- Wash, peel, and thinly slice four large cucumbers. Use a mandoline for uniformity
- Peel and thinly slice one medium sweet onion.
- Place the sliced cucumbers and onions in a ceramic, glass, or plastic bowl that has a lid.
- In a small bowl combine mayonnaise, sugar, and vinegar. Mix until smooth.
- Turn the mayonnaise mixture into the cucumber and onion mixture, combine well.
- Salt and pepper to taste.
- Cover the bowl with a lid, shake lightly.
- Allow the cucumber salad to marinate in the refrigerator for a minimum of 6 hours (overnight works well).
- Refrigerate leftovers in an airtight container.

- Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
- Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
- Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
- Cover bowl with plastic wrap and refrigerate at least 2 hours.

- Peel cucumbers, but leave a little on for color and slice by hand as thin as possible. Dry slices with paper towels.
- Place dried cucumber slices in a large bowl with onion slices. Generously season with salt and pepper. Toss well and let sit 10 minuets, drain any excess liquids.

- To begin, we are going to make the brine or dressing if you prefer. Add the white vinegar (you can also use apple cider if that's your preference) and hot water to a mixing bowl.
- Add the sugar and kosher salt to the mixing bowl and whisk until completely dissolved. The liquid will be clear when everything is dissolved well.
- Allow the brine mixture to cool for half and hour.
- After the brine has cooled, peel the cucumbers. If desired, use the tines of a fork to score the sides of the cucumber. Scoring the cucumber makes a nicer presentation for me but it's completely optional.
- Slice the cucumber and add the slices to the brine. I slice the cucumbers about 1/4" or less while some prefer very thin slices, such as those you'll get from using a mandolin.
- Add the thinly sliced Vidalia onions to the brine with the cucumbers. Stir to combine everything together.
- Add cracked black pepper and fresh dill if desired.
- Cover and refrigerate one to three hours.
- Use a slotted spoon to remove salad from brine mixture before serving.

- Use non metallic deep bowl
- Wash the cucumbers thinly slice about three strips lengthwise of cucumber peel off. Slice paper thin and layer in deep bowl, sprinkling with salt as you go. You should have about four cups. Place a plate on top of the cucumbers (one that will fit down into the bowl) and weight down with a can of fruit or some other object. Let stand at room temperature for several hours.
- Drain the cucumbers thoroughly after standing and press out as much liquid as possible. Toss with rings of onion. Combine the vinegar, sugar and pepper; pour over the cucumber slices and onion rings. Cover and refrigerate overnight. Drain well before serving.
