CREAMY PARMESAN POTATOES AND PEAS

CREAMY PARMESAN POTATOES and PEAS image

Creamy parmesan potatoes and peas is a simple and delicious side dish that's perfect for any occasion. Old fashioned creamed peas and potatoes recipe made with frozen peas, red potatoes, butter & cheese compliments any main dish perfectly!

Provided by Jessica & Nellie

Categories     Side Dish

Time 30m

Number Of Ingredients 8

8 red potatoes (scrubbed & cubed (I cut mine small- probably about 3/4" cubes))
16 oz frozen peas
¼ cup butter
¼ cup flour
1 cup milk
1 TBSP onion powder
½ cup Parmesan cheese (grated)
salt & pepper (to taste)

Steps:

  • Fill a medium sized saucepan 3/4 of the way with water. Add about 2 tsp salt. Bring to a boil and add frozen peas.
  • Keep the stove temperature on high and once water is again boiling, add the potatoes. Reduce heat to medium. Boil potatoes & peas for about 15 minutes- until the potatoes are fork tender, but not falling apart. (Check often after you've boiled them for about 12 minutes - you don't want them to get too soft!)
  • Drain potatoes & peas and set aside.
  • In the same saucepan, melt butter. Add onion powder and flour. Quickly begin whisking in milk as the flour-butter mixture thickens, adding the milk a little bit at a time. Allow the milk to heat up and the mixture to thicken again before adding more, until all the milk is incorporated.
  • Keep whisking until the mixture is smooth and creamy. Add a bit more milk if it gets too thick. Add in Parmesan cheese and whisk gently, until cheese is mixed in and melted.
  • Add the potatoes and peas back to the saucepan. Stir gently to combine. Serve with additional Parmesan cheese sprinkled on top.

AMISH WHITE BREAD RECIPE

Amish White Bread Recipe image

This Amish homemade bread is amazing! It's made with simple ingredients and has a soft and fluffy texture. Nothing is better than a piece of warm fresh bread straight out of the oven.

Provided by Anna

Categories     Bread

Time 2h25m

Number Of Ingredients 7

2 scant Tbs. active dry yeast, mixed with 1 Tbs. flour and 1 Tbs. sugar
2 c. warm water (about 110°)
1/3 c. sugar
1/2 c. oil or chicken fat
1/2 c. mashed potatoes or 1/4 c. instant potato flakes mixed with 1/4 c. water
2 tsp. salt
5 1/2 - 6 1/2 c. white bread flour or all-purpose flour

Steps:

  • Mix 1 Tbs. flour, 1 Tbs. sugar, and yeast in your KitchenAid mixing bowl.
  • Add warm water. Stir, and let it rest for about 5 min.
  • Once the yeast mixture is looking creamy and bubbly, add the oil, sugar, potatoes, and salt. Stir.
  • Add 4 c. of flour and knead on low speed.
  • Continue kneading for 4 minutes on speed 2, slowly adding flour until the dough pulls away from the sides of the bowl.
  • When finished kneading, the sides of the bowl should be looking fairly clean. Drizzle a bit of oil into the side of the bowl and let the mixer spread the oil to grease the sides.
  • Lightly cover the dough with a dish towel, and let it rest to rise for about an hour.
  • Grease 2 9x5" loaf pans.
  • Punch dough down. Butter your hands and knead the dough for about a minute. Divide the dough in half and shape it into two loaves. Poke the tops with a fork to remove air bubbles.
  • Place loaves into greased pans. Cover with a towel and allow them to rise for about 30 minutes, or until they have risen about 1 inch above the pans.
  • Preheat your oven to 350°. Bake for 30 - 35 minutes.
  • Allow the bread to cool for about 10 minutes, brush the tops with butter, and remove from the pans. Enjoy a delicious slice of warm fresh bread!
  • Store in airtight bags. And you can freeze one loaf to keep it fresh.

CREAMY CUCUMBER SALAD

Creamy Cucumber Salad image

Creamy cucumber salad is so delicious! It's perfect to serve for a summer party, a family get together, or a picnic in the park. The "secret sauce" is the right combination of vinegar, sour cream, and milk.

Provided by Mary Beth

Categories     Salad     Side Dish

Time 3h10m

Number Of Ingredients 5

1 fresh cucumber (large)
4 ounces sour cream
2 tsp. vinegar
3 tsp. sugar
2 ounces milk

Steps:

  • 1. Peel the cucumber and cut into thin slices. Salt the sliced cucumber and squeeze-it is important to squeeze the cucumbers once sliced and salted to remove the extra liquid so that the salad is not watery. OR, you can cut the cucumber in half lengthwise once peeled and gently scoop out the seeds. This little trick will lessen the overall watery content of the recipe. 2. Combine sour cream, sugar, vinegar and milk blending well in a serving bowl. 3. Add cucumber slices to the creamy dressing.4. Cover and chill for at least 3 hours prior to serving.

  • Peel the potatoes and slice them crosswise about 1/8 to 1/4 inch thick. Place the potato slices in a bowl of cold water so they don’t discolor.
  • Meanwhile, firmly rub the garlic clove all over the bottom and sides of a 10-inch gratin dish to coat it with the garlic juices. Allow to dry for a few minutes, then rub the bottom and sides of the dish with the butter.
  • Drain the potatoes and pat them dry. Arrange a layer of potatoes in a slightly overlapping fashion, like a splayed deck of cards, in the bottom of the gratin dish. Season with a good dash of salt and pepper and a little of each of the two cheeses. Continue layering the potatoes and cheese in this fashion, seasoning each layer and finishing with the cheese (you should have at least 3 layers). Drizzle the cream along the sides of the dish, so as not to displace the cheese.

  • For perfectly cooked potatoes, start them in a large pot of cold water over medium-high heat. Make sure they are fully submerged by at least an inch and bring the water to a boil. Reduce the heat to medium-low, add one teaspoon of salt and cook the potatoes uncovered at a simmer until they are just tender all the way through when pierced with a fork.
  • The potatoes should be done somewhere between eight and twelve minutes, but the time will vary depending on the size of the cubes. When the potatoes are done, drain them in a colander and set them aside.
  • While the potatoes cook, make a roux by adding butter to a medium-size skillet over medium heat. When the butter melts, sprinkle the flour over the top and whisk until the mixture is smooth. Cook for about two minutes, and then very slowly start adding the milk while continuing to whisk.

  • Peel potatoes, dice into small chunks. Bring to boil in the saucepan, with enough water to just cover the potatoes.
  • Add sea salt. Potatoes are fully cooked when stabbed through with a fork. Drain, leaving a small amount of water in the bottom of the pan.
  • Put potatoes back on the burner. Add butter or margarine and stir, enough to completely coat all potato chunks. Keep potatoes moving so they do not burn. Stir in onion powder. Remove from stove.
  • With either a potato masher or electric beaters, begin to mash/whip potatoes, adding evaporated milk until the proper consistency is reached. If using an old-fashioned masher, be sure that all chunks are broken up, and then finish with a whisk.
