Sweet Banana Almond Oatmeal image

This oatmeal is warm, sweet, and lusciously filling, and it leaves me satisfied for hours! It is also incredibly versatile. Switch out any of the ingredients for whatever you fancy. I find it works well with some vanilla extract instead of almond and topped with crunchy peanut butter and a drizzle of honey! If you like your oatmeal just a bit thicker, use a little less milk or cook for a little longer.

1 small banana
1 cup almond milk
1 tablespoon honey
1 teaspoon almond extract
¼ teaspoon ground cinnamon, or more to taste
1 pinch salt
½ cup rolled oats

Steps:

  • Mash half the banana in a saucepan. Whisk almond milk, honey, almond extract, cinnamon, and salt with the mashed banana until smooth; bring to a boil and stir oats into the mixture. Reduce heat to medium-low and cook at a simmer until the oats are tender and the moisture has been absorbed to your desired consistency, 5 to 7 minutes. Transfer oatmeal to a bowl.
  • Dice remaining banana half. Top oatmeal with banana and more cinnamon, as desired.

¼ cup unsweetened almond milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan lightly.
  • Mix almond flour, flaxseed meal, eggs, almond milk, olive oil, baking powder, and salt together in a bowl until smooth dough forms. Transfer to prepared loaf pan.
  • Bake in preheated oven until top is golden brown, about 40 minutes. Cool in loaf pan 10 minutes before transferring to a wire rack to cool completely.

I love having Oatmeal everyday and so I decided why not make a healthy bread! I bake for my dad because he has diabetes and loved them!

1 cup rolled oats (old fashioned oatmeal)
1 cup Almond Breeze non-dairy beverage
1 cup whole wheat flour
1/4 cup Splenda granular
1/3 cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 salt
1 ground cinnamon (optional)

Steps:

  • Combine the rolled oats, whole wheat flour,splenda,baking powder,baking soda, and salt in one bowl. Set aside.
  • In another bowl beat the egg whites, and then add the applesauce and the almond breeze.
  • Mix the wet ingredients with the dry ingredients. Mix Well.
  • Spoon the mixture into a loaf pan that has been sprayed with nonstick spray. You may sprinkle the top with ground cinnamon if you like.
  • Bake at 425 F for 20-25 minutes.
  • Enjoy!

A bread machine recipe for a moist pumpkin quick bread. I found most pumpkin bread recipes too moist, and not particularly healthy. I've cut down on the sugar and oil content, and substituted oats and bran instead of just plain flour to add fibre and lower the GI score. I think it would also be good with some grated apple, zucchini, carrot - anything you've got hanging around really!

1/4 cup vegetable oil
3 eggs
1 1/2 cups fresh pumpkin puree (I steam pieces in the microwave)
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ginger
1 cup rolled oats
1 cup raw natural bran
1 1/2 cups all-purpose flour
1/2 cup chopped almonds
1 orange, zest of
1 tablespoon orange juice
1/2 cup raisins (optional)

Steps:

  • Put all the dry ingredients (other than the raisins) into a food processor and pulse until the almonds, oats and zest are finely chopped. Transfer into the breadmachine pan.
  • Put remaining ingredients into food processor and pulse until well mixed, and add to the bread machine pan. If you don't trust your bread machine's mixer function you could mix everything in the food processor first if you like.
  • Cook on the quick bread setting. Check during mixing to see whether it needs more flour - the moisture levels in pumpkin seem to vary.
