 apple, diced
⅓ cup sweetened dried cranberries (such as Craisins®)
¾ cup half-and-half
1 egg
1 egg white
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
  • Whisk flour, muffin mix, brown sugar, baking powder, nutmeg, and salt together in a bowl. Cut butter into flour mixture using a pastry blender or fork until it resembles coarse crumbs.
