- Line baking sheets with parchment paper. Preheat oven to 350° F.
- In a medium bowl, combine the raisins, chopped apple pieces, apple juice, and lemon juice. Set aside for 20 minutes.
- In a large mixing bowl, whisk together both flours, oats, baking soda, baking powder, salt, and cinnamon. Set aside.
- In the bowl of a stand mixer, using the paddle attachment cream together the butter and brown sugar until fluffy.
- Beat in the egg, egg yolk, and vanilla.
- Mix in half of the flour mixture.
- Stir in the raisins and apples.
- Add the remaining flour mixture and mix to combine.
- Use a medium (1 1/2 tablespoon) cookie scoop to portion the oatmeal cookie dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 10-14 minutes or until golden brown around the edges.
- Remove from the oven and allow to cool on the baking sheet before transferring to wire racks to cool completely.

- Preheat oven to 375℉ (190℃). Combine oats, flours, brown sugar, baking powder, baking soda, salt and cinnamon in medium bowl. Stir in raisins and apples. In a large bowl, combine egg, honey, oil and milk. Stir in dry ingredients. Mix to form a smooth batter. Drop batter by rounded teaspoon onto cookie sheet lined with parchment paper or coated with cooking spray, leaving 2 inches between each cookie. Dip fingers in water and press dough down to about 1½ inch diameter. Bake for about 15 minutes, or until lightly golden. Let cookies cool on the baking sheet for a few minutes. Transfer cookies to wire rack to cool completely.

- Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, whisk together flours, baking soda, nutmeg, salt, and pinch of cloves. - In large bowl, combine oats, brown sugar, cinnamon, nutmeg and salt.
- In small bowl, whisk together milk, egg and vanilla. Add the milk mixture to the oat mixture and stir until combined.
