4 cups milk
1 cup blueberries
1 cup blackberries
1 cup strawberries
1/2 cup pecans (toasted )
1/2 cup almonds (toasted)
1/2 cup honey

Steps:

  • Gather all the ingredients for the recipe. The amount of berries and nuts can be adjusted according to your tastebuds.
  • Pour the milk into a saucepan with the old fashioned oats. Let the mixture simmer on low heat for about 20 minutes.
  • Divide the oatmeal pudding into individual serving bowls. Add the berries and nuts and drizzle the tops with honey. Enjoy!

The 7-year-old loves making breakfast, so creating a bacon, egg and cheese bread pudding was a no-brainer. "We make this on a Sunday afternoon and bake it Monday morning so my brother and I can have a filling breakfast during the school week," he says.

Butter or cooking spray, for the pan
1 pound bacon
8 large eggs
2 cups half-and-half
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 pound cheddar cheese, grated
2 loaves sliced Hawaiian sweet bread, end pieces and crusts removed, cut into 1-inch cubes
1/4 cup chopped fresh chives

Steps:

  • Grease a 9-by-13-inch baking dish with butter or cooking spray. Preheat the oven to 400˚ F. Line a baking tray with parchment paper and lay the bacon side by side on the pan. Cook the bacon for 18 to 20 minutes, or until crispy.
  • While the bacon cooks, prepare the other ingredients. Whisk together the eggs, half-and-half, salt and pepper in a large bowl. Grate the cheese, cube the bread and chop the chives, then add them all to the egg mixture. Crumble the bacon into the bowl with the other ingredients and gently fold to combine. Pour into the baking dish, cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350˚ F. Uncover the bread pudding and bake for 45 to 60 minutes, or until puffed and golden brown.

Butter, for greasing
1 tablespoon olive oil
1 medium yellow onion, minced
1 pound breakfast sausage, crumbled
10 large eggs
3 cups milk
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1 loaf day-old brioche or country white bread, cut into 1 1/2-inch cubes (about 12 cups)
2 cups shredded Cheddar (about 6 ounces)

Steps:

  • Grease a 9-by-13-inch baking dish with butter.
  • Heat the olive oil in a medium skillet over medium heat. Add the onions and saute until translucent, about 7 minutes. Add the sausage and brown, about 5 minutes. Remove the onions and sausage from the pan using a slotted spoon. Transfer to a shallow bowl and let cool to room temperature.
  • In a large mixing bowl, whisk the eggs, milk, salt, pepper and garlic powder. Stir in the bread, cooked sausage mixture and cheese. Pour the mixture into the prepared baking dish and cover with foil. Let the dish sit in the refrigerator for at least 1 hour and up to overnight.
  • Preheat the oven to 350 degrees F.
  • Bake, still covered with foil, for about 50 minutes. Remove the foil and return the baking pan to the oven. Bake to brown the top of the bread pudding, about 10 minutes more. Serve immediately.

3/4 cup oatmeal
4 large eggs, beaten
2 1/2 cups 1% milk
1/2 cup sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon or nutmeg
1/2 cup dried currants, optional

Steps:

  • Fill 9" by 14" cooking dish 1/2 to 2/3 full with cubed day-old bread. Add oatmeal and combine with bread cubes. In a separate bowl, beat eggs and mix with milk, sugar, vanilla and nutmeg. Add to bread/oatmeal mixture until dry ingredients are moistened; add dried currants. Bake at 350 degrees F until pudding has risen high and is medium brown, about 1 hour plus. It will rise like a souffle, and fall as it cools.

1 1/4 cups unsweetened applesauce
1/3 cup canola oil
1/4 cup whole milk
1 1/4 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg, freshly grated
1 pinch ground cloves
1/2 cup dried apricot, diced (or figs, apples, moist, plum dark or golden raisins)
1 cup old fashioned oats

Steps:

  • Center a rack in the oven and preheat the oven to 350 degrees F. Butter a 9-x-5-inch loaf pan, dust the inside with flour and tap out the excess.
  • Put the pan on a baking sheet.
  • In a small bowl, using your fingers, toss together the sugar, nuts and cinnamon until evenly mixed. Set aside.

3/4 cup firmly packed brown sugar
3/4 cup raisins or 3/4 cup dried cranberries

3 1/3 cups skim milk
1/2 cup egg substitute or 2 -3 eggs, beaten
1 tablespoon vegetable oil

4 slices whole wheat bread
1 cup rolled oats
2 ½ cups lowfat milk
¼ cup butter, softened
4 ripe bananas, sliced
