4 large Cucumbers
1 medium Sweet Onion
1 cup Mayonnaise
½ cup White Sugar
¼ cup White Vinegar
Salt, to taste
Pepper, to taste

Steps:

  • Wash, peel, and thinly slice four large cucumbers. Use a mandoline for uniformity
  • Peel and thinly slice one medium sweet onion.
  • Place the sliced cucumbers and onions in a ceramic, glass, or plastic bowl that has a lid.
  • In a small bowl combine mayonnaise, sugar, and vinegar. Mix until smooth.
  • Turn the mayonnaise mixture into the cucumber and onion mixture, combine well.
  • Salt and pepper to taste.
  • Cover the bowl with a lid, shake lightly.
  • Allow the cucumber salad to marinate in the refrigerator for a minimum of 6 hours (overnight works well).
  • Refrigerate leftovers in an airtight container.

1/3 cup cider or white vinegar
1/3 cup water
2 tablespoons sugar

  • Place cucumbers in small glass or plastic bowl.
  • In tightly covered container, shake remaining ingredients except dill weed. Pour over cucumbers. Cover and refrigerate at least 3 hours to blend flavors.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

Steps:

  • Peel cucumbers, but leave a little on for color and slice by hand as thin as possible. Dry slices with paper towels.

1 clove Garlic (minced)

1/4 teaspoon Black Pepper
1 tablespoon White Vinegar
1/2 small Red Onion (thinly sliced (about 1 cup))

Steps:

  • Line a baking sheet or wide bowl with 1-2 paper towels.
  • Scatter CUCUMBER slices on paper towel in a single layer and lightly sprinkle SEA SALT over the surface. Repeat this with a second layer.

1/2 c White Vinegar
1/2 c Hot Water (from the faucet)
2 tbs Granulated Sugar
1 tbs Kosher Salt
2 Large Cucumbers
1/2 Vidalia Onion, thinly sliced
Cracked Black Pepper, to taste (optional)
1 tsp Chopped Fresh Dill (optional)

Steps:

  • To begin, we are going to make the brine or dressing if you prefer. Add the white vinegar (you can also use apple cider if that's your preference) and hot water to a mixing bowl.
  • Add the sugar and kosher salt to the mixing bowl and whisk until completely dissolved. The liquid will be clear when everything is dissolved well.
  • Allow the brine mixture to cool for half and hour.
  • After the brine has cooled, peel the cucumbers. If desired, use the tines of a fork to score the sides of the cucumber. Scoring the cucumber makes a nicer presentation for me but it's completely optional.
  • Slice the cucumber and add the slices to the brine. I slice the cucumbers about 1/4" or less while some prefer very thin slices, such as those you'll get from using a mandolin.
  • Add the thinly sliced Vidalia onions to the brine with the cucumbers. Stir to combine everything together.
  • Add cracked black pepper and fresh dill if desired.
  • Cover and refrigerate one to three hours.
  • Use a slotted spoon to remove salad from brine mixture before serving.

I can remember her saying that she started hers like her pickles so getting most of the water out of the cucumbers must be the trick. Small red onion, sliced paper thin (#1 on the Mandoline)
1/4 cup of minced fresh dill
An equal amount of minced fresh parsley.
2 Tablespoons of Apple Cider Vinegar
1 tablespoon of oil (optional)
3/4 cup of sour cream
Bunch of fresh dill
Some fresh parsley
Coarse salt and freshly cracked pepper

Steps:

  • In a dry bowl, add the salt and cracked pepper to taste.
  • Add the apple cider vinegar and stir to dissolve the salt. Oil is optional.
  • To the vinegar mixture, add half as many sliced red onions as you like.
  • Add the sour cream and mix thoroughly with the vinegar and onions. You want a smooth mix.
  • Combine well, then add half the sliced cucumbers. Toss lightly to coat the cucumbers.
  • Add more red onions if you like and the rest of the cucumbers.
  • Top with the fresh herbs.
  • Combine well until the cucumbers are completely coated with the creamy dressing.
  • Adjust seasonings to taste.

Two lg. cucumbers
1 tbsp. salt, about
1/2 c. apple cider vinegar (if too vinegary for personal taste, add a little water)
3 tsp. sugar
1/4 tsp. white pepper
1 med. Sweet onion in rings

Steps:

  • Use non metallic deep bowl
  • Wash the cucumbers thinly slice about three strips lengthwise of cucumber peel off. Slice paper thin and layer in deep bowl, sprinkling with salt as you go. You should have about four cups. Place a plate on top of the cucumbers (one that will fit down into the bowl) and weight down with a can of fruit or some other object. Let stand at room temperature for several hours.
  • Drain the cucumbers thoroughly after standing and press out as much liquid as possible. Toss with rings of onion. Combine the vinegar, sugar and pepper; pour over the cucumber slices and onion rings. Cover and refrigerate overnight. Drain well before serving.
