Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl beat the butter or margarine, white sugar and brown sugar together. Add the eggs and vanilla, beating well.
- Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown.

OATMEAL BUTTERSCOTCH SCOTCHIES
Steps:
- Preheat oven to 375F.
- In a small bowl, combine flour, baking soda, salt, and cinnamon. Whisk to combine.
- Using your electric mixer, beat sugar, brown sugar, margarine (or butter), eggs and vanilla extract. Beat until smooth. Slowly add in the flour mixture.
- Add the morsels and quick oats. Stir to combine.
- Take approximately one tablespoon of dough and roll between the palms of your hands in order to roll the dough into a ball. Place on your baking sheet or baking stone.
- Bake for 7-8 minutes for chewy or 9-10 minutes for crispy cookies. Enjoy!
- Notes: I use margarine when baking cookies as it makes the cookies more moist. I also prefer to bake cookies on a baking stone as it cooks the cookies evenly and helps prevent burning.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, mash the butter, white sugar, and brown sugar together until smooth and creamy, and beat in the eggs to make a creamy mixture. Gradually beat in the flour mixture, rolled oats, and 1 1/2 cup of butterscotch chips.
- Press the dough into the prepared baking dish, and sprinkle the top with remaining 1/2 cup of butterscotch chips.
- Bake in the preheated oven until the top is golden brown, 30 to 35 minutes. Allow to cool in the pan before cutting into bars and serving.

One of our families favorite cookies. I often bake these to take to different events and am always asked for the recipe since they are such a different cookie from the standard cookie.

Steps:
- Preheat oven to 375 degrees F.
- Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
- Beat butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.
- Gradually beat in flour mixture.
- Stir in oats and morsels.
- Drop by rounded Tablespoonfuls onto an ungreased baking sheet.
- Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies.
- Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
- Pan Cookie Variation: Grease 15x10-inch jelly-roll pan.
- Prepare dough as above.
- Spread in prepared pan.
- Bake for 18 to 22 minutes or until lightly browned.
- Cool completely in pan on wire rack.
OATMEAL BUTTERSCOTCH BARS
The first time I made this I ate the whole pan. The second time I made this I ate the whole pan. The third time I made this I told my friends to keep me away from the darn pan and they ate the whole thing. Now we are all really fat and I need 3 new baking pans... =)

Steps:
- Preheat oven to 350°F.
- Grease a 9x13 pan with butter.
- Combine flour, soda, salt and cinnamon.
- In a large mixing bowl cream butter, then add sugar and mix until fluffy.
- Add eggs and vanilla and beat well.
- Gradually add flour mixture.
- Stir in oatmeal and the butterscotch chips.
- Spread in prepared pan and bake for 22 to 28 minutes.
- If they seem to be getting to brown on the edges, and are still quite gooey in the center lower the oven temp to 325°F for the last 10 minutes or so.

- Beat the butter, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter mixture until completely blended; beat the vanilla into the mixture with the last egg.
- Whisk the flour, baking soda, cinnamon, and salt together in a separate bowl. Beat the flour mixture into the butter mixture about 1/2 cup at a time. Fold the rolled oats and butterscotch chips into the resulting dough. If the dough isn't firm enough, mix in more rolled oats, about 1/4 cup at a time, until dough is of desired consistency.
- Refrigerate the dough for 1 to 2 hours before baking.
- Preheat oven to 350 degrees F (175 degrees C).
- Scoop up dough by heaping tablespoonful and roll into balls. Place cookies about 2 inches apart on baking sheets.
- Bake in the preheated oven until very lightly browned and cookies are set in the middle, 10 to 12 minutes. Allow cookies to cool for about 5 minutes before removing from baking sheets to finish cooling on wire rack.

- In the bowl of a stand mixer, cream together the butter, brown sugar and granulated sugar until fluffy and smooth, about 1 minute. Add in the eggs, one at a time, beating well after each addition. Cookies may appear slightly underdone when you pull them out; this is normal as they will continue to set up as they sit on the pans.
