Categories     Dessert

Time 20m

Number Of Ingredients 11

1 1/4 Cup All Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 Teaspoon Cinnamon
1 Cup Margarine (or butter), softened
3/4 Cup Granulated Sugar
3/4 Cup Packed Brown Sugar
2 Large Eggs
1 Teaspoon Vanilla Extract
2 Cups Quick Oats
1 Package Butterscotch Morsels

Steps:

  • Preheat oven to 375F.
  • In a small bowl, combine flour, baking soda, salt, and cinnamon. Whisk to combine.
  • Using your electric mixer, beat sugar, brown sugar, margarine (or butter), eggs and vanilla extract. Beat until smooth. Slowly add in the flour mixture.
  • Add the morsels and quick oats. Stir to combine.
  • Take approximately one tablespoon of dough and roll between the palms of your hands in order to roll the dough into a ball. Place on your baking sheet or baking stone.
  • Bake for 7-8 minutes for chewy or 9-10 minutes for crispy cookies. Enjoy!
  • Notes: I use margarine when baking cookies as it makes the cookies more moist. I also prefer to bake cookies on a baking stone as it cooks the cookies evenly and helps prevent burning.

ORANGE'S FAMOUS OATMEAL SCOTCHIES!

Orange's Famous Oatmeal Scotchies! image

These cookies are so good they have a reputation. Don't let me speak for them; make them yourself. Make sure you watch closely; you might not even see them disappear!

Provided by Orange

Categories     Desserts     Cookies     Oatmeal Cookie Recipes

Time 1h25m

Yield 36

Number Of Ingredients 11

1 cup butter, softened
¾ cup firmly packed light brown sugar
¾ cup white sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
2 cups rolled oats, or as needed
1 cup butterscotch chips, or to taste

Steps:

  • Beat the butter, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter mixture until completely blended; beat the vanilla into the mixture with the last egg.
  • Whisk the flour, baking soda, cinnamon, and salt together in a separate bowl. Beat the flour mixture into the butter mixture about 1/2 cup at a time. Fold the rolled oats and butterscotch chips into the resulting dough. If the dough isn't firm enough, mix in more rolled oats, about 1/4 cup at a time, until dough is of desired consistency.
  • Refrigerate the dough for 1 to 2 hours before baking.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop up dough by heaping tablespoonful and roll into balls. Place cookies about 2 inches apart on baking sheets.
  • Bake in the preheated oven until very lightly browned and cookies are set in the middle, 10 to 12 minutes. Allow cookies to cool for about 5 minutes before removing from baking sheets to finish cooling on wire rack.

  • In the bowl of a stand mixer, cream together the butter, brown sugar and granulated sugar until fluffy and smooth, about 1 minute. Add in the eggs, one at a time, beating well after each addition. Beat in the molasses and vanilla extract, mixing well. Beat in the baking powder, baking soda, cinnamon, and flour, mixing well. Lastly, beat in the oats and butterscotch chips until just combined.
  • Cover and chill the dough for at least 45 minutes, up to overnight. This is mandatory as it prevents the dough from spreading too much during baking.
  • Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone liners. If you allowed your dough to chill longer than 1 hour, let it soften for about 5-10 minutes at room temperature before scooping. Scoop out the dough using a 2-Tablespoon-size cookie dough scoop and place 2" apart on the baking sheets.
  • Bake for 10-12 minutes, rotating the pans halfway through baking time to ensure even baking. Cookies may appear slightly underdone when you pull them out; this is normal as they will continue to set up as they sit on the pans. Cool for about 15 minutes on the pans, then gently transfer to a wire rack to cool completely.
