• Preheat oven to 350 degrees. Grease a 9 x 5-inch loaf pan.
• Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl.
• Stir in orange juice, oil, orange peel and egg. Mix until well blended.
• Stir in cranberries and nuts.
• Spread evenly in loaf pan.
• Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
• Cool on rack for 15 minutes.
• Remove from pan and cool completely.

Steps:

• Preheat oven to 350F. Generously grease and lightly flour a 9" X 5" X 3" loaf pan. Prepare cranberries, nuts and orange peel. Set aside. In a bowl, mix together flour, sugar, baking powder, salt and soda. Cut in shortening. Stir in orange juice, egg and orange peel mixing just to moisten. Fold in cranberries and nuts. Spoon into prepared pan. Bake 60 minutes or until wooden pick inserted in center comes out clean. Cool on rack 15 minutes. Remove from pan, cool completely. Wrap and store overnight.

CRANBERRY NUT BREAD II

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
• In a medium bowl, mix together the flour, sugar, baking powder, salt and baking soda. Cut in the butter until the mixture resembles coarse crumbs.
• In a small bowl, beat the egg, orange juice and orange zest. Blend into the dry mixture. Stir in the cranberries and walnuts. Transfer to the loaf pan.
• Bake in the preheated oven 65 to 70 minutes, or until a wooden toothpick inserted at center comes out clean. Cool in pan 10 minutes, remove to wire rack and cool completely before serving.
