4 Ingredient No Bake Chewy Oatmeal Raisin Cookies (V, GF): an easy recipe for delightfully chewy no bake cookies bursting with raisins and cinnamon flavor! Vegan, Gluten-Free, Dairy-Free.

1 cup natural, unsalted creamy almond butter
½ cup pure maple syrup
1 ½ cups gluten free rolled oats
1/2 cup raisins, packed
1 teaspoon ground cinnamon (optional)

Steps:

  • Line a baking sheet with wax paper or parchment paper. Set aside.
  • In a large, microwave-safe bowl, add almond butter and maple syrup. Whisk together until well mixed.
  • Heat in 20-second increments in the microwave until warm and fragrant, and the mixture begins to dry out and become fluffy (about 4-7 rounds). Whisk in between heating increments. *Stovetop instructions in Notes.
  • Add oats, raisins, and cinnamon, if using, to the almond butter mixture. Stir and fold until thoroughly combined.
  • Using a 2-tablespoon cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet, evenly spaced apart. Using a fork, flatten cookies to desired thickness.
  • Chill in the freezer for 15-25 mins, until firm. Enjoy! Storing instructions below.

¾ cup butter, softened
¾ cup white sugar
¾ cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon salt
2 ¾ cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
  • Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

2 cups rolled oats
¾ cup white sugar
3 tablespoons unsweetened cocoa powder
1 tablespoon water
½ teaspoon vanilla
⅔ cup butter, softened
1 cup confectioners' sugar

Steps:

  • In a large bowl, combine the oats, sugar and cocoa. With clean hands, mix in the water, vanilla and butter to form a dough. Wash hands, then roll the dough into balls 1 to 2 inches in diameter. Roll balls in confectioners' sugar until thickly coated (or they will become crusty). Chill 20 minutes before serving.

Whole grain oats, tahini, agave, cinnamon and raisins mixed into a delicious dough and formed into cookies!

1 cup whole grain oats
⅓ cup tahini
2 tablespoons agave nectar (*see note below)
3 tablespoons raisins
½ teaspoon cinnamon
1 tablespoon water

Steps:

  • Combine whole grain oats, tahini, agave nectar, raisins and cinnamon in a small mixing bowl and stir together.
  • Add water and mix again. Allow all ingredients to sit together in the bowl for 5-10 minutes (this gives oats time to soften which makes cookies much easier to form)!
  • Form balls of dough and then gently smash them down and rotate to form a cookie shape. (*Tips: 1). If desired, you can leave dough in a ball shape or press into a parchment paper lined baking sheet and freeze/cut into squares. 2). If dough begins to stick to your hands while forming cookies, give them a quick rinse. This will make it much easier to create your desired shape)!
  • You can chill your cookies in the freezer or refrigerator before eating them or enjoy them right away. Sprinkle with additional cinnamon if desired!
