FALL-OFF-THE-BONE SHORT RIBS

Steps:
- Preheat oven to 375 degrees F.
- Season the short ribs with salt and pepper. In a large Dutch oven or soup pot over medium-high heat, add the oil. Sear the ribs on all sides until well colored and slightly charred. Remove the ribs from pan to a plate and set aside.
- Over medium-low heat, add the onions to the Dutch oven and cook for 1 to 2 minutes. Add the red wine and vinegar and reduce liquid by half. Stir in the tomatoes, stock and fresh herbs. Add the short ribs and cover the pot. Put in the oven and cook until meat is fork tender, about 90 minutes. Remove from oven, transfer the short ribs to a large bowl and shred the meat. Assemble the sandwiches on brioche buns with slaw. Skim the fat from the cooking liquid, strain into a serving bowl and use for dipping the sandwiches.
- In a large bowl, mix together all ingredients. Allow to sit in refrigerator for 30 minutes before serving. Serve on top of sandwiches.
MASSAMAN CURRY SHORT RIBS
This has got to be one of my favorite dishes I've made. Inspired by a Thai restaurant in Renton, WA called Sing Tong Thai, I decided to make my own version in the Instant Pot®, where I know I can get fast and quality results. This recipe is fairly simple, and with the right ingredients, it's a dish that won't disappoint. Serve over a bed of garlic mashed potatoes or rice!

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat for 2 minutes; add vegetable oil. Sear 3 to 4 ribs at a time in the hot oil until nicely browned, about 2 minutes per side. Repeat with remaining ribs. Remove ribs and set aside.
- Stir curry paste, ginger, and garlic into the hot pot, scraping up the beef fat and browned bits with a wooden spoon at the bottom of the pot, for about 2 minutes. Pour in coconut milk. Stir in turmeric, curry powder, cumin, chile powder, and garlic salt.
- Carefully place your short ribs back into the pot and stir in a folding motion so that the ribs are covered in the curry sauce.
- Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.

RED WINE-BRAISED SHORT RIBS WITH LEMONGRASS AND SOY
This is the dish that the chef Marcus Samuelsson made for President Obama when he visited the restaurant Red Rooster Harlem. This is an easy braise with wonderful flavors - plum sauce, lemongrass, soy sauce - and as it is pointed out in "The Red Rooster Cookbook," short ribs taste more expensive than they actually are, making them ideal for guests. Make it earlier in the day, then simply reheat when you're ready to serve dinner. The book suggests freezing the extra braising liquid in ice cube trays, so you can slip it into pan sauces or pasta for oomph.

- Heat grapeseed oil in a large Dutch oven over medium-high heat. When oil shimmers, add short ribs and brown on all sides, about 2 minutes per side; transfer to a plate.
- Add onion, carrot, celery, lemongrass, garlic and ginger to the pot. Season with salt and cook, stirring often, until onion softens, about 5 minutes. Pour in wine and cook, stirring to dissolve any of the brown bits that may still be on the bottom of the pot. Add broth, plum sauce, soy sauce, thyme, parsley and bay leaves and bring to a simmer.
- Return short ribs to pot, along with any juices, cover and slide pot into oven. Braise until meat is fork-tender, about 2 hours.
- Transfer meat to a plate. Strain braising liquid into a fat separator. If you don't have a fat separator, use a ladle to skim the fat off the top of the braising liquid; then strain through a fine mesh sieve.
- Discard bay leaves and thyme stems and transfer vegetables to a food processor. Process vegetables until smooth, then add 1 1/2 cups of the defatted braising liquid to the processor and pulse to combine.
- Return sauce to Dutch oven and season to taste with salt and pepper. Add short ribs and turn to coat in the sauce; set aside until you're ready to serve.
- Reheat short ribs in the sauce. Divide short ribs between four shallow bowls and top each with a spoonful of sauce. Put remaining sauce in a bowl for passing at the table, along with a bowl of horseradish, if you'd like.

- Return sauce to Dutch oven and season with s/p. Add short ribs and turn to coat in sauce; set aside until serving. Reheat short ribs in sauce. Divide into shallow bowls and spoon sauce over each serving. Top with grated horseradish.
MICHELLE OBAMA'S SHORTBREAD COOKIES
I didn't hear about the Presidential Cookie Bake-Off that Family Circle Magazine holds during election years until this year (you can find out more about that on their website). Apparently the spouses of the candidates submit a favorite cookie recipe for people to vote for. When I saw this recipe that Michelle Obama submitted, from a close family friend of hers, I knew I had to make it. I haven't quit making it since - friends, co-workers, and family are always asking for it. When I had my first bite of it out of the oven, I had to cut and wrap them quickly, or else the delicious smell would quite likely have me eating them all myself. This is definitely going on my Christmas cookie platter this year... and every year!

- Heat oven to 325 degree F. Line a 17 x 12 x 1-inch baking pan with nonstick foil.
- Cream together butter and 1-1/2 cups of the sugar, and then add egg yolks, beating mixture until smooth.
- Beat in Amaretto and zest, before stirring in flour and salt.
- Spread dough evenly into pan, making it smooth and flat as possible.
- Brush top of dough with egg white; sprinkle with remaining 2 tablespoons sugar. Bake at 325 degree F for 25 minutes or until brown.
- Turn off oven and allow cookies to sit in oven, with door ajar, for 15 minutes. Cut while slightly warm.

- Rinse off Short Ribs to remove any bone chards and pat dry. Season with Salt and Pepper and set aside. Cut, chop, mince all Vegetables and set aside, keeping the Garlic separate.
- Select Sauté/Browning on Pressure Cooker and allow to fully heat. Pour in Grapeseed Oil. Add Short Ribs in batches and Brown on all sides. Remove to a plate.
- Add all Vegetables, except Garlic to cooking pot. Sauté for about 5 minutes, while scraping the brown bits off the bottom. Add Minced Garlic and mix through.
- Pour in wine and thoroughly deglaze cooking pot. Allow Liquid to come to a slow boil. Add Beef Broth, Plum Sauce, Soy Sauce and allow to bubble. Add Thyme, Parsley and Bay Leaves. Return Short Ribs to Pressure Cooker cooking pot.
