CAKE MIX OATMEAL COOKIES
These yellow cake mix oatmeal cookies are so good. They're great for when you're craving cookies but not wanting to do all the work of a complicated recipe.

Steps:
- Preheat your oven to 350 degrees.
- Next in large mixing bowl add your dry ingredients (cake mix, brown sugar, cinnamon, nutmeg, and oats). Stir well with a large spoon or spatula.
- Add the butter in, it should be softened and cooled so that it doesn't scramble the egg.
- Add the oil and egg.
- Mix well with a hand mixer until well mixed. If your dough seems to dry, try adding 1 to 2 tablespoons of water. Stir in your raisins, chocolate chips, or desired add-ins with a large spoon.
- Use a large cookie scoop (about two tablespoons) to form the dough into balls. Place on a greased cookie sheet and bake for 14 to 15 minutes or until the edges are slightly golden.
- Let the cookies rest on the sheet for 5 to 10 minutes before transferring.
HEALTHIER OATMEAL COOKIES WITH A CAKE MIX
Eating flax seed is a healthy choice. For cancer patients it is almost a regular part of our diet. In knowing this I am trying to incorporate as much as I can into my baking and having the food taste delicious. I love cake mix cookies because they are fast and easy so here is my adaption of yummy and healthy. Oh yes you do not taste a difference. DH is a cookie connosieur and he still does not know. cooking time is for each batch of cookies.

Steps:
- Preheat oven to 350 degrees.
- Combine cake mix, cinnamon, eggs, oats and1/2 c oil in large bowl. Beat at low speed with electric mixer until blended. Add additional oil as needed to get a cookie dough consistancy.(should not be crumbly).
- Stir in raisins or chocolate chips if using.
- Drop dough by rounded teaspoonfuls onto prepared baking sheets.
- Bake at 350 degrees for 10 to 12 minutes or until lightly browned- cokies will look very light, that is ok do not over bake.
- Cool 1 minute on baking sheet.
- Remove and cool completely.

- Beat together butter and sugars until creamy.
- Add eggs and vanilla; beat well.

THE HEART HEALTHIEST CHOCOLATE CHIP COOKIES
This recipe is from The Vegetarian Times magazine, I love them, this is the recipe that I found for my cookie monster husband who has cholesterol problems, and these cookies are excellent for him, no butter, no eggs and the omegas from the nuts, and of course they are delicious . Don't forget to wait until dough is cool to add the chocolate chips or they will melt.

- 1. Preheat oven to 350°F Coat 2 baking sheets with cooking spray, or line with parchment paper.
- 2. Blend walnuts in food processor 30 seconds, or until ground into a fine meal. Add canola oil, and blend 2 to 3 minutes more, or until mixture has the consistency of natural peanut butter, scraping down sides of food processor occasionally. Transfer to bowl.
- 3. Whisk together brown sugar and ½ cup water in small saucepan, and bring mixture to a boil. Pour brown sugar mixture over ground walnut butter, add vanilla extract, and stir until no lumps remain.
- 4. Whisk together oat flour, baking soda, salt, and cinnamon in separate bowl. Stir oat flour mixture into walnut mixture. Cool 10 minutes. Fold in oats, then chocolate chips.
- 5. Shape cookie dough into 2-inch balls, and place 2 inches apart on prepared baking sheets. Flatten cookies with bottom of drinking glass dipped in water. Bake 8 to 10 minutes, or until cookies begin to brown and tops look dry. Cool 3 minutes on baking sheets, then transfer to wire rack to cool completely.

- Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
- Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
- Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
- When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
- Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
- Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
- Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.
- Place the baking sheet on a wire rack. Let cool on the baking sheet for 2 minutes before transferring cookies to the wire rack to cool completely.

- Combine first 3 ingredients in large bowl and mix together with spoon.

- Preheat the oven to 375 degrees F (190 degrees C). Line 2 cookie sheets with parchment paper.
- Combine honey and coconut oil in a large bowl; beat with an electric mixer until creamy. Add carrots and eggs and mix well.
